Ingredients
  

  • 6 eggs large
  • 1/4 cup milk any type
  • 1/2 cup bell pepper chopped
  • 1/4 cup spinach chopped
  • 1/4 cup onions chopped
  • 1/4 cup Cheese shredded, any type
  • 1/2 tsp salt
  • 1/4 tsp black pepper ground

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whisk together the eggs and milk.
  • Add the chopped bell pepper, spinach, onions, shredded cheese, salt, and black pepper to the egg mixture.
  • Pour the mixture evenly into a greased muffin tin, filling each cup about 2/3 full.
  • Bake for 20 minutes or until the egg muffins are set and lightly golden.
  • Allow to cool for a few minutes before removing from the muffin tin. Serve warm.

    I followed the recipe exactly and my muffins were watery. The oven temp was right though… maybe I chopped the spinach too wet? Disappointed.
