A quick and delicious pepper steak recipe that you can make at home!

Ingredients
  

  • 1 pound beef sirloin sliced into thin strips
  • 1/4 cup soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 onion sliced
  • 2 Bell peppers sliced
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 1/2 cup beef broth
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp brown sugar

Instructions
 

  • In a bowl, combine the beef strips, soy sauce, and cornstarch. Mix well and set aside for 10 minutes.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for 5 minutes until the vegetables are tender-crisp.
  • Push the vegetables to one side of the skillet and add the marinated beef. Cook for 3-4 minutes until browned on all sides.
  • In a small bowl, whisk together the beef broth, oyster sauce, hoisin sauce, and brown sugar. Pour the sauce over the beef and vegetables and simmer for 2-3 minutes until the sauce has thickened.
  • Serve the pepper steak over rice or noodles. Enjoy!

    1/4 cup soy sauce + hoisin + oyster sauce seems too much sweet stuff… and cornstarch amount feels random. Also “simmer 2-3 minutes” turned into mushy peppers for me. Won’t make again.

      Totally get it—2 tbsp hoisin + 2 tbsp oyster sauce + 1 tbsp brown sugar can be pretty sweet. I usually cut the hoisin in half and add a bit more broth if it starts tasting candy-like. And for cornstarch, 2 tbsp for 1 lb feels high unless the beef is really well coated.

      I get what you mean—thin strips can brown fast but not really “pepper steak” deep. I usually crank the heat to high and cook the beef in a single layer (or in batches) so it actually sears, not steams. Also make sure the skillet is properly hot before the meat goes in.

      Hmm mine turned out good but I might be doing it different. I used Worcestershire instead of hoisin once (oops) and it was still strong lol. Maybe you needed more salt or your garlic/ginger was old? Try tasting the sauce before pouring—if it’s bland, it’ll be bland.

      Hmm… I think the broth temperature matters, but also 2 tbsp cornstarch for only 1/2 cup liquid might be a little light after you cook off moisture. Next time add like 1 extra teaspoon cornstarch mix with a splash of water and pour it in. Still glad it tasted good tho!

      Maybe it’s just the oyster sauce? I always use way less hoisin and more garlic so it doesn’t taste “sauce-y” to me. Also did you toast the cornstarch or something? My pepper steak never comes out too strong.

      Hmm, I think the issue might be the cornstarch not the simmering. If you let it sit too long in the bowl, it kinda clumps (at least that’s what happened to me once). I usually whisk the marinade again right before cooking.
