Ingredients
  

  • 1 tbsp olive oil
  • 1 onion sliced
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 tbsp chipotle powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • Lime wedges for serving

Instructions
 

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion, bell pepper, and zucchini. Cook for 5-7 minutes, until the vegetables are tender.

      I think the avocado browning prob changed the whole vibe, lol. next time try tossing it with a little lime juice before serving. also… 1 tbsp chipotle powder seems like a lot? I only use like a tsp and it’s plenty spicy.

I also find it helps to bloom the spices in the skillet for 30-60 seconds after you mix them with the veg, and definitely salt to taste at the end.

      Totally could be the cumin/brand. I’ve noticed some cumin is super earthy if it’s old or ground too fine. I usually cut it to 1/2 tsp and add a pinch of brown sugar or extra paprika to bring the warmth back.

    Tried this tonight and it’s seriously flavorful. The chipotle + cumin combo is spot on, and the lime at the end really ties it together. I added a little extra salt and it was perfect.

    The ingredient list is solid. I’d just add some sautéed garlic or onions longer to get more caramelization. Still, pretty tasty overall.

    Not gonna lie, I was skeptical about chipotle powder without actual chipotles in adobo, but it worked. The smoky flavor is there.

      I totally get the skepticism—chipotle powder can taste kinda flat sometimes. But the combo with cumin/paprika/garlic probably brings it back. Glad it worked out for you!

    Not bad, but my veggies took longer than 5-7 mins. Also the chipotle powder made it hotter than I expected (I may have used a strong brand). Still ate it all though.

      I’m not sure about adding lime while cooking—won’t it mess with the spices or make it bitter? But corn in a fajita bowl does sound good. Maybe try it at the very end?

    Boring… sorry. The flavors are okay, but it needed something—maybe more salt or a dollop of sour cream/Greek yogurt. Avocado helps a lot.

    Idk, chipotle powder feels too smoky for veggies—like overpowering. And 1 cup cooked rice seems small for a whole bowl. I’d rather do it with actual fajita meat, sorry.

      Totally get it—chipotle powder can be super smoky. I usually start with like 1/2–3/4 tbsp and add more if needed, or swap part of it with regular chili powder/paprika for a milder vibe.
