Italian Breakfast Strata

September 11, 2023

Italian Breakfast Strata is a delicious and satisfying baked dish that’s perfect for brunches, holidays, or make-ahead breakfasts. Layered with rustic bread, eggs, cheese, Italian sausage, and vibrant vegetables, this savory casserole is like an elevated version of a frittata – rich, hearty, and full of flavor.

The beauty of a strata lies in its simplicity and flexibility. Day-old bread cubes (often ciabatta or sourdough) are layered in a baking dish and soaked in a seasoned egg and milk mixture. This base is then combined with ingredients like sautéed Italian sausage, bell peppers, spinach, mushrooms, and lots of melty cheese, typically mozzarella, Parmesan, or provolone. The mixture is allowed to rest, often overnight, so the bread fully absorbs the custard and all the savory flavors meld together.

Baking transforms the strata into a golden, puffed-up dish with a creamy center and a slightly crisp top. The result is a sliceable, crowd-pleasing breakfast that’s easy to prepare in advance and can feed a family or group with minimal effort. It’s also a great way to use up leftovers or incorporate fresh herbs like basil, parsley, or oregano for added freshness and Italian flair.

Whether served with a side salad, fresh fruit, or just a good cup of coffee, Italian Breakfast Strata brings comfort and elegance to your breakfast table. It’s ideal for festive mornings like Christmas, Easter, or Mother’s Day, or any time you want a warm, make-ahead breakfast that feels special.

I followed it mostly, but I didn’t press hard enough and a few spots stayed a bit dry. Next time I’ll really mash the bread down.

    1. 5 stars
That makes sense—if you don’t really press it down, some cubes just don’t soak. Next time try pressing with the back of a spoon (or even a tamper) and make sure the egg/milk goes right down into the corners of the dish. Also, letting it sit 5–10 minutes after baking helps it firm up instead of staying dry.

  2. 5 stars
This was super cozy—everything came out nicely set and the top was golden like the recipe said. I used a little extra pepper and it felt extra flavorful.

I followed it exactly and the flavor was great—oregano + cheese combo is so good. Next time I might add a pinch of garlic powder because it tasted a tiny bit one-note to me.

I’m giving it 5 because my kids actually ate it without complaints. I will say, I sprinkled extra parmesan on top and it browned beautifully.

Wait… 45 min at 350 and it sets in the center? Mine always comes out too wet. Maybe I should press it more? Also I think my oven runs hot? 🤷‍♂️

    2. 5 stars
Aww that’s the best review—kids actually eating it means it’s a win. The extra parmesan browning also sounds spot on.

  5. 5 stars
Five stars! I made it the night before (minus baking), and the next morning it was perfect. My house smelled amazing and the texture was spot on after resting the 5 minutes.

This is good but salty if you don’t watch the ham/parmesan. I’d reduce salt and rely on the cheese. Also, letting it sit 5 minutes really helps—otherwise it’s a little runny.

Pretty solid idea, but I think 6 eggs might be a bit light if your bread cubes are large. Mine needed closer to 55 minutes to fully set in the middle.

My kid ate it without complaints, so that’s a win 😂. The oregano is subtle and works well. Next time I’ll add spinach if I’m feeling fancy.

Nice! I’d be scared mine would get soggy, but 45 min at 350 seems okay. When you add spinach do you squeeze the water out first? Otherwise it might turn kinda watery, right?

Haha I love when kids just eat it—instant approval 😂. That oregano subtlety is exactly what I was hoping for. Spinach next time sounds legit!

Not gonna lie, I was skeptical about “breakfast strata” using Italian bread only. But wow. My family kept going back for seconds. I’d absolutely make again.

This was a huge hit at our brunch! So cheesy and delicious. Will definitely make again!

So glad you liked it! This strata is one of my favorites too. Perfect for gatherings!

I thought it was a bit bland. Maybe add some veggies next time? Just a thought.

  11. 1 star
I don’t trust recipes that call for so many eggs. Too eggy for me! One star.

Pretty solid. I used low-fat milk and it still worked, though next time I’ll do whole milk for richer flavor. Also let it sit longer than 5 min—helped a lot.

Ugh, this was too bland for my taste. I won’t make it again.

The instructions are clear, but I wish it said whether to cover it with foil at first. Mine browned a bit too much before fully setting, but flavor was still good.

    1. User avatar tanya.howell says:

      4 stars
I did it exactly like that and mine was kinda dry and too brown too 😅 maybe your oven runs hot. Next time I’d try lowering to like 325 and maybe cover loosely with foil. Still tastes good though!

    2. User avatar anonymous_hacker says:

      5 stars
That’s a great point—if it browns before it’s set, I’d cover it with foil for the first ~25 minutes and then uncover to finish. Helps the center set without over-browning.

  15. 3 stars
Not bad but I can’t believe it’s breakfast food. Feels like lunch.

    1. User avatar mathWizard says:

      4 stars
I agree! This does feel more like lunch than breakfast. But it looks delicious! 😋

Okay but 1 cup ham AND 2 cups milk feels like it might be watery? I added extra cheese and it helped. Still tasty though—would make again with adjustments.

  17. 2 stars
Not a fan. The texture was off for me. Maybe I did something wrong? But it just didn’t hit right.

  18. 4 stars
Italian breakfast strata sounds fancy but the ingredient list is pretty basic. Still, mozzarella + parmesan makes it taste like you tried harder than you did. Good comfort food.

    1. User avatar helaine.fisher says:

Totally agree—this looks “fancy” but it’s basically pantry staples. The ham + mozzarella + parmesan combo is doing the heavy lifting for sure. I’ve made similar strata and it’s peak comfort food, especially with oregano in the egg/milk mix.

  19. 4 stars
I forgot the oregano and it still tasted great. I wonder if I can use basil instead. Good recipe! 4 stars.

  20. 2 stars
Okay, but does it really need mozzarella + parmesan? That’s like doubling the dairy. Mine turned out greasy-ish unless I used less ham.

    1. User avatar Trin Tragula says:

      4 stars
Honestly, you *can* cut it back—mozzarella for melt/texture and parmesan for that salty, savory bite. If yours got greasy, I’d try using less mozzarella (or a part-skim one) and be sure the ham isn’t super fatty. Also letting it sit 5–10 min helps it set, so it doesn’t feel oily.

    2. User avatar eloy.schaden14 says:

      3 stars
Yeah I’d say you don’t have to double it. Use just mozzarella OR just parmesan. Greasy-ish likely came from the ham fat + cheese fat, not the recipe “for sure.” I’d reduce both cheeses a little and maybe add a bit more egg/milk if it looks dry.
