Garlic Roasted Mushrooms

March 6, 2025

Garlic roasted mushrooms are the kind of side dish that quietly steals the spotlight. With their deep umami flavor, juicy texture, and rich garlic aroma, they’re simple to prepare but packed with character. Roasting mushrooms brings out their natural earthiness while giving them a golden-brown edge that’s both tender and slightly crispy. When paired with olive oil, garlic, and herbs, they become irresistibly flavorful and incredibly versatile.

What makes roasted mushrooms so appealing is their ability to absorb flavor. As they roast, the garlic infuses them with a warm, mellow intensity, while olive oil keeps them moist and glossy. Fresh herbs like thyme, rosemary, or parsley add brightness and contrast to the earthy tones of the mushrooms. A splash of balsamic vinegar or a squeeze of lemon just before serving can lift the whole dish with a bit of acidity, rounding out the savory notes beautifully.

This dish works with all kinds of mushrooms, from button and cremini to portobello or shiitake. Roasting enhances their natural texture — the edges crisp up slightly while the centers stay meaty and tender. The result is a side dish that feels hearty and satisfying, even though it’s made with minimal ingredients and effort.

Garlic roasted mushrooms pair well with a variety of mains, including grilled steaks, roasted chicken, pasta, or risotto. They’re also a perfect topping for toasted bread, grain bowls, or even tossed into a salad. Their rich flavor can elevate everything from a casual dinner to a holiday spread. And if you have leftovers, they reheat well and make a great addition to omelets, pizzas, or sandwiches.

This dish proves that a few simple ingredients and a hot oven can create something truly special. Whether you’re cooking for guests or just want to treat yourself to a flavorful side, garlic roasted mushrooms never disappoint.

I dunno, my mushrooms came out soggy. Maybe I did something wrong? Not sure if I’d try again.

Sounds like you might have overcooked them! Make sure to keep an eye on the time next time. They really should be golden and tender!

The prep is easy, but I think 400°F is a bit high? Mine dried out before they browned much. Still tasty, just not as juicy as I wanted.

I dunno, roasted mushrooms? Sounds kinda bland to me. Where’s the flavor at? Maybe some cheese would help?

I love mushroms. This was easy, but my oven is broken, I simmered them instead.

Simmering sounds interesting! Did they turn out okay? I might try that if my oven ever breaks too.

But it’s a roasted mushroom recipe! Simmering them must’ve changed the taste a lot. 🤔

They turned out soggy… Did I use the wrong kind of mushrooms? They weren’t very golden either.

    1. User avatar francie.parker53 says:

      4 stars
Maybe you cooked them too long? Mushrooms can get soggy if they release too much moisture. Try cooking them less next time!

  13. User avatar coy.yundt says:

These mushrooms were delicious! So garlicky, just how I like it. Will make again!

  14. 2 stars
Umm, I used dried thyme instead of fresh and it turned out bad. Don’t do that!

    1. User avatar oPandariaNo says:

I read that dried herbs can change the flavor a lot. Maybe try fresh next time! 😅

I dunno… doesn’t fresh thyme make a big difference? Dried can be so different.

  17. User avatar sylvester.west says:

Meh. Didn’t like them much. Thought they would be crunchy more.

  18. User avatar parker.herman82 says:

I think it really depends on your oven! Some run hotter than others. Maybe check them at the 15-minute mark next time.

Why do people roast mushrooms? They taste fine raw. This seems silly.

  23. User avatar alane.walker44 says:

I skipped the olive oil, not a fan. It was very dry. Hmmm.

  24. User avatar Howard Price says:

    1. User avatar henry.adams1990 says:

      4 stars
I think you just need more garlic! Maybe try 5 cloves next time? Love this recipe!

  27. 4 stars
Not gonna lie, I’m skeptical about roasting mushrooms with only oil/garlic. But wow—my mushrooms actually got a little golden and had flavor.

  28. User avatar Edmundo Shanahan Jr. says:

    3 stars
I thought the garlic was a bit much. Maybe just 1 clove next time. 🤔

  29. 5 stars

Used dried thyme instead of fresh. Still came out okay. Not as tasty as I thought it’d be.

    Yum.

    1. User avatar buster.monahan63 says:

      5 stars
Yum is right—garlic + thyme on mushrooms is such a good combo. I usually roast mine a bit longer until they get those golden edges.

    2. User avatar mercy.harber says:

      4 stars
Sounds tasty but 400°F feels kinda high? I think mine would burn the garlic—maybe I’d add garlic halfway through. Still gonna try though 😅

  39. User avatar sudie.mckenzie38 says:

    5 stars
    One word: Delicious.

    1. 4 stars
Sounds good, but 25 min feels short—mine usually need longer so they don’t taste watery. Still, I’ll try it.

    2. 5 stars
Right?! That garlic + thyme combo is 🔥

  40. User avatar marcos.gottlieb90 says:

    4 stars
Not gonna lie, I was skeptical about only 20-25 minutes. But the texture was great—tender, not mushy. Salt/pepper to taste is key.

    1. 4 stars
I was skeptical too but my oven runs hot so mine was done more like 15 min. Still good tho—next time I’ll add a pinch of chili flakes. Thanks!

    2. 5 stars
Same! I thought 20–25 mins would leave them too chewy, but they came out tender and browned. Salt/pepper really does make a difference here.
