Carrot Cake

March 20, 2024

Carrot cake is the ultimate comfort dessert. With its moist crumb, warming spices, and rich cream cheese frosting, it’s the kind of cake that brings joy to any celebration. Whether it’s a birthday, holiday, or just because, this carrot cake is guaranteed to impress.

The secret to a great carrot cake lies in the balance of flavors and textures. Start by grating fresh carrots, the more finely grated, the better, as they’ll blend beautifully into the batter. The carrots add moisture and sweetness, creating a soft and tender cake. Cinnamon and nutmeg are the traditional spices used, bringing a warm, cozy flavor to every bite. A pinch of ginger adds an extra layer of depth, though it’s optional if you prefer a milder taste.

This cake also benefits from the addition of nuts and raisins, both of which are classic in carrot cake recipes. Walnuts or pecans provide a pleasant crunch, while raisins add little bursts of sweetness. However, if you’re not a fan of these additions, feel free to skip them,  the cake will still be fantastic.

In terms of the batter, it’s simple. Mix together dry ingredients (flour, baking powder, baking soda, spices, and a pinch of salt) with wet ingredients (eggs, oil, sugar, and vanilla). Combine them until just blended, then fold in the grated carrots and any optional add-ins like nuts or raisins.

Once the cake is baked and completely cooled, it’s time for the star of the show: the cream cheese frosting. Smooth and tangy, this frosting pairs perfectly with the rich, spiced cake. It’s easy to make with just cream cheese, butter, powdered sugar, and a little vanilla extract. Spread it generously over the cake, and if you’re feeling fancy, top with extra chopped nuts or a sprinkle of cinnamon.

This carrot cake is a true crowd-pleaser, offering a little bit of everything: spiced sweetness, tender texture, and a luscious, creamy frosting. It’s a dessert that’s as beloved as it is delicious, making it a perfect choice for any occasion.

Couldn’t find walnuts, used pecans instead, turned out fine!

  2. 4 stars
Not a fan of carrots, but this cake is surprisingly good. Almost tastes like dessert!

  3. User avatar Android 20 says:

No way! I hate carrots! No thanks!

  4. User avatar Super Saiyan Blue Vegeta says:

    1 star
Why do you need 4 eggs? Seems excessive for a carrot cake.

  5. User avatar Antonio Smitham says:

    4 stars
I accidentally used regular butter instead of unsalted and it was still fine, but frosting got a bit too sweet. Otherwise tasty.

    1. 4 stars
This is exactly why I always check the butter type 😅 But if it came out tasty anyway, that’s a win. I’m curious—did the cake itself taste ok, or was it just the frosting sweetness?

    2. User avatar rae.buckridge says:

      5 stars
Glad it still worked! Yeah the frosting is usually where it gets outta hand—powdered sugar can be a lot. Next time maybe reduce the sugar a bit or add a tiny pinch of salt/extra vanilla to balance.

  6. User avatar Dan Streetmentioner says:

    2 stars
Doesn’t this have too many eggs? I dunno, seems weird. 🤔

  7. User avatar ken.kuhlman90 says:

Amazing recipe! This carrot cake is the best I’ve ever made! My family loved it.

My aunt lilsy made this every year for easter! Memories! 🥕🍰

    1. 5 stars
This sounds delicious! I can’t wait to try it, especially with the crushed pineapple. Yum! 🍍

    2. User avatar Thufir Hawat says:

      2 stars
Why would anyone put pineapple in cake? That’s just weird. Carrots are fine but that’s too much fruit. 🤔

  9. User avatar neville.brakus says:

    5 stars
Yum! Just made this for my friend’s birthday and everyone loved it! Will definitely make again!

  10. User avatar ludie.corwin11 says:

    2 stars
I tried this and it flopped. I think I used too many eggs? Not sure, but it didn’t rise properly.

    1. User avatar leonel.reinger says:

      3 stars
Nah, I don’t think it’s the eggs! The baking powder could be old. That can mess up how it rises. Maybe check that next time.

    2. 4 stars
It sounds like you might’ve added too many eggs! I’ve done that before, and it can make the cake too dense. Try using 3 next time! Good luck!

  11. User avatar Slartibartfast says:

    5 stars
Best carrot cake ever! I used less sugar and it still turned out perfect!

  12. User avatar Thufir Hawat says:

    4 stars
Why is there pineapple in carrot cake? Seems weird to me. Might skip that next time.

    1. 4 stars
Pineapple makes it moist and sweet! I think it adds a nice flavor. Don’t knock it till you try it!

  13. 5 stars
Best carrot cake I’ve ever had!! 💖

  14. User avatar stephen.veum25 says:

    3 stars
I’m not sure about the 2 cups sugar with 4 cups powdered sugar on top… way too sweet for my taste. I’d cut back sugar next time, but texture was good.

  15. User avatar jordan.terry28 says:

    3 stars
My cake stuck a bit even though I greased/floured the pan. Maybe my pan size was different or I didn’t spread it right. Also, I had to add a splash of milk to the batter because it seemed thick? Not sure if I messed up measuring.

  16. User avatar audrey.padberg1999 says:

    3 stars
I dunno, this seems kinda basic? Like, can you really call it carrot cake without some raisins or coconut?

  17. 2 stars
I followed the recipe exactly, but my cake turned out super dense. What did I do wrong?

    1. User avatar Frostbite Spider says:

      4 stars
It sounds like you might have overmixed the batter or used too much flour. Be careful measuring! Dense cakes can be a bummer! 😟

    2. User avatar tameika.jones30 says:

      3 stars
Maybe you used old baking powder? That can really mess things up! Make sure it’s fresh next time!

  18. User avatar sharyn.schumm34 says:

    3 stars
It was ok, but a bit too sweet for my taste. I think I might try using less sugar next time.

  19. 5 stars
This cake was amazing! Super moist and flavorful. My family devoured it!

  20. User avatar jessica.schmeler says:

    5 stars
    Tasty!

  21. 5 stars
Carrot cake is my favorite! Easy to make, smells amazing while baking. The frosting is dangerously good. Five stars!

    1. 5 stars
Yes!! Carrot cake is the best—especially with cream cheese frosting. Mine always smells so cozy while it’s baking too 😊

  22. User avatar linnea.macgyver44 says:

    5 stars
Made this today and it’s dangerously good. The pineapple keeps it super moist and the cinnamon/nutmeg combo tastes like cozy fall. Frosting came out silky—followed the “cool completely” step and it worked perfectly.

  23. User avatar johnathan.mertz says:

    2 stars
Not sure I’m convinced about 4 cups powdered sugar… that frosting is like candy. Tasted good though lol.

  24. 3 stars
Is there a reason to add pineapples? Can’t imagine how that helps. Just seems strange.

  25. User avatar kristal.daugherty93 says:

    4 stars
Super easy and tastes great. Only thing: I accidentally mixed the dry ingredients with the frosting bowl at first (long day). Saved it anyway lol.

  26. 5 stars
Great recipe! I added some raisins and it turned out delicious! Definitely making this again.

  27. User avatar juli.marquardt says:

    4 stars
Carrots in cake? Sounds weird but it actually tasted good! Who knew?

    1. User avatar magaret.cole says:

      5 stars
Carrot cake is the best! It’s a sneaky way to add veggies!

  28. User avatar jared.boyle46 says:

    4 stars
Too sweet for my taste. I think it needs less sugar. But the cream cheese frosting is bomb!

  29. User avatar olivia.mcdermott98 says:

    4 stars
My frosting came out lumpy for a minute (I think I used cold butter? rookie move). Once I kept beating, it smoothed out and then it was perfect.

  30. 1 star
I made this last night and it was a disaster! My cake didn’t rise at all, what went wrong?

  31. User avatar sharilyn.champlin25 says:

    4 stars
I followed it pretty much exactly, baked 47 minutes. Toothpick came out clean and it sliced super well. Solid carrot cake.

  32. User avatar rickiestmorty says:

    1 star
Nope! Not good. I don’t like nuts in my cake, and this one had too many. Never again!

    1. User avatar val.kreiger2005 says:

      4 stars
I get it, not everyone likes nuts. Maybe try a version with raisins or just go nut-free next time! 🤷‍♂️

  33. User avatar jody.brakus72 says:

    5 stars
Wow, this is the best carrot cake recipe I’ve ever tried! Super moist!

    1. User avatar viola.lockman says:

      5 stars
I agree! This recipe is a game changer. It turned out just perfect when I made it!

    2. User avatar jesse.harris1958 says:

      3 stars
Hmm, I don’t know about best. Mine always comes out dry. Maybe I need more oil?

  34. User avatar houston.crona2 says:

    3 stars
Easy to make, but not the best carrot cake I’ve ever had. Just okay for me.

  35. 3 stars
Frosting was too much. I just wanted a plain cake.

  36. 2 stars
I forgot to drain the pineapple enough and batter felt extra wet. I baked longer but the middle sank a little. Might be user error, but recipe could’ve warned about draining.

    1. User avatar ligia.treutel says:

      4 stars
Ah yeah—pineapple moisture can absolutely mess with carrot cake batter. I usually squeeze it a bit in a paper towel before adding. Also, 45–50 min can be tight if it’s wetter; your longer bake probably helped but the extra water can still make the center sink.

  37. User avatar mickey.gerhold says:

    2 stars
carrot cake is overrated tbh. also 9×13 seems huge. i might try the frosting tho but the whole thing feels like too much sugar and nutmeg. 😅

  38. User avatar jeffry.kertzmann1989 says:

    4 stars
I was skeptical about the amount of powdered sugar in the frosting (feels like a lot), but wow—cream cheese + butter ratio saved it. Not too sweet. I’ll definitely make it again for the holidays.

    1. 5 stars
Totally get the skepticism—4 cups powdered sugar sounds *insane* at first. But if the cream cheese + butter ratio keeps it balanced, that’s the magic. Love that you said it’s not too sweet!

    2. 3 stars
I’m gonna be honest, 4 cups feels like way more than frosting should have. I tried something similar once and it came out like sugar paste 😬 Maybe I’ll trust your word and try it for the holidays though.

  39. 5 stars
This cake is amazing! I love how moist it is. It’s now my go-to recipe for family gatherings.

  40. 5 stars
Made this for a family get-together—wow. The pineapple + walnuts combo is such a nice surprise, and the frosting is dangerously good.

  41. User avatar Barry Manilow says:

    5 stars
Wow, my kids devoured this carrot cake! Who knew they’d eat veggies this way?!

  42. User avatar alexis.fahey18 says:

    4 stars
Yum! The combination of carrot and pineapple was a surprise, but SO good!

  43. User avatar Slartibartfast says:

    2 stars
My frosting slid off a little because I spread it when the cake was still warm 😅. Cooling completely is not optional, folks!

  44. User avatar CTRLplusW says:

    3 stars
I followed the recipe but it came out too sweet for my taste. Maybe less sugar next time?

  45. User avatar anonymous_hacker says:

    3 stars
The nutmeg amount felt a little strong to me, but that might just be my taste. Next time I’ll go lighter on it.

  46. User avatar cruz.marks1998 says:

    5 stars
Best recipe ever! I’ve made it for my kids’ birthdays and they love it. Can’t wait to make it again!

  47. User avatar Draugr Deathlord says:

    5 stars
45-50 minutes was spot on for my oven. Toothpick came out clean at 48 minutes. Carrot cake purists will approve.

  48. User avatar Anh O'Keefe says:

    5 stars
Followed the recipe exactly and it baked up perfectly in 48 minutes. I used chopped pecans instead of walnuts and it still worked great.

  49. 3 stars
Ngl I messed up step 3 and overmixed the eggs—cake was still tasty but kinda tougher than expected. Would try again.

  50. User avatar salvador.schultz says:

    4 stars
I added raisins to it, didn’t have walnuts. Tasted great but a bit too sweet.

  51. User avatar jolyn.mraz says:

    5 stars
Delicious! I added some raisins and it made it even better! Can’t wait to make it again!

  52. User avatar Jamel Rice says:

    2 stars
Just okay, dont think i will make again. I like normal cakes better.

  53. 3 stars
My frosting got a bit grainy after adding powdered sugar, like little sugar bits. I probably didn’t beat long enough. Still tasty though.

  54. User avatar lenard.brekke1998 says:

    5 stars
This is a classic. Carrots are underrated in desserts. The walnuts add that little crunch—yum.

  55. User avatar arden.becker68 says:

    4 stars
Can I use coconut oil instead of vegetable oil? That might be healthier!

  56. User avatar elliott.vonrueden says:

    5 stars
Tried this for a family get-together and it disappeared fast. The spices (cinnamon + nutmeg) make it taste super “bakery” without being overwhelming.

  57. 3 stars
I followed the recipe, but my cake didn’t rise. What did I do wrong? Maybe my baking powder is old… 🤔

  58. 2 stars
Meh, I got confused with the measurements. Do I really need all that sugar? Anyway it turned out fine.

    1. User avatar tommie.strosin37 says:

      4 stars
I get it! The sugar can be overwhelming. I toned it down and it still tasted great!

    2. User avatar anh.trantow1954 says:

      2 stars
Why so much sugar? That seems crazy. I think you could skip some. Just sayin’.

  59. User avatar elroy.hoeger68 says:

    4 stars
Followed the instructions exactly (9×13, 350°F). Mine took closer to 55 minutes but toothpick came out clean. Frosting turned out smooth—nice classic carrot cake vibe.

  60. User avatar geoWizard says:

    3 stars
Flavor is excellent, but mine sank slightly in the middle after cooling. Maybe my oven runs hot/cold? Otherwise a keeper.

  61. 3 stars
Just a regular cake, nothing special. I’ve had better. 😒

  62. User avatar Shadowfax says:

    2 stars
I followed the recipe exactly but it turned out super dense. Not sure what went wrong… 😕

  63. 1 star
Why is there pineapple? IT WAS WEIRD. I don’t like it. 1 star.

  64. 5 stars
This cake was a hit at my family gathering! Super moist and flavorful. Thanks for the recipe! 😊

    1. User avatar Tricia McMillan says:

      5 stars
Glad it turned out great! I can’t wait to try it myself. 👏

  65. User avatar verline.wiegand says:

    4 stars
Pretty tasty, but I think 45-50 min might be a little short for my oven. I ended up baking closer to 55 before the toothpick came out clean. Still, the flavor is solid and the texture is nice.

    1. 5 stars
Totally get that—ovens run hot/cold. I’m glad you still hit 55 and it turned out great. Mine also takes a bit longer than the listed 45–50.

    2. User avatar scottie.marvin27 says:

      5 stars
Yeah 45-50 feels optimistic. I’d trust the toothpick more than the timer too—mine always needs extra browning time in a glass pan.

  66. User avatar moses.hirthe says:

    5 stars
This carrot cake is absolutely delicious! My family loved it.

  67. 4 stars
I love this recipe! But I used too much sugar — whoops! Still tasted great tho!

  68. User avatar Corey Hartmann says:

    3 stars
Good recipe, but I used applesauce instead of oil. Still turned out okay. Just a little dense.

    1. 4 stars
Using applesauce instead of oil is a neat idea! I might try that next time, thanks for sharing your experience.

  69. 3 stars
Not gonna lie, my batter was kinda thick—had to really spread it in the pan. Ended up okay, but I expected looser.

  70. User avatar ivey.oconner84 says:

    5 stars
Made this for a family gathering and it disappeared fast. The spice mix + pineapple keeps it super moist, and frosting is pure comfort. 10/10.

  71. User avatar hai.hansen1987 says:

    5 stars
This carrot cake is a game changer! So moist and delicious. I added some coconut flakes and it was amazing!

  72. User avatar ying.considine1953 says:

    5 stars
The crushed pineapple with the carrots is a great combo. I added a handful of raisins because why not, and it worked really well.

    1. User avatar adrian.wyman1993 says:

      3 stars
I’m not sure about raisins in carrot cake… feels like it might get too sweet or weirdly sticky? But if it worked for you, I guess I’ll try a small amount next time.

    2. User avatar christa.becker94 says:

      5 stars
Totally agree—carrots + pineapple is such a moist combo. Raisins are a good call too, love that extra chew.

  73. User avatar Felicidad Vandervort IV says:

    3 stars
Honestly I’m skeptical. Vegetable oil + eggs + that much sugar… sounds like it’ll be heavy. But it wasn’t! Still, I’d like more carrot flavor next time.

  74. User avatar ArabianNights says:

    5 stars
This carrot cake is absolutely delicious! Moist and full of flavor. Definitely a keeper!

  75. User avatar junior.hammes1959 says:

    2 stars
It’s just okay. Too sweet for my taste and I couldn’t really taste the carrots. Might tweak it next time.

  76. User avatar simon.schuster says:

    3 stars
It was good but a bit too sweet for my taste. Next time, I’ll reduce the sugar.

    1. 4 stars
I think it sounds delicious! But yeah, sweet things can be a bit much. Maybe try with half the sugar next time? Still gonna be yummy!

    2. 3 stars
Too sweet? I dunno, I love sugar in my carrot cake! But everyone has their own taste, I guess. Good suggestion to cut down on sugar tho. 🍰

  77. User avatar ronnie.haley96 says:

    4 stars
I followed it exactly and it turned out moist, but my frosting was a little grainy. I think I should’ve softened the cream cheese/butter more—still delicious though.

  78. User avatar emilie.lind74 says:

    5 stars
This turned out so moist! The cinnamon + nutmeg combo is spot on, and the pineapple really keeps it from being too dense. Frosting is dangerously good.

    1. 5 stars
Totally agree—this is the kind of carrot cake that stays moist for days. I used a little extra pineapple too and it was perfect. Frosting is definitely “dangerously good.” 😅

    2. User avatar audra.carter1991 says:

      3 stars
Moist, sure, but 4 cups powdered sugar for frosting seems like a lot… I might cut that in half next time. Also do you drain the pineapple really well or it gets too wet? My cake was a bit dense once.

  79. User avatar ShanksOnePiece says:

    5 stars
The texture was amazing—soft crumb, not greasy. I drained the pineapple well like the recipe says and that mattered a lot.

  80. User avatar Vroomfondel says:

    4 stars
Love carrot cake but I was worried about the sugar level with 4 cups powdered sugar—still, it balanced out with the cream cheese. Super sweet though, so next time I’ll reduce a bit.

  81. User avatar Mr. Prosser says:

    2 stars
I dunno, I kinda feel like this recipe is wrong, shouldnt there be raisins? 🤨

  82. 2 stars
I don’t know… 2 cups sugar seems like a lot. Mine tasted sugary and I felt like the spices got drowned out.

  83. User avatar stuart.waters says:

    3 stars
Easy to make but I used canned frosting instead of cream cheese and it turned out weird. Lesson learned.

  84. User avatar rich.landlord says:

    4 stars
I thought it would be drier, but it stayed moist. Only thing: my oven runs hot, so I’d check at 40 minutes if you’re unsure.

  85. 5 stars
Not gonna lie, I was skeptical about carrot cake with walnuts and pineapple together. Turns out it works—sweet, nutty, and moist. Weirdly addictive.

    1. User avatar Dr. Dewayne Schulist says:

      5 stars
I had the same side-eye at first 😂 but carrot + pineapple really does add that juicy sweetness. Glad it worked for you!

    2. User avatar williams.cruickshank says:

      4 stars
Walnuts in carrot cake always sounded right to me, but pineapple? Hmm. Still, if you say moist and addictive… I might try it.

  86. User avatar roni.lesch says:

    5 stars
Carrot cake is my favorite and this one didn’t disappoint. I used pecans instead of walnuts because that’s what I had. Still great.

  87. User avatar elmo.marquardt21 says:

    4 stars
The nutmeg/cinnamon combo is solid. I used pre-shredded carrots once and it wasn’t as “carrot-y” but still tasted great. Would recommend grating fresh.

    1. 5 stars
Yes! I’m always team fresh-grated too. The pre-shredded stuff dries out the batter a bit for me, and the flavor is muted. Glad yours still came out great 😄

  88. User avatar toby.pacocha22 says:

    4 stars
Really good but I would say 45-50 minutes is too short for my pan. I needed closer to 58. Just keep an eye on the toothpick.

    1. User avatar Jarvan IV says:

      5 stars
Totally agree—my 9×13 runs hot too. I was looking at 45 min and it was still a bit wet, ended up around 55–58. Toothpick is the way to go.

    2. 4 stars
Good call. Mine took 50 exactly but I checked early at 45 and it wasn’t ready yet. I’ll start checking closer to 52 next time.

  89. 4 stars
I used pre-grated carrots and it was fine, but I feel like fresh-grated might be better. Also, walnuts add a nice crunch.

    1. User avatar nestor.luettgen39 says:

      5 stars
I’ve done both—fresh-grated carrots definitely make it a bit more flavorful/juicy. Pre-grated still works though, so you’re good.

  90. User avatar billi.fritsch2013 says:

    3 stars
Not sure about 2 cups sugar—mine felt a bit too sweet for my taste. Next time I’ll cut it down a quarter cup.

    1. User avatar lacy.blanda1979 says:

      4 stars
I baked this and also found it cloying. I did 1 3/4 cups sugar and it was way better. Thanks for sharing your tweak!

    2. 5 stars
I totally get it—this carrot cake is pretty sweet with 2 cups sugar plus the powdered sugar frosting. Cutting the sugar sounds spot on.

  91. User avatar Pei Brekke V says:

    5 stars
This is my go-to now. I like that the ingredients are straightforward and it doesn’t taste like “healthy” cake at all (in a good way).
