Easy Chicken Mayo Parm – by Julia Scott
Ingredients
- Chicken breasts 2, 3, or 4, depending on family size
- Mayonnaise use double the amount of Parmesan cheese
- Parmesan cheese e.g., 1/4 cup for two people, adjust as needed
Instructions
- Preheat oven to 345°F.
- Filet your boneless chicken breasts by slicing them lengthwise to make two or three thin pieces per breast.
- In a bowl, mix mayonnaise and Parmesan cheese. Use double the amount of mayo to Parmesan (e.g., for two people, use 1/2 cup mayo and 1/4 cup Parmesan). Adjust quantities based on the number of chicken breasts.
- Place the chicken pieces in an ovenproof pan.
- Spread the mayo mixture over each piece of chicken, as if frosting a cake.
- Bake for 45 minutes at 345°F.
- Serve with your choice of sides. Don’t worry if some of the mayo mixture ends up in the bottom of the pan; the chicken will be delicious!
