March 20, 2026

When it comes to bright, refreshing desserts, few options compare to a homemade lemon cake. This simple yet delightful cake offers a burst of citrus flavor paired with a moist, tender crumb, making it a perfect treat for any occasion. Whether you’re hosting a gathering, celebrating a special event, or simply craving a sweet bite to enjoy with a cup of tea, Easy Lemon Cake is guaranteed to satisfy.

What makes Easy Lemon Cake stand out is its balance of sweetness and tartness. The fresh lemon juice and zest give the cake a bright, zesty flavor that cuts through the sweetness, creating a refreshing contrast. The cake itself is light and airy, thanks to the use of ingredients like eggs and a little bit of baking powder, which help it rise beautifully and maintain a soft, moist texture.

Making this cake is straightforward and quick. The ingredients – flour, sugar, butter, eggs, lemon juice, and a bit of baking powder, are staples that most people have on hand, making it an accessible option for bakers of all levels. The process typically involves creaming the butter and sugar, adding the eggs, mixing in the dry ingredients, and folding in the lemon juice and zest. Once the batter is prepared, it’s baked until golden, and you can top it with a simple glaze or dust it with powdered sugar for an extra touch of sweetness.

The beauty of Easy Lemon Cake is its versatility. While it’s delicious on its own, you can customize it by adding a few extra ingredients to make it your own. For example, you could fold in some poppy seeds for a delightful crunch or add a few berries for a burst of color and flavor. If you prefer a richer dessert, you could serve it with whipped cream or a scoop of vanilla ice cream.

In addition to being a perfect spring or summer dessert, Easy Lemon Cake is also great for any occasion where you want something light and refreshing. It’s ideal for birthday parties, afternoon tea, or as a light dessert after a hearty meal. The bright lemon flavor adds a cheerful touch, making it a crowd-pleaser that suits both casual gatherings and more formal celebrations.

Whether you’re a baking novice or an experienced home cook, Easy Lemon Cake is a go-to dessert that delivers flavor, simplicity, and a little bit of sunshine in every bite. With its tangy citrus notes and moist, airy texture, it’s a treat that will keep you coming back for more.

Tried making it but I think I messed up the mixing part… didn’t rise much. 😕

Don’t worry! Mixing can be tricky. Maybe try beating the eggs a bit longer next time? It helps with the rise!

    2. 3 stars
Idk, but cake mix should work fine if ya follow instructions. Maybe something went wrong with the oven? 🤷‍♂️

  2. User avatar michel.gulgowski66 says:

This cake is so easy to make! I whipped it up in no time and my family loved it!

  3. User avatar ela.purdy1972 says:

    5 stars
My kids loved it! And I didn’t have to spend all day baking. Will make again. 🍋

  4. 1 star
Lol, I forgot the sugar and put salt instead! But it was still edible somehow.

  5. User avatar rico.legros80 says:

    4 stars
I was a bit skeptical about the jello part but it actually tasted great!

  6. 4 stars
Super easy and quick! Definitely my go-to recipe for when I have unexpected guests! 🌟

  7. 3 stars
This sounds complicated! Do I really need to poke holes in the cake? Sounds weird.

  8. User avatar earnest.harris79 says:

    2 stars
Too sweet for my taste. I think it needs less sugar.

  9. 3 stars
Cake mix? That’s not real baking! But the kids liked it.

  10. User avatar tissues_with_issues says:

    5 stars
Omg yummy 😋! My new favorite cake for sure.

  11. User avatar marcus.davis41 says:

This is not a real lemon cake. Where’s the real flavor? Feels like a box mix got dressed up.

  12. User avatar zachary.kuphal says:

This cake is soooo good! I made it for my friend’s birthday and everyone loved it!

    1. User avatar cliff.rodriguez64 says:

      5 stars
I’m so glad to hear that! What a great choice for a birthday cake. I’m definitely trying this out myself! 🎉

    2. 3 stars
Sounds good, but I’m wondering if it really tastes like lemon with that jello? 🤔

  13. 2 stars
This is basically boxed cake with lemon juice dumped on it. Could be fine, but I wouldn’t call it a real recipe. Also “powered sugar” should be powdered sugar lol.

  14. User avatar Restless Draugr says:

    5 stars
Made this tonight—super easy and the lemon punch is perfect. The jello step really makes it taste homemade.

    1. User avatar Mrs. Sibyl Ortiz says:

      5 stars
Love hearing this! The lemon/jello combo really does make it taste like you slaved over it 😊

  15. User avatar tommy.metz0 says:

    3 stars
Honestly I’d rather just make a regular lemon loaf. This one felt like too much boxed stuff + jello. Still, my kid ate two slices lol.

  16. User avatar wendell.bruen62 says:

    4 stars
Pretty good, but I think the 2 lemons for “lemon juices” might be vague. Mine needed a bit more juice to get a thinner glaze. Still good though.

  17. User avatar phil.nicolas2018 says:

    4 stars
The measurements are clear and it bakes up nicely in the 9×13. Mine came out a little too sweet with the full powdered sugar, but my kids loved it.

    1. User avatar Arthur Philip Deodat says:

      5 stars
So glad it worked in the 9×13! Yeah, the full 2 cups of powdered sugar can definitely make it pretty sweet—maybe next time use a little less (or add more lemon juice) if you don’t want that sugar-forward glaze. Your kids’ verdict sounds like the best kind of review 😊

  18. User avatar Falmer Shadowmaster says:

    4 stars
I was skeptical because it’s basically a shortcut, but wow. Followed the box baking time and the texture stayed nice and springy.

  19. User avatar donna.schneider1951 says:

    4 stars
I followed it exactly and it turned out great, but mine was a little too sweet. Next time I’ll use a bit less powdered sugar for the glaze.

  20. User avatar kamala.bednar2000 says:

    5 stars
Sooo good! I brought it to a family thing and everyone asked for the recipe. I used a glass 9×13 and it browned perfectly. Will repeat.

  21. User avatar darlene.pollich says:

    2 stars
I messed up the sugar part and used regular sugar by accident (not powdered). It didn’t dissolve right. Learn from me: powdered sugar is key 😬

  22. User avatar Lucius Gutkowski says:

    4 stars
I was skeptical about the jello + cake mix combo, but it turned out tender and not too sweet. Next time I’ll use a little extra lemon zest too.

  23. User avatar leighann.nader says:

    3 stars
Honestly… it’s fine. Like, not bad, just not super “cake-like” in the flavor. Could use a pinch of salt or vanilla to round it out.

    1. User avatar dominick.koch6 says:

      5 stars
Totally get what you mean—this one can come out a bit “tangy” rather than really cake-y. I usually add a little vanilla and a tiny pinch of salt to balance it, and it makes a big difference with the lemon jello situation.

  24. User avatar rhinoceros says:

    2 stars
The texture was weird for me? Kinda dense and gummy in spots. I’m probably doing something wrong, but I followed the directions and didn’t overmix.

  25. 5 stars
This cake was super easy to make and it turned out delicious! My kids loved it!

  26. User avatar alita.nienow1965 says:

    5 stars
Whoa! This is amazing! I made it for a potluck and everyone was asking for the recipe. Thank you!

  27. User avatar dawna.bartoletti55 says:

    2 stars
I had high hopes but the texture was off. Kinda dry and not very lemony for me.

  28. User avatar julissa.vonrueden48 says:

    4 stars
Lemon jello in cake??? Sounds strange. But I tried it and now I can’t stop eating it. So good!

  29. User avatar oren.nikolaus15 says:

    5 stars
    Yum!

  30. User avatar ShanksOnePiece says:

    2 stars
2 cups powered sugar… feels like a typo. I ended up using way less and it was better. Will try again.

  31. User avatar frances.kling95 says:

    3 stars
The glaze is delicious, but my cake turned out a little too wet in the center. Next time I’ll poke fewer holes or reduce the lemon juice a bit.

    1. User avatar Sabre Cat says:

      5 stars
I totally get that—those lemon-jello cakes can stay super moist if the holes let too much glaze sink in. Poking fewer holes is a good call! I’ll try that next time too.

    2. User avatar lai.okeefe says:

      4 stars
Mine did the same thing once 😅 I think my problem was I used more than 2 lemon juices (like… I eyeballed it). Also I waited too long to pour the glaze, so it got weirdly runny. Try cutting the lemon a bit and pour while it’s still warm?

  32. User avatar jerome.oconner says:

    1 star
I don’t get it. Is it cake or pudding? It’s just weird. Would not make again.

  33. 5 stars
This was shockingly easy and actually tastes like bakery lemon cake. I used fresh lemon juice and it came out bright and not too sweet—great for weeknights.

  34. 3 stars
I tried it but the glaze was way too thick for my cake. Next time I’ll cut back on powdered sugar or add more lemon juice. Still tasty though, just not pretty.

    1. User avatar bennett.dare10 says:

      4 stars
Sounds like you made it right but the recipe’s kinda off, honestly. 2 cups powdered sugar + only “2 lemon juices” (how much is that?) can be way too much sugar. Next time measure the juice like… 1/4 cup-ish? Or just use a thinner icing. Still, lemon cake is always good even if it isn’t pretty 😅

    2. User avatar ShanksOnePiece says:

      5 stars
Ugh I’m sorry that happened! Your fix makes total sense—powdered sugar can get super thick if the lemon juice ratio is off. I’d start with less powdered sugar, or add the lemon juice a little at a time until it pours like a glaze. Also letting the cake cool fully helps it soak more evenly.

  35. User avatar cyril.cassin says:

    3 stars
My cake didn’t set the way I expected—maybe my bake time was off because my box says something different. Still tasty though, just more gooey in the middle.

    1. User avatar noble.jast says:

      3 stars
Maybe you used too much lemon juice? Like you said “2 Lemon juices” — I always just dump a bunch in lol. Also 9×13 can bake weird depending on oven, so I’d follow the cake mix box *and* trust the look/texture, not just time.

    2. User avatar elvie.lubowitz1969 says:

      4 stars
Oof—been there. If it stayed gooey in the middle, it’s usually underbaked or the pan size/oven temp is a bit off. I’d try checking 5–10 min early and using a toothpick (should come out mostly clean). Also make sure you don’t pour the lemon topping while it’s still too hot or it can sink in and feel extra soft.

  36. User avatar sang.torp says:

    4 stars
Made it exactly as written. The poke-holes step really matters; the glaze soaked in nicely. Only thing—mine was a little runny before it cooled, but it set after a bit.

  37. User avatar terminatorXYZ says:

    4 stars
I was skeptical about the lemon jello + cake mix combo, but it actually came out super moist. Next time I’ll probably zest a little lemon too for extra flavor.

  38. User avatar rich.landlord says:

    4 stars
Pretty good, but I found it a bit oily with 3/4 cup oil. Could maybe swap half oil for applesauce or something? Still a solid lemon cake.

  39. 4 stars
I didn’t realize it says bake as directed on the box—so I checked early. Saved me from drying it out. Thank you, whoever wrote it.

    1. User avatar w00d_ch0p says:

      5 stars
Yes! Checking early is the real pro move—lemon cakes dry out fast. Glad it worked out for you 😊

    2. User avatar jacinda.satterfield49 says:

      3 stars
Huh, I always just bake it for like the “regular time” and hope. Poking holes helps though right? Congrats on not overbaking.

  40. User avatar lory.welch59 says:

    3 stars
Question: it says ‘bake as directed on the cake mix box’ but the jello changes things, right? Mine took longer—maybe 10 more minutes.

  41. User avatar milton.kreiger11 says:

    2 stars
“2 Lemon juices” is weird wording… I used lemons and got confused whether it meant 2 tbsp or 2 lemons. I ended up using a ton and it overflowed 😂

  42. User avatar rickiestmorty says:

    4 stars
Not gonna lie, I was skeptical about lemon jello + powdered sugar, but the flavor is legit. Next time I might add a tiny bit of zest for extra punch.

  43. User avatar adan.stracke65 says:

    4 stars
Tried it and it came out good, but mine was a little too sweet. Next time I’ll probably use a bit less powdered sugar or add a splash more lemon juice to balance.

    1. User avatar Dr. Marx Osinski says:

      5 stars
Glad it still turned out good! I totally get the “too sweet” thing—next time try reducing the powdered sugar by like 1/4 cup and see, and yeah a little extra lemon really helps balance it.

  44. User avatar Lumberjack says:

    2 stars
I’m skeptical. Cake mix + jello + that much powdered sugar feels like it’s more sugar than lemon. It was edible, but didn’t wow me.

  45. User avatar maryrose.daniel says:

    4 stars
Honestly super easy. I’m not an experienced baker at all and I still pulled it off. The only thing is I added the lemon mixture a bit too soon and it soaked weird for a minute, but it settled.

  46. User avatar kelley.mueller2025 says:

    1 star
Nope. Too sweet for me, and I couldn’t taste much lemon besides the topping. Would rather just do a lemon frosting.

  47. User avatar warren.schultz32 says:

    1 star
    Lemon overload!

  48. User avatar bud.erdman75 says:

    4 stars
Not gonna lie, I was skeptical about using just lemon juice + powdered sugar over cake mix. But wow, it worked and the poke holes help a lot.

  49. User avatar bernie.walter says:

    2 stars
Ok but the measurements feel off—“powered sugar”?? I used powdered sugar anyway and it thickened too much. Maybe I should’ve added more water? Might try again.

    1. 3 stars
I’ve made cakes like this and honestly the ratio is weird. I’d just use less powdered sugar or more lemon juice—water usually isn’t the fix because it can make it watery. But hey, try again and trust your gut 😅

    2. User avatar rod.kilback95 says:

      4 stars
Yeah, “powered sugar” in the recipe is just powdered sugar—typo happens. If yours thickened, it usually means the lemon juice amount was a bit low or the sugar was packed. I’d add lemon juice gradually (or thin the mix with a tiny bit more) until it flows like a loose glaze.

  50. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    4 stars
Not bad! I used fresh lemon juice and it smelled amazing. Next time I’ll add a bit of zest because the flavor felt mostly “tart” not really “lemony.”

    1. 3 stars
I did this once but I only had bottled lemon stuff and it came out kinda meh. Zest might help, yeah, but honestly I think you might just want a little more lemon juice too.

    2. User avatar Arthur Philip Deodat says:

      5 stars
Ooh fresh lemon juice sounds amazing! Adding zest is a great idea—zest really brings that “lemony” aroma. I bet it’ll balance the tartness perfectly.

  51. User avatar alex.ohara47 says:

    3 stars
I think the “2 Lemon juices” measurements are a lil unclear. I guessed and used about 2 lemons. It still worked, just wish the recipe said cups or tablespoons.

    1. 5 stars
Totally agree—“2 Lemon juices” is confusing. I measured mine as the juice from about 2 medium lemons and it turned out great, but cups/tbsp would’ve made it foolproof. Next time I’ll probably squeeze and measure right into a measuring cup.

  52. User avatar Restless Draugr says:

    5 stars
Made this last night—super easy and the lemon glaze soaks in nicely. I used fresh lemon juice and it tasted way brighter than I expected. 10/10 for a quick dessert!

  53. User avatar Alexander Prohaska DVM says:

    5 stars
Made this last weekend and it turned out so moist! The poke-holes trick really helps the lemon glaze soak in. I used a little extra lemon juice and it was perfect.

    1. User avatar hulda.koch36 says:

      5 stars
That sounds awesome! I love when the poke-holes actually make the glaze disappear into the cake 😄 Do you think extra lemon juice would work the same with other citrus too?

  54. User avatar sara.lakin73 says:

    5 stars
So good!! My kids asked for seconds. I only had lime juice once and it was still decent, so yeah—I trust this recipe.

  55. User avatar eli.denesik says:

    3 stars
Sounds good but I’m confused by “2 Lemon juices” — like is that 2 lemons or 2 tbsp/ounces of juice? Also “powered sugar” lol. If you clarify those, I think people will bake better.

    1. User avatar denice.morar54 says:

      5 stars
Great questions! I meant the juice from 2 lemons (fresh), not 2 tablespoons/ounces. And “powered sugar” is just powdered sugar (1–2 words spellcheck lol). Thanks for calling it out!

    2. User avatar karolyn.hamill1991 says:

      4 stars
lol I had the same thought about the “lemon juices.” I assumed it was 2 lemons too, but 2 cups powdered sugar seems like a lot—mine got super sweet. Still tasty though!

  56. User avatar porcupine says:

    3 stars
Not sure about the ‘easy’ part because I somehow messed up the measuring—ended up with oil everywhere 😅 But flavor was still pretty great. Could be my fault though.

    1. User avatar Chaurus Hunter says:

      5 stars
Totally get that 😅 “Easy” recipes are easy—until measuring goes sideways. If you spilled oil everywhere and it still tasted great, that’s honestly a good sign the recipe’s forgiving. Next time try measuring the oil carefully (and maybe pour slowly) so it doesn’t get too greasy. Love that lemon glaze too!

  57. User avatar elliot.shanahan1962 says:

    3 stars
I followed it exactly but my cake was kinda dense. I think I overmixed after adding the eggs. Still tasty though, just not as light as I hoped.

  58. User avatar bettyann.cartwright says:

    4 stars
My kids love it. I let them poke the holes (they were *very* enthusiastic). Also, the frosting/glaze smells like sunshine.

  59. User avatar terrence.mosciski33 says:

    2 stars
I tried this and it didn’t really taste lemon-y enough for me. Also my cake sank in the middle, so maybe my bake time was off—follow the box, I guess.

  60. User avatar omer.connelly21 says:

    2 stars
I used regular sugar instead of powdered sugar (my bad) and it was gritty. Still tasted good though. Don’t skip the powdered sugar, people 😅

  61. User avatar luanne.hermiston15 says:

    3 stars
Not gonna lie, my cake came out kinda dense. I think I overmixed the batter and probably didn’t measure the eggs right. Still tasted good with the lemon glaze though.

    1. User avatar melia.wolff68 says:

      5 stars
That sounds super fixable! Overmixing can definitely make it dense—once the batter is combined, stop. Also, measuring eggs is tricky: if you used large eggs, 4 large is the usual. Next time try mixing a little less and scrape the bowl only once.

  62. User avatar traci.berge1969 says:

    5 stars
Made this tonight—so easy it felt like cheating 😅 The lemon poke-and-pour step is where the magic happens. Super bright and not too heavy.

  63. 5 stars
This is my new go-to lemon cake. Easy, affordable, and always gets compliments. I added extra lemon zest and it kicked it up.

  64. User avatar santo.glover59 says:

    5 stars
Made this today—so easy and the lemon flavor really pops. I let it cool completely like the instructions and it soaked up nicely. 10/10 for busy weeknights.

    1. 5 stars
Yes!! I love that lemon flavor you mentioned—mine always comes out super bright when I let it cool and then soak it properly. This is definitely a “weeknight win.” 🍋

    2. User avatar Darren Schaden says:

      3 stars
I tried a lemon jello cake once and it was kinda gummy in the middle… do you think cooling completely helps with that? Also I only had bottled lemon juice—still okay?

  65. User avatar harlan.dubuque says:

    5 stars
This is dangerously simple. I’m not usually a ‘mix cake’ person but wow. It actually tastes homemade, especially after it cools and soaks up the glaze.

  66. 3 stars
The instructions are simple, but I wish it mentioned temperature for the pan (like middle rack). I put it too high and the edges browned faster than the center.

  67. User avatar Vladimir Harkonnen says:

    5 stars
Made this for a brunch and it was gone in like 20 minutes. The lemon glaze soaked in perfectly—super bright and not too sweet.

  68. 4 stars
This is the kind of recipe that feels like cheating (in a good way). Lemon flavor is bright and the cake is soft. I’ll definitely make it again for potlucks.

  69. User avatar sima.braun81 says:

    2 stars
Meh. Lemon jello + lemon juice was a little too tangy for my family. Kids didn’t love it. Might be great for sour-lovers, but for us it was just okay.

  70. User avatar ashley.kunze32 says:

    5 stars
Made this today—so easy! The lemon glaze really soaks in and tastes bright without being too sour. I used fresh lemon juice and it was a hit at my house.

    1. User avatar ivan.weissnat says:

      3 stars
Sounds good but I’m confused by the ingredients—“2 Lemon juices” like… two lemons? Also “powered sugar” lol. I might try it anyway but I’ll probably eyeball it.

    2. User avatar yuriko.gutkowski says:

      5 stars
Nice! I love when the glaze soaks in instead of just sitting on top. Question though—did you use fresh lemon juice for both the cake and the glaze, or only for the topping?

  71. User avatar tessie.koelpin says:

    3 stars
Not gonna lie, mine came out kind of dense. I followed the directions exactly, but I wonder if my eggs were smaller. The glaze helped mask it a bit.

    1. User avatar frederic.fisher says:

      4 stars
Ugh, I’m sorry—dense cake is usually one of the sneaky things like egg size or overmixing. If your eggs were smaller than typical large eggs, that could definitely do it. Next time, try using large eggs or even weigh them. Also, when you “mix the first 5 ingredients,” don’t over-stir once the batter comes together—cake mix can get heavy if it’s beaten too much. The glaze/poke holes helping makes sense though!
