Ingredients
  

  • 2 cups romaine lettuce chopped
  • 2 tbsp cilantro chopped, fresh
  • 1 cup chicken breast cooked, diced
  • 1/2 cup tomato diced
  • 1/2 cup avocado diced
  • 1/4 cup bacon crumbled, cooked
  • 1/4 cup blue cheese crumbled
  • 2 eggs hard-boiled, chopped
  • 2 tbsp red wine vinegar
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine the romaine lettuce and cilantro.
  • Add the diced chicken breast, tomato, avocado, bacon, blue cheese, and chopped eggs to the salad bowl.

      Totally get that—2 tbsp red wine vinegar can hit pretty hard depending on the vinegar. I usually start with 1 tbsp and taste, then add more if it needs brightness. Your olive oil idea is spot on too!
