Guinness Chocolate Puddings

February 28, 2025

Guinness chocolate puddings are an indulgent dessert that combines the bold, malty character of stout beer with the deep, bittersweet richness of dark chocolate. Served warm in individual ramekins or bowls, these puddings are soft, smooth, and spoonable, with a texture that’s somewhere between a molten lava cake and a classic custard. The subtle bitterness of the Guinness perfectly balances the sweetness of the chocolate, creating a dessert that feels luxurious and grown-up.

The addition of Guinness in the pudding does more than add a twist – it enhances the complexity of the chocolate, giving it depth and rounding out the sweetness. As the pudding bakes or sets, the beer’s alcohol mostly cooks off, leaving behind notes of roasted coffee, caramel, and dark cocoa. These flavor notes are what make stout and chocolate such a natural pairing, especially in a dessert like this where both can shine without overpowering one another.

These puddings are typically made with a combination of high-quality dark chocolate, butter, eggs, sugar, cream, and, of course, Guinness. Some versions may also include a touch of espresso or vanilla for added richness. The result is an incredibly smooth, dense pudding with a glossy finish and intense flavor. Serve them warm for the ultimate experience, when the texture is soft and almost fudge-like.

They’re perfect for special occasions, St. Patrick’s Day celebrations, or just when you want to treat yourself to something extraordinary. Garnishing with a dollop of whipped cream, a dusting of cocoa powder, or even a scoop of vanilla ice cream makes these puddings even more irresistible. And though they’re rich, the portion size makes them feel perfectly balanced – indulgent but not over-the-top.

Guinness chocolate puddings are a beautiful blend of bold flavor and silky texture, proving once again that beer and dessert can be the best of friends.

I dunno about puttin beer in desserts. Seems weird. But I tried it, and it was alright. Not something I’d make again tho.

I was skeptical too at first, but dessert with Guinness is surprisingly good! You gotta try it with whipped cream, it makes it even better!

  2. 4 stars
I burnt mine. Shoulda watched it more closely. But still tasted ok! Maybe a 4 if I don’t mess up next time.

    1. User avatar Delinda Fritsch says:

      2 stars
Idk man, if you burn it, how can you call it good? Just saying. 😅

    2. User avatar gilma.aufderhar75 says:

      4 stars
Don’t worry! Burning happens to the best of us. Glad it still tasted good! Next time, maybe set a timer?

  3. User avatar Blue Dartwing says:

    5 stars
Wow, these choc puddins are amazin! I added extra choc and they was even better! 5 stars!

  4. 3 stars
Mine stuck a little in the ramekins even though I greased them. Flavor was good, but presentation wasn’t great. Maybe I should line with parchment next time?

    1. 5 stars
Good call on parchment next time! I usually grease really well and also dust the ramekins lightly with cocoa or flour—helps a lot with sticking and keeps the sides looking cleaner. Your flavor sounds spot on.

Isn’t mixing alcohol with sweets a bit weird? My husband said it was fine tho.

  6. User avatar Candida Kunze says:

    4 stars

I can’t believe how good these turned out! My kids even liked them, and they usually hate anything with beer in it. Crazy delicious!

    2. User avatar nisha.powlowski42 says:

      3 stars
Sounds good, but is it really worth using Guinness? Can’t I just use any beer? Not sure about the whole stout thing.

  11. User avatar CTRLplusW says:

    2 stars
Too rich for my taste. I like chocolate but not this heavy! 😩

  12. User avatar vina.kessler2017 says:

Sounds delicious! I’ve never thought of using Guinness in dessert before. Definitely trying this!

  13. User avatar maximo.armstrong1953 says:

This recipe is amazing! The Guinness really adds depth to the chocolate. I never thought beer and dessert could go together so well!

  14. User avatar terminatorXYZ says:

I was skeptical about using beer in dessert but this was surprisingly good! The flavors work well together.

  15. User avatar Mr. Dexter Little says:

This was a waste of good chocolate! I thought it’d blow my mind but it was just meh. Not worth the effort, I think.

  16. User avatar tissues_with_issues says:

    5 stars
I made this with my kids and we had a blast! The chocolate is really rich. Next time, we’ll add some sprinkles on top!

    1. User avatar kellie.berge says:

      5 stars
Sounds like a fun time! The sprinkles will make it even more festive. Can’t wait to try it myself!

    2. 3 stars
Sprinkles? Really? I thought this was a fancy dessert. But hey, if your kids loved it, that’s what matters!

  17. User avatar floyd.wiza71 says:

    4 stars
I forgot the vanilla 🤦‍♀️, but it still turned out okay. It’s all about the chocolate!

  18. User avatar sang.mcclure29 says:

    4 stars
Wow, this turned out better than expected! I did use a cheap beer tho, didn’t have Guinness. Still delicious!

  19. User avatar adrian.murray says:

    2 stars
it looked good but didn’t taste that great, maybe I did it wrong???? 🙁

    1. User avatar lasandra.rice59 says:

      4 stars
Don’t worry! It happens to the best of us. Maybe you overbaked it a bit? That can make it dry and less tasty.

  20. User avatar wellRespected says:

    4 stars
Followed the recipe pretty much exactly, except I used bittersweet chocolate because that’s what I had. Still turned out rich, though mine was a little denser than expected. Next time I’ll chop the chocolate smaller.

    1. User avatar julianne.yundt89 says:

      4 stars
Glad it still worked! Bittersweet chocolate can definitely make them a bit denser if it’s less “melty” than a straight dark bar. Chopping smaller next time is a great call.

    2. User avatar alden.nader4 says:

      5 stars
I love Guinness desserts 😄 I’ve made these once and my center was too firm—sounds like you nailed the flavor though. Did you bake them in ramekins or a dish? That changes the gooeyness a lot.

  21. User avatar Wilbur Bednar says:

    2 stars
Too sweet for my taste! I’d cut down on the sugar next time. /sadface

  22. User avatar Ma'randru-jo says:

Guinness in dessert? Ugh, who thought of that? Not for me.

  23. User avatar oliver.morissette75 says:

    3 stars
I don’t know, seems odd to put beer in pudding. But I guess it’s just like some people put whiskey in cakes, huh?

  24. User avatar ellis.heathcote85 says:

    5 stars
Yummy! I made this for my friends and they raved about it! Definitely making again! 🥳

  25. User avatar Link's Uncle says:

    3 stars
Can you make this without the beer? I don’t like the taste… What if I use root beer or something? 🤷‍♂️

    1. 2 stars
Nah, root beer ain’t the same as Guinness, you’ll miss out on the real flavor. Just try a different recipe if ya don’t like beer. 😒

    2. User avatar bennie.fritsch says:

      4 stars
Using root beer sounds interesting! It might not be the same, but it could work out. Just test it out and see what you get! 🍰

  26. User avatar edmund.hintz64 says:

    3 stars
Instructions were a bit confusing. I never baked before and it got me worried! But I managed! 😂

  27. User avatar geoWizard says:

    2 stars
Eh… it’s okay I guess. Didn’t taste that special to me. I might just stick to a regular chocolate cake. 2 stars.

  28. User avatar joe_banana says:

    4 stars
Yummm! These were a hit at my party. Everyone loved them and they were super easy to make!

  29. User avatar donn.lebsack says:

    1 star
This was a disaster. Like, my pudding came out all burnt and hard. Must’ve been the oven. Ugh. Never again.

    1. User avatar le.kulas10 says:

      4 stars
Sorry to hear that! Maybe your oven temperature was off? It happens to the best of us. Don’t give up!

  30. User avatar Draugr Wight says:

    5 stars
5 stars all the way! This will be my go-to dessert from now on! 🍫🍻

    1. User avatar tammera.goodwin says:

      2 stars
5 stars? Really? I don’t see how beer in dessert is a good idea. Sounds weird to me. 🤷‍♂️

    2. 5 stars
I’m glad you loved it! It’s really a fantastic combination of flavors 😍. Did you try it with ice cream?

  31. User avatar maynard.zemlak1952 says:

    2 stars
I tried this but the batter was too runny. Maybe my measurements were off? Not sure if I’d make it again.

  32. User avatar manuel.nienow1956 says:

    5 stars
These puddings are so rich and delicious! Perfect for a chocolate lover like me! ⭐⭐⭐⭐⭐

    1. 5 stars
I tried this recipe last weekend, and it turned out amazing! So moist and rich, just like you said. Thanks for sharing!

    2. User avatar arthur.goyette says:

      2 stars
Rich? I dunno, I think it sounds way too sweet with all that sugar and chocolate. Can you even taste the Guinness in it?

  33. User avatar Mrs. Wes Blanda says:

    4 stars
I was skeptical at first, but wow! So rich and moist, will definitely make again.

    1. User avatar angelic.bayer says:

      5 stars
I’m so glad you loved it! It’s one of my favorites too. The Guinness really makes a difference!

  34. User avatar Trillian says:

    2 stars
The beer flavor was too strong for me. Didn’t love it. Maybe I did it wrong?

  35. User avatar earle.vonrueden29 says:

    3 stars
I found it hard to mix the chocolate and butter. My batter was lumpy. Maybe next time? Idk.

    1. User avatar Max Quordlepleen says:

      4 stars
Don’t worry! Mixing chocolate and butter can be tricky. Just make sure to keep stirring constantly and maybe try a double boiler next time to melt them together smoothly.

  36. 5 stars
These puddings are awesome!! Made for a party and they disappeared fast! 😍

  37. User avatar shon.hill says:

    5 stars
Absolutely delicious! The Guinness adds a rich flavor that’s just wow. Definitely making these again!

    1. 4 stars
I can’t believe you put beer in a dessert! Sounds weird but I might try it. Good to know it turned out delicious for you!

  38. User avatar Torchbugs says:

    5 stars
This is the best dessert ever! The chocolate and Guinness combo is heavenly.

    1. 3 stars
Really? Guinness in a dessert? Sounds kinda weird to me. I wanna try but also kinda worried it’ll taste funny…

    2. 5 stars
I completely agree! The richness of the chocolate paired with the Guinness creates such an incredible flavor. Can’t wait to make this again!

  39. User avatar Frankie and Benjy says:

    5 stars
Too easy to make and so delicious! Must try!

    1. 5 stars
I agree! These puddings are so rich and lovely, everyone should try them for sure!

    2. 3 stars
Is it really that easy? I dunno…sounds too good to be true. Maybe I will try though.

  40. User avatar tyron.ernser46 says:

    4 stars
Pretty good! The texture was nice, but I used salted butter by mistake and it tasted a little off. Still saved it with whipped cream though 😅

  41. 3 stars
I followed the recipe but it came out too bitter for my taste. Maybe I should have used a sweeter chocolate?

    1. User avatar alonso.senger says:

      3 stars
Bitter? I think that’s how it’s supposed to taste! But hey, everyone’s taste is different. Just add more sugar next time!

    2. 4 stars
I think maybe the type of chocolate really matters! Dark chocolate can be quite bitter. I prefer using semi-sweet chocolate for a better balance.

  42. User avatar Frost Giant says:

    4 stars
I was a bit skeptical about using beer in a dessert, but it actually works! The flavor is so unique. I’d give it a 4 out of 5, but I think it needs a bit more sweetness. 🤔

    1. 4 stars
I totally agree with you! The beer really does add something special, but I also felt it could use a bit more sugar. Maybe I’ll try adding more next time. 🍰

  43. 5 stars
Yum! Made these for my family and they were a hit! Next time I’ll try adding some nuts too. 🤤

  44. User avatar shandi.oconnell says:

    2 stars
Meh. Too much flour? It felt slightly dry in the middle and I’m not convinced Guinness adds anything besides flavoring. I’ll stick to normal chocolate lava cakes.

    1. User avatar rogelio.hermann says:

      4 stars
I get what you mean, but the flour amount didn’t feel “too much” for me. I think it’s more about not overbaking—mine was gooey after 27 minutes.

  45. User avatar demetrius.jast says:

    5 stars
Just made this for a party, and it was gone in minutes! Super delish! 🍺🍰

  46. 3 stars
Not sure if my oven runs hot, but at 25 minutes they were way too wet/loose inside. I baked another 6 minutes and they finally firmed up. Recipe’s solid—just watch the timing.

  47. User avatar Lashonda Gaylord says:

    5 stars
I didn’t think I could bake, but this was so easy! Just mix and bake, and voilà! I’m a pro now! LOL

  48. User avatar Curiosity Shop Guy says:

    2 stars
Tried it and didn’t like the beer flavor. I thought it would be different. Just wouldn’t do it again.

    1. User avatar robt.treutel98 says:

      2 stars
You must be a beer hater! This recipe is amazing if you like chocolate. Can’t believe you didn’t like it!

    2. 4 stars
I get it, the beer flavor can be strong. Maybe you could try using a different liquid next time, like coffee or even just water!

  49. User avatar marissa.pagac says:

    2 stars
Meh. Didn’t love the taste—like it was a bit bitter? I might have used too much cocoa or my chocolate was not great quality. Still, friends liked it.

    1. 4 stars
Bitter is definitely possible if the cocoa/chocolate is too dark or not super sweet. I’ve found 150g high-quality dark chocolate helps a lot—also make sure you’re using the stout (Guinness) and not overcooking so it doesn’t get harsh.

    2. User avatar eileen.carroll90 says:

      4 stars
Maybe your bake time ran a little long? 25-30 min can turn “gooey” into “bitter brownie puddle” real fast. Next time try pulling them when the edges are set but the middle still jiggles.

  50. User avatar dwight.terry1971 says:

    4 stars
The batter was so gooey! In a good way! But I think I messed up the timing. Next time I’ll watch it more closely.

  51. 2 stars
Okay, but why put beer in a dessert? Sounds gross tbh. I didn’t even try it.

  52. 5 stars
Tried this last night—wow. The Guinness really makes the chocolate taste deeper, not “beer-y.” Gooey in the middle exactly like you said.

  53. User avatar garth.schowalter64 says:

    4 stars
I was skeptical at first, but these are surprisingly good! My husband even liked them and he’s not a fan of beer.

  54. 5 stars
5/5 easy. Like, minimal effort, maximum chocolate. Also the crust on top is my favorite part.

  55. User avatar linnea.ruecker says:

    2 stars
not worth it. It just tastes like a chocolate cake to me. why put a beer in it?

  56. User avatar Ms. Bob Orn says:

    3 stars
I made these for a party but they kinda collapsed. Maybe my oven is too hot or somethin’? Still tasted good tho!

    1. User avatar allen.wilkinson39 says:

      4 stars
Sounds like a fun party! Maybe try lowering the oven temp next time? Glad they still tasted good! 🍫

  57. User avatar joycelyn.hintz says:

    1 star
Why would anyone put beer in dessert? Seems weird! Didn’t even try it.

  58. User avatar cedric.ankunding32 says:

I was kinda skeptical about using beer in desserts. But wow, this pudding exceeded all my expectations! So rich!

  59. User avatar julietta.schumm says:

Guinness makes everything better! This is now my go-to dessert. Thank you for sharing!

  60. 5 stars
Just made these and they’re delicious. The vanilla + dark chocolate combo is money. Would love to try with extra cocoa next time.

    1. User avatar beau.jast1978 says:

      5 stars
Yes!! The dark chocolate + vanilla combo is exactly it. I’ve made these twice and both times they vanished fast 😄

  61. User avatar Sid O'Reilly says:

    3 stars
Is this really just a chocolate cake in disguise? I dunno… still tasted good.

  62. User avatar Alia Atreides says:

    3 stars
I dunno about adding beer to dessert, sounds weird to me. But the chocolate part is good. Maybe I’ll try it without the Guinness!

  63. User avatar lenny.mraz89 says:

    3 stars
Okay, I tried it and my eggs curdled a bit when I added them too fast. I think the chocolate mixture was still too hot. Flavor is good, but technique matters!

  64. User avatar Super Saiyan Vegeta says:

    5 stars
These are like little chocolate clouds of happiness! SO good with ice cream on top!

  65. User avatar salvatore.hamill1991 says:

    5 stars
yummmmmmm! This recipe is a keeper! Perfect for parties or any sweet tooth cravings. 😍

  66. User avatar tenesha.pfeffer says:

    4 stars
Yum! Super easy to make, but why didn’t they mention how to store leftovers? Not sure how long the pudding lasts.

    1. User avatar merlin.durgan11 says:

      3 stars
Who cares about leftovers? These puddings are so good, you won’t have any!

    2. User avatar tom.dietrich says:

      5 stars
You can store the leftovers in an airtight container in the fridge for about 3-4 days. Just make sure to let them cool before putting them away!

  67. User avatar tammy.waters1964 says:

    5 stars
I love chocolate and these are so good! My kids even helped make them. Super fun!

  68. User avatar jody.collins91 says:

    5 stars
Tried these tonight—wow. The Guinness flavor totally disappears into this rich chocolate vibe. Mine took closer to 30 minutes but they came out perfectly gooey. Will make again.

  69. 5 stars
Absolutely delicious! Never thought beer could make desserts so good. Will def make again!

  70. 2 stars
Not sure why everyone loves Guinness desserts. Mine was kind of bitter and I couldn’t get the “gooey inside” part. Maybe my ramekins were too small.

  71. 4 stars
Yum! But can I use another beer? Like that light one my friend drinks? 🤔

    1. User avatar Shadout Mapes says:

      2 stars
Why would you use a light beer? It won’t taste the same at all! Just get the stout! Trust me.

    2. User avatar parker.mccullough84 says:

      4 stars
I think you should stick to the Guinness for the best flavor, but a light beer could work if you’re really craving it. Just don’t expect the same richness! 🍺

  72. User avatar joan.von53 says:

    5 stars
Made these last night—wow. The Guinness really makes the chocolate taste deeper, not “beer-y.” Mine needed like 32 minutes for the gooey center. Served with vanilla ice cream and it was gone fast.

    1. User avatar elliot.carter98 says:

      5 stars
That’s awesome—exactly what I’ve noticed with Guinness too. Love that it doesn’t taste “beer-y,” just deeper chocolate. And 32 minutes for a gooey center sounds spot on for most ovens!

  73. User avatar scottie.huel65 says:

    3 stars
Followed it exactly and my batter was really thick. Could be the flour? Ended up more like cake than pudding for me, but not awful.

  74. User avatar pricilla.senger says:

    5 stars
Guinness in dessert? Sounds weird. Didn’t think I’d like it but wow, this is awesome. 10/10!

    1. User avatar rodney.sipes2018 says:

      5 stars
Never thought of Guinness in sweets, but if you say it’s awesome, I believe you! 🍰

    2. 4 stars
I’ve always been skeptical about using beer in desserts, but this sounds intriguing! Maybe I’ll give it a try.

  75. 5 stars
These were AMAZING! So rich and chocolatey, and I love that hint of Guinness. Will definitely make again.

  76. 5 stars
Super easy and the smell while baking was incredible. I didn’t have dark chocolate so I used semi-sweet—still delicious, just less intense. Would make again for sure.

  77. User avatar Darius Mayert says:

    4 stars
This sounds kinda weird but i gave it a shot. Didn’t taste “beer” at all, so that’s a win. I’ll try again, maybe with less sugar? Idk, it was sweet.

  78. User avatar odilia.terry says:

    4 stars
I cooked mine at 350°F like it says and checked at 25 min. They were firm on top and gooey inside, but I overfilled the ramekins so it overflowed lol. Tasted amazing regardless.

  79. User avatar norberto.lindgren says:

    4 stars
I was skeptical about beer in dessert, but it’s actually great. The batter smelled like brownies, and the puddings set nicely. Served with vanilla ice cream and it was a hit.

    1. User avatar ling.reichel9 says:

      4 stars
Beer in dessert always sounds kinda weird to me 😅 but if it sets like pudding, I’ll believe you. Did you use it warm like the recipe says?

    2. 5 stars
Same here—I expected it to taste “boozy,” but the Guinness just adds this deep chocolate vibe. Mine smelled like brownies too. Totally getting why it sets nicely!

  80. User avatar regina.simonis says:

    3 stars
I think I overbaked mine—outer part was firm but inside wasn’t really gooey. Maybe my ramekins were smaller? Flavor still good though.

  81. User avatar felicidad.herman78 says:

    5 stars
This is such a comfort dessert. I served with ice cream and it was gone in minutes. Also, the smell while baking is unreal.

  82. User avatar richard.haag56 says:

    4 stars
I accidentally used light brown sugar and still came out tasty. Not as rich as I expected, but the chocolate was super fudgy.

The instructions were clear, and I liked that it bakes at 180°C. However 150g chocolate felt like a lot but also not enough? Mine ended up more like a dense cake than a pudding. Anyone else?

Mine took about 33 minutes, but they still stayed soft. I used slightly less sugar only because that’s what I had, and it was still great.

I’m skeptical of adding beer to dessert but I followed the recipe and it actually turned out rich and fudgy. Next time I’ll be careful not to overbake—mine was a touch firmer than I wanted.
