Ingredients
- 2 chicken breasts thinly sliced
- 2 tbsp curry powder
- 1 onion thinly sliced
- 2 carrots sliced
- 2 cloves garlic minced
- 1 tbsp vegetable oil
- 4 cups chicken broth
- 1 cup coconut milk
- 2 packets udon noodles
- Salt and pepper to taste

Instructions
- In a large pot, heat the vegetable oil over medium heat
- Add the minced garlic and sliced onion to the pot and cook until the onion is translucent, about 5 minutes
- Add the sliced chicken breasts and cook until they are no longer pink in the middle, about 7-8 minutes
