Ingredients
  

  • 4 Bell peppers large,
  • 1 pound ground beef
  • 1/2 cup onion diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp parsley for garnish, chopped fresh

Instructions
 

  • Preheat a grill to medium heat.
  • Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  • In a large bowl, combine the ground beef, diced onion, garlic powder, smoked paprika, dried oregano, salt, and pepper. Mix until well combined.
  • Divide the ground beef mixture evenly among the bell peppers, stuffing the mixture into each pepper.
  • Top each bell pepper with shredded cheddar cheese.
  • Place the bell peppers on the preheated grill and cook for 20-25 minutes, or until the beef is cooked through and the peppers are tender.
  • Remove the bell peppers from the grill and let them rest for a few minutes.
  • Garnish the stuffed bell peppers with chopped fresh parsley and serve hot.

    Pretty good, but my peppers weren’t that tender after 25 minutes. Next time I’ll par-cook them or lower the grill heat longer.

      Yeah, 25 minutes can be tight for bigger peppers. Par-cooking (even 5–8 min) or lowering the heat like you said usually fixes it. I also tent with foil sometimes so they steam a bit on the grill.

    Confused about step 6—do you keep the grill lid closed the whole time? I left it open and the peppers cooked unevenly. Flavor was still there.
