  • to taste black pepper freshly ground

      Thanks for sharing! If it’s coming out too wet, it’s usually either the eggs need a touch longer (but still on medium, not high) or the asparagus is releasing more moisture than expected. Did you drain/steam the asparagus a bit more or let it cook until most water evaporates in the pan before adding the eggs?

      Lol yep, this happens. If the asparagus throws off the moisture or the pan isn’t hot enough, the eggs take longer. I like to go 5-6 min and pull them a bit early so they keep setting off-heat.
