Crispy Pork Belly

July 24, 2024

Few dishes are as satisfying as crispy pork belly. With its golden, crackling skin and rich, juicy meat, it brings together indulgence and simplicity in one irresistible bite. Whether you’re hosting a dinner party or preparing a weekend feast, pork belly is a showstopper that always delivers.

The key to perfect pork belly lies in the contrast between textures. The skin must be crackly and shatter with every bite, while the meat underneath should remain tender and succulent. To achieve this, the pork needs to be scored, well-seasoned, and slow-roasted before a final blast of high heat crisps up the top. A dry rub of salt, pepper, garlic powder, and Chinese five-spice adds a deep, savory aroma that enhances the natural richness of the pork.

Serving crispy pork belly is all about balance. The dish pairs beautifully with a fresh slaw, pickled vegetables, or even a zingy apple chutney to cut through the fat. For a heartier plate, serve it with jasmine rice, mashed potatoes, or a sweet soy dipping sauce.

What makes pork belly so appealing is its versatility. You can go classic with simple seasonings or take it in a fusion direction—Korean-style with gochujang glaze, Filipino lechon kawali, or even slider-style in bao buns with hoisin sauce and fresh cucumber.

While it may seem intimidating, cooking pork belly at home is quite straightforward if you follow the steps carefully. It’s also more economical than you might think, offering gourmet results with a relatively low-cost cut of meat.

Crispy pork belly isn’t just a dish—it’s an experience. One that delivers a perfect crunch, unforgettable flavor, and leaves everyone wanting more.

It tasted alright but took way too long. Why not just get it done quicker? 🤔

This turned out AMAZING. The skin crackled like pork belly from a restaurant. I’ll never go back to the bland stuff.

Easy to follow instructions! I felt like a chef. Can I use other spices?

    1. 5 stars
Absolutely, you can experiment with different spices! Just keep the balance right, and you’ll be fine. Maybe add some chili powder for a kick!

Followed this exactly, but it came out burnt. Oops.

I followed it exactly but I’m not sure my oven runs hot or what… the skin wasn’t as crisp as I wanted. Flavor was great, but I may need longer at 450°F.

I can’t eat pork. But can I use a chicken instead? Will it work tho?

375 for an hour then 450 for 30? That seems kinda random. Pork belly skin doesn’t always crisp that fast—mine stayed chewy and I was sad. Might need higher heat or more time.

    1. User avatar america.watsica95 says:

      4 stars
Yeah, it does sound a little random, but the switch is supposed to do two jobs: cook through at 375, then blast at 450 to crisp the fat/skin at the end. If yours stayed chewy, I’d try extending the 450 step by 10–20 minutes or starting with a slightly drier skin (pat it dry).

Pork belly is too fatty for me. I prefer leaner meats. Not my kind of recipe, but I guess some folks like it.

I forgot the olive oil and it still turned out good. Go figure!

  11. User avatar alfredo.ebert says:

So easy. Like… too easy. 😂 The crispy bits were gone in minutes.

  12. User avatar patrick.batz50 says:

Not bad at all. I think 1 tsp oregano is a little strong for my taste though—next time I’ll cut it in half. Still crispy on the edges!

  13. 5 stars
Crispy is the key! Also, I added some soy sauce and honey to the rub, came out incredible!! Give it a try!

    1. User avatar benny.emmerich1993 says:

That sounds amazing! Soy sauce and honey? I’m definitely trying that next time! Thanks for sharing!

    2. User avatar Dale Graham says:

      2 stars
I dunno about soy sauce, wouldn’t that make it too salty? Pork belly is already fatty as it is.

Pork belly yaasss! But I can’t believe you only put 1 tsp of garlic powder! More garlic, more better!

This is the kind of recipe I can actually do. Simple seasoning, no weird steps. My kids ate it all up. Would absolutely make again.

  18. 4 stars
Seems easy enough! I might add some honey next time for a sweet twist.

  19. 5 stars
So easy to make! I added some chili flakes for a little kick. Yum!

I’m so glad to hear that! It really is delicious. Did you try adding anything special to it?

  21. 4 stars
I had no paprika, so I used chili powder. It worked pretty well! I’d do it again. 4 stars.

The instructions are a little vague—like, do you cover it or leave it uncovered? I left it uncovered and it probably helped, but still…

  23. User avatar arden.feest1979 says:

Too much salt! I think 1 tsp was too much. Next time I’m gonna reduce it.

  24. 3 stars
What about marinades? I think it needs more flavor!

Needs more salt lol. The spices are fine but it was a bit bland to me. Also, I forgot to score the skin at first and it was messy after.

    1. User avatar donnell.kautzer1996 says:

      4 stars
Honestly I agree—2 lbs and “salt to taste” is doing a lot of work. I added more salt right before the hot phase and it helped a ton. Also scoring first is key; otherwise you get that chewy, messy skin.

  32. User avatar terrance.lebsack98 says:

This was AMAZING! The pork came out so crispy and delicious. My family loved it!

  33. 5 stars
This was awesome! The pork belly was so crispy and flavorful. Will definitely make it again!

    1. User avatar lucien.witting53 says:

I’m glad you loved it! It’s one of my favorites too! The spices really make a difference!

  34. 4 stars
Honestly, I was skeptical about the cooking times. My oven doesn’t heat evenly. Next time I’ll adjust it. Still turned out pretty good tho.

  35. User avatar napoleon.lind92 says:

    4 stars
Mine came out a little too salty even though I “used to taste,” so next time I’ll go lighter on the salt. Still super crispy though. Resting helped a lot.

  36. User avatar Dan Saul Knight says:

    4 stars
Good basic method, but 1 hour at 375°F felt a little short for my thick cut. I ended up adding ~20 minutes before cranking to 450°F. Still turned out great though.

    1. User avatar norah.schimmel says:

      5 stars
Yeah, 1 hour at 375°F can be a little too optimistic for thick cuts. Adding time before the high-heat blast makes total sense—450°F is where it really snaps up.

  37. User avatar loyd.altenwerth46 says:

    4 stars
I used my fattier pork belly and it still worked, though I had to add like 10 minutes to get it truly crunchy. Worth it.

    1. User avatar Prostetnic Vogon Jeltz says:

      4 stars
My oven is always weird—so “add 10 minutes” is super helpful. Do you think the crunch comes more from the 450°F step or just overall cooking time?

    2. User avatar kieth.breitenberg11 says:

      5 stars
Nice! I’m glad the fattier pork belly still came out. That extra time makes sense—fat takes a bit longer to fully render and crisp up.

  38. 1 star
Crispy? More like soggy! What a waste of good pork. Never again.

  39. User avatar irina.barrows31 says:

    3 stars
meh, i dont know. Mine was ok but not crispy enough. Oven temps maybe off? Anyway, 3 stars.

    1. User avatar Rob McKenna says:

      4 stars
Yeah, 375°F for an hour + then 450°F for only 30 mins can come out a bit soft depending on how thick the belly is. Next time, try longer at 450 (or even 10–15 mins more) and make sure the skin is really dry before scoring.

  40. User avatar josh.thompson45 says:

    2 stars
Pork belly?? That’s just a slice of fat!! Who eats that? We should eat more healthy foods.

    1. 2 stars
But it’s just fat! Healthy is the way to go. Maybe try a veggie recipe instead?

    2. User avatar Barliman Butterbur says:

      5 stars
I love pork belly! It’s a treat for special occasions. Not everything has to be super healthy all the time!
