Ingredients
  

  • 2 chicken breasts
  • 1 daikon radish julienned
  • 1 carrot julienned
  • 1 cucumber sliced
  • 1 red onion thinly sliced
  • 1/4 cup cilantro chopped, fresh
  • 1/4 cup mint chopped, fresh
  • 1 lime juice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat.
  • Season chicken breasts with salt and pepper.
  • Grill chicken for 4-5 minutes on each side, or until cooked through. Remove from grill and let rest for a few minutes before slicing.
  • In a large bowl, combine daikon radish, carrot, cucumber, red onion, cilantro, and mint.
  • In a small bowl, whisk together lime juice, soy sauce, and sesame oil. Pour over salad ingredients and toss to combine.
  • Slice grilled chicken and arrange on top of salad. Serve immediately.

      I’m not sure about the sesame oil… I used too much once and it tasted kinda bitter. But if you used just 1 tbsp like the recipe, maybe it works. Also, daikon is harder to find for me 😅

      I get your skepticism, but the lime really does brighten everything. Daikon can be peppery/clean, and soy + sesame is kind of the classic salty-savory base. If you toss right before serving, it won’t taste “weird,” it’ll taste fresh.

      Totally hear you on the chicken—4–5 min a side can overshoot depending on thickness. I’d try pounding to even thickness and checking temp (165°F) so it doesn’t dry out. And yeah, the salad will water up if it sits—maybe salt the cucumber/radish lightly and toss right before serving.

      Dry chicken is always on the cook, sorry 😬 I always rest like 10 minutes. Herbs don’t matter to me though—I’d just add more lime and soy and call it good.
