Fried Pork and Egg Stuffed Peppers

February 13, 2024

Fried pork and egg stuffed peppers are a satisfying and savory dish that combines tender pork, fluffy scrambled eggs, and vibrant bell peppers for a meal that’s both hearty and flavorful. This dish is the perfect fusion of protein-packed ingredients wrapped in the crispy, slightly charred exterior of a fried bell pepper. It’s a great option for breakfast, brunch, or even dinner when you want something both filling and delicious.

To start, you’ll want to brown some ground pork in a skillet. Season it with a blend of spices like garlic powder, cumin, paprika, and salt to enhance its savory flavor. As the pork cooks, it becomes golden and crispy, adding texture to the filling. Once the pork is cooked through, remove it from the pan and set it aside.

Next, you’ll scramble some eggs in the same skillet. The eggs should be soft and fluffy, adding richness to the filling. Combining the eggs with the cooked pork gives the dish a balanced, comforting texture. You can also add chopped onions, garlic, or herbs like cilantro or parsley to the egg mixture for extra flavor.

Now it’s time to prepare the bell peppers. Cut the tops off of large bell peppers and carefully remove the seeds and membranes. Stuff each pepper with the cooked pork and egg mixture, packing it tightly to ensure every bite is full of flavor. You can use any color of bell peppers, but red, yellow, or orange peppers tend to be the sweetest.

To finish, gently fry the stuffed peppers in a hot pan with a little oil until the peppers are tender and the edges are golden and crispy. This quick frying step creates a deliciously crunchy exterior while keeping the filling soft and flavorful.

Fried pork and egg stuffed peppers are a fun and satisfying way to enjoy bell peppers, and they can be easily customized with different fillings or toppings. Add cheese for extra richness, or serve them with a side of salsa or hot sauce for a bit of spice. Whether enjoyed on their own or with a side of greens, these stuffed peppers are a perfect combination of savory and satisfying.

Despite the indulgent-sounding name, Fried Pork and Egg Stuffed Peppers can be a nutritious choice when prepared with lean pork and cooked in a health-conscious manner. The dish provides a good balance of proteins and essential nutrients, making it a satisfying and filling option for those looking to enjoy a flavorful meal without compromising on health.

It was okay, but I think the cayenne was too much for my kids.

Yum! I used turkey instead of pork and it still turned out delicious! Great recipe!

I tried making these but the egg on top got all weird and runny. Not sure if I did it right.

I don’t get why people like this. It was kinda bland and the egg wasn’t what I expected. Meh.

Confused about the cayenne. Thought it was a spice for dessert. Is that normal?

What? Cayenne in dessert? I thought that too once, but it’s like a spicy thing. Give it a chance. It’s great in non-sweet meals!

    2. 4 stars
Cayenne is usually used in savory dishes! It can add a nice kick, but it’s not for sweets. You’re not alone in thinking that though!

Idk about 4 bell peppers with 1 lb pork—felt like I didn’t get enough filling. Also, baking 15-20 for eggs depends a lot on pepper size.

    1. 5 stars
Totally agree about bake time—15 min once was perfect for me, then later I had to go closer to 22 because my peppers were huge. Eggs are so temperamental.

Yeah, I felt the filling was a little tight too. If your bell peppers are on the bigger side, 1 lb pork can disappear fast—next time I’ll bump the pork (or add more rice).

Easy and tasty! But next time, I’ll add more spice. Loved the paprika tho.

I dunno if I like mixing eggs with pork. Seems weird, like, why would you do that?

I messed up and used raw eggs instead, what a disaster! Never doing that again.

Not sure about the cayenne + paprika combo. It’s a little too spicy for my taste, and the pepper gets sweet which makes the heat feel harsher. I’d adjust the spices.

I messed up and used uncooked rice once (don’t do that). It was a gummy mess, so that’s on me. With cooked rice like the recipe says, I bet it’s way better—5 stars in that alternate universe 😅

    1. 3 stars
I don’t know… 15-20 minutes for stuffed peppers with eggs seems a little short. My eggs would be raw. Also, why cayenne with pork and peppers—seems too spicy for me. Still, sounds tasty.

Omg gummy uncooked rice is the worst 😭 but you’re right—this recipe’s way better with cooked rice. The peppers + egg would basically save the whole thing.

Great idea for dinner! I used turkey instead of pork, and it turned out good! 🌶️
