Buttermilk and Fennel Seed Focaccia

August 12, 2024

Buttermilk and fennel seed focaccia is a flavorful, aromatic variation of the beloved Italian flatbread that brings together the tang of cultured dairy with the sweet, anise-like warmth of fennel. Soft, chewy, and beautifully golden on top, this focaccia is just as good on its own as it is paired with soups, cheeses, or hearty spreads.

Focaccia is known for its pillowy texture, olive oil richness, and crisp crust. In this version, buttermilk steps in as the liquid component, replacing some or all of the water or milk typically used. This gives the bread a subtle tang and extra tenderness. It also helps the dough rise beautifully and bake into a light, airy interior with a golden, crusty edge.

Fennel seeds, scattered generously over the top (and optionally mixed into the dough), add a bold layer of flavor. When baked, the seeds release their aromatic oils, infusing the bread with a savory sweetness that complements the tanginess of the buttermilk. The combination is surprisingly complex for such a simple bread—earthy, slightly sweet, and deeply comforting.

As with traditional focaccia, the top gets a generous drizzle of olive oil and a sprinkle of flaky sea salt before baking. You can press your fingers into the dough to make those signature dimples, which catch the oil and create crisp little pockets of flavor. The result is a rustic, golden slab of bread that’s beautiful to look at and even better to eat.

This focaccia makes a great addition to any bread basket and is especially good alongside roasted meats, grilled vegetables, or dipped into olive oil and balsamic vinegar. It also works well sliced horizontally for sandwiches or toasted and topped with soft cheeses.

Total Time 1 minute

Ingredients

  • 500 grams all-purpose flour
  • 10 grams salt
  • 1 packet active dry yeast 7 grams or 2 1/4 teaspoons
  • 350 ml buttermilk room temperature
  • 2 tablespoons olive oil plus extra for drizzling
  • 1 tablespoon fennel seeds
  • 1 teaspoon sugar to activate yeast
  • 150 ml warm water to activate yeast

Instructions

  • In a small bowl, combine the warm water and sugar, then sprinkle the yeast on top. Allow it to sit for about 5 minutes until frothy.
  • In a large mixing bowl, combine the flour, salt, and fennel seeds.
  • Make a well in the center of the dry ingredients and pour in the buttermilk, olive oil, and the activated yeast mixture.
  • Mix until a sticky dough forms, then turn out onto a floured surface and knead for about 10 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Preheat your oven to 220°C (428°F).
  • Turn the dough out onto a baking tray lined with parchment paper and gently stretch it to fit the tray.
  • Use your fingers to make dimples all over the surface of the dough, then drizzle with additional olive oil and sprinkle with a bit of sea salt.
  • Bake for about 25 minutes or until golden brown and cooked through.
  • Allow to cool slightly before slicing and serving.

This is focaccia? My wife said this was supposed to be a pizza dough. Confused but still tasty.

Focaccia and pizza dough are different. Focaccia is thicker and has herbs. But glad you still liked it!

IDK man, it’s bread. Tastes good whatever you call it! 😄

I tried this but my dough didn’t rise at all. I think I used cold buttermilk… not sure what I did wrong.

    1. User avatar georgiana.bode11 says:

      4 stars
It sounds like the cold buttermilk could definitely be the issue! Make sure to let your buttermilk come to room temp next time. Don’t lose hope, it happens to the best of us!

    2. 3 stars
Idk, maybe you just need more patience? Dough can be tricky sometimes. My mom always used warm milk and it worked better. 🤷‍♂️

  3. User avatar theron.toy says:

    4 stars
Yum! But do you really need fennel seeds? I didn’t have any and it still turned out okay.

  4. User avatar nicky.kuhlman says:

I tried this recipe, but my dough didn’t rise at all. What did I do wrong? I followed it exactly! Ugh.

    1. 5 stars
I feel your pain! Sometimes yeast can be tricky. Did you make sure the water wasn’t too hot or too cold? That’s super important for activation! Don’t give up, though; it’s a great recipe!

    2. User avatar kimberlee.towne1972 says:

      3 stars
Maybe you missed a step? Sometimes I add too much flour and that messes everything up. Try measuring carefully next time!

Made this today—wow. The fennel gives this focaccia such a warm, savory aroma. Mine was golden at 23 minutes and the dimples actually stayed nice. Will definitely bake again.

    1. User avatar roy.vandervort28 says:

      5 stars
Ahh love hearing this! Fennel is such a warm, cozy aroma in focaccia—glad yours baked up golden and the dimples held onto the vibe 😄

    2. User avatar ervin.schmidt64 says:

      4 stars
Nice! I’m always chasing that “perfect dimpling” too—my first couple tries deflated, so this makes me hopeful. How crunchy was the crust after cooling?

  6. User avatar liberal.hero says:

Gotta be jocking? Fennel seeds? Who puts that in bread? Mine tasted ok but not what I expected. Kinda weird.

    1. User avatar azalee.erdman82 says:

      4 stars
I can’t believe you didn’t like the fennel seeds! They’re what give it that unique flavor. Just try again, maybe add some herbs or garlic next time! 😊

  7. User avatar alyssa.bogisich7 says:

    3 stars
The yeast step felt a bit off—150 ml warm water is maybe too much or too warm? Mine didn’t get super frothy and I panicked. Ended up adding a bit more yeast and it came together anyway.

  8. 4 stars
Awesome recipe! Instead of buttermilk I used regular milk and it still turned out great. Thanks!

    1. User avatar smartestRedditor says:

      4 stars
Glad to hear it worked with regular milk! I’ve always thought buttermilk was necessary for all recipes. I guess we can get creative sometimes.

  9. User avatar harley.huel67 says:

Simple recipe and the taste is good. However, I don’t see what the fuss about fennel is. Not for everyone I guess.

    1. User avatar omer.herzog65 says:

      4 stars
I completely agree! Fennel can be pretty polarizing. But this focaccia turned out amazing for me! Maybe try tweaking the spices next time? 🤷‍♂️

  10. User avatar anabel.collier99 says:

Not bad, but 500g flour and only 350ml buttermilk?? My dough was tighter than expected… maybe my buttermilk wasn’t actually room temp? Still ate it though lol.

  11. User avatar sherwood.morissette30 says:

I was a bit skeptical about using buttermilk and fennel but wow, this turned out really good! Just don’t overknead it like I did the first time.

Just 5 ingredients, but it tastes fancy! I added garlic and rosemary on top. So good!

    1. 5 stars
Sounds delicious! Adding garlic and rosemary is a great idea. I will definitely try that next time!

    2. User avatar harmony.larkin58 says:

      3 stars
5 ingredients? Really? I thought fancy need more work! But okay, if you say it’s good, I guess I’ll give it a shot.

  14. User avatar ruben.upton says:

    4 stars
I’m not usually a “focaccia person,” but this was surprisingly forgiving. I used whole wheat flour for half (oops?) and it still worked. Great flavor, especially with the dimples and olive oil.

  15. User avatar romeo.kris42 says:

220°C seems high? I baked at that and the crust formed fast, but the middle was a little underdone. I’d suggest tenting with foil for the last 5 minutes.

    1. 5 stars
Yeah 220°C is pretty hot, but for focaccia I think it helps the crust color quickly. Your foil-tent idea for the last few minutes is spot on—mine usually needs it if the oven runs hot.

    2. User avatar Oolon Colluphid says:

      2 stars
I’m skeptical… 220°C for only 25 minutes sounds like it’ll always come out underdone in the middle. I’d bake more like 35–40 and rotate the tray. Also, I always add the buttermilk straight in—no need for all the extra steps.

  16. 3 stars
Mine stuck to the tray a bit even with parchment. Not sure if it was the olive oil amount or my parchment brand. Next time I’ll lightly oil the parchment too.

  17. User avatar aiko.okeefe says:

    1 star
Nope. 10 minutes knead? and 500g flour but only 350ml buttermilk—seems too dry. Mine was a gummy mess. Might try again with different hydration.

  18. 5 stars
This focaccia is amazing! So fluffy and flavorful, I can’t stop eating it!

  19. 2 stars
Fennel seeds sound fancy but I couldn’t taste them much in the final bread. Maybe I’m using old seeds? The buttermilk tang was nice at least.

  20. User avatar holly.barrows69 says:

    4 stars
Pretty good overall, but my dough was super sticky even after 10 minutes kneading. I ended up adding a little flour and it worked. Next time I’ll measure flour by weight more carefully.

    1. User avatar gregory.keebler2015 says:

      5 stars
Thanks for sharing! I’ve had sticky focaccia dough before too—usually it means the flour absorbs differently. Adding a bit of flour makes sense. I’ll try weighing next time.

  21. User avatar carri.balistreri says:

    3 stars
I followed it exactly but my fennel seeds tasted a bit strong… could be my brand. Still edible, just more “licorice-ish” than expected.

  22. User avatar Arthur Philip Deodat says:

    2 stars
Fennel seeds are like weeds right? Why use them? I just want bread, not a garden.

    1. 5 stars
Fennel seeds give a nice flavor to the bread tho! It ain’t just weeds, it’s like culinary magic! 🪄

  23. 2 stars
I tried this recipe, but my dough didn’t rise. I think the yeast was old. Not sure if I’ll try again.

  24. User avatar wanita.denesik22 says:

Focaccia is my weakness 😅 The dimples + olive oil combo is just chef’s kiss. Would recommend to anyone who likes savory bakes.

  25. User avatar augustus.ferry says:

Buttermilk and fennel? Really? Sounds kinda weird to me. 🤔

  26. User avatar roscoe.koepp says:

    3 stars
Not bad, but mine turned out kinda dense. I think I over-kneaded or my yeast didn’t foam enough even after 5 minutes. Still ate it though—could use more olive oil on top.

  27. User avatar gregg.cormier68 says:

    5 stars
This focaccia turned out amazing! The buttermilk gives it such a unique flavor. Definitely a keeper!

  28. 5 stars
This focaccia is AMAZING! So fluffy and the fennel seeds give it a nice twist. I will definitely make it again.

    1. 2 stars
I don’t know about the fennel seeds… Are they really necessary? Seems a bit odd to me.

    2. User avatar Gabriella says:

      5 stars
I tried this recipe and it turned out so good! I can’t believe how fluffy it was. Thanks for sharing!

  29. User avatar terrie.wolf97 says:

    3 stars
Not gonna lie, 220°C feels hot—mine got golden but I’m not sure it was fully cooked in the middle. Next time I’ll tent with foil maybe.

  30. User avatar teodoro.greenfelder says:

    4 stars
I forgot to add sugar when activating the yeast and it still turned out fine. Pretty forgiving recipe!

  31. User avatar leonel.senger says:

    3 stars
I’m skeptical about 150 ml warm water *plus* 350 ml buttermilk—seems like a lot of liquid. Mine turned out more like thick batter than dough, had to add extra flour. Still good though.

  32. 3 stars
Easy to follow instructions, but my dough didn’t rise much. Maybe my yeast was old?

    1. User avatar yellowjacket says:

      4 stars
Yeah, old yeast can really mess things up. Did you let the yeast get frothy before mixing? It’s super important for rising!

  33. User avatar lashawn.cassin30 says:

    3 stars
Too much work for bread. Why not just buy it from the store? Lol. But it smelled good.

    1. 4 stars
I get what you mean. But making it yourself can be fun! Plus, the smell is amazing during baking!😊

  34. User avatar verdie.gerlach88 says:

    1 star
This is too complicated for a simple bread. Just use pre-made dough, folks.

    1. 4 stars
I get what you mean, but making bread from scratch can be really rewarding! Give it a try once, it’s fun!

    2. User avatar jordon.kertzmann28 says:

      2 stars
Nah, I stick with store-bought. Why spend all that time when you can bake a frozen pizza in 10 min?

  35. User avatar arnoldo.reinger90 says:

    2 stars
No offense, but my focaccia recipe is way better than this one.. just saying. But some people might like it, I guess.

    1. User avatar ruthann.kutch78 says:

      4 stars
Your focaccia might be better, but this one has a nice buttermilk twist! Worth a try!

  36. 5 stars
Made this last night—wow. The fennel seeds are subtle but really elevate it. My dough was a bit sticky so I just flour-sprinkled lightly and kneaded a little longer. Came out golden and super soft.

  37. User avatar Arwen Evenstar says:

    2 stars
This was a flop! I think my yeast was dead. Shouldn’t the water be boiling? Maybe I messed up.

  38. 5 stars
Perfect with some garlic butter! Even my kids loved it. Will make again!

  39. User avatar elliott.shields47 says:

    3 stars
I didn’t get the ‘dimples’ part right. Mine looked more like a pancake… Any tips?

  40. 3 stars
I’m skeptical about the fennel seeds—like, I love them in theory, but they can taste like black licorice to me. Surprisingly, it worked here though. Next time I’ll use a tiny bit less fennel.

    1. User avatar tracy.becker76 says:

      5 stars
Same! Fennel can go from cozy to straight-up black licorice real fast. Glad it worked for you—I’ll probably start with half a tablespoon next time.

  41. User avatar louise.orn73 says:

    4 stars
Easy and tasty! I used yogurt instead of buttermilk and it was still great!

  42. User avatar NAFO.SUPREMACY says:

    4 stars
Took me two tries to get it right! My dough was too sticky the first time. But now it’s perfect!

    1. User avatar marcela.russel13 says:

      5 stars
Glad to hear you got it right! Focaccia can be tricky. I love the flavor of fennel seeds in it!

    2. User avatar rich.landlord says:

      3 stars
Two tries? Seems kinda like a lot. Dough ain’t that hard if you follow instructions. But, good job, I guess.

  43. 4 stars
I might be wrong but I think “150 ml warm water” is too much? I did 100 ml instead and my yeast still foamed. Maybe adjust based on yeast behavior.

    1. User avatar amelia.stark55 says:

      4 stars
150 ml warm water feels kinda arbitrary to me too. Mine always foams around the same time with less liquid. Maybe the author just wanted extra pour for activation?

    2. User avatar sylvie.von95 says:

      5 stars
I get what you mean—yeast is pretty sensitive to temperature and hydration. If 100 ml works and foams fine, you can probably dial it back a bit. I’d still make sure the water is comfortably warm (not hot) so the yeast behaves.

  44. User avatar Max Quordlepleen says:

    3 stars
Too salty for my taste! I added less salt but it still came out salty. Maybe I did something wrong?

  45. User avatar jared.marquardt says:

    3 stars
220°C seems high for 25 minutes—mine got dark on the bottom before the center was fully done. Next time I’ll drop the temp a little and bake longer.

  46. User avatar shaina.lindgren43 says:

    5 stars
So fluffy! I can’t believe I made this at home! Thanks for the easy recipe!

    1. User avatar kirstin.donnelly says:

      5 stars
That’s awesome! Focaccia is the best! Did you add any toppings?

    2. 3 stars
Fluffy, huh? Mine turned out like bricks. What did you do differently?

  47. 5 stars
Delicious! 💙 Just made it, and the house smells divine!

  48. 5 stars
Yum! This focaccia is the best thing since sliced bread! So fluffy and flavored right.

  49. User avatar Rima Schinner says:

    3 stars
Meh, thought it would be better. The fennel seeds are strong. I don’t even like that taste.

  50. User avatar agnus.roob1973 says:

    5 stars
I can’t wait to try this! It looks so soft and delicious. Thanks for sharing!

  51. 2 stars
Couldn’t get the dough to rise much. I’m not sure if my yeast was old or my “warm place” wasn’t warm enough. The bread tasted okay, just kinda dense.

    1. User avatar fermin.wyman64 says:

      4 stars
Sorry that happened! If it didn’t get frothy in step 1, the yeast was likely the issue (old yeast or water wasn’t warm enough). Also, 1 hour can be short if your room is cool—letting it rise closer to 1.5 hours helps.

    2. User avatar willian.bogan72 says:

      4 stars
Dense focaccia usually means under-proofing. Did you actually see it double in size? My warm place is just the oven with the light on—maybe try that next time. Also, you need the water to be *warm*, not hot.

  52. 4 stars
The dough felt really sticky after mixing, but kneading for the full 10 minutes helped. Rise was a bit slower in my kitchen (not warm), but it still doubled. Great flavor!

  53. User avatar gilberte.wolf1956 says:

    4 stars
Not gonna lie, 500g flour + 350ml buttermilk felt like a lot of liquid to me. I added a tiny bit more flour while kneading (maybe 1-2 tbsp). Still tasty!

    1. User avatar mark.davis2001 says:

      5 stars
I totally get that—buttermilk can make the dough feel way wetter than you expect. I usually start mixing and see how it behaves; a tablespoon or two more flour later is totally normal. Glad you still got great flavor!

    2. User avatar Flor Volkman says:

      4 stars
Yeah 500g flour to 350ml buttermilk is pretty high hydration-ish for focaccia, but kneading should bring it together. If your buttermilk was extra thin or you measured loosely, it’ll feel even wetter. Your adjustment sounds spot on.

  54. 3 stars
What’s buttermilk? Can I just use regular milk? Asking for a friend.

  55. User avatar Garlic Jr says:

    2 stars
I followed the recipe but my dough didn’t rise at all. What did I do wrong?

    1. User avatar Blue Dartwing says:

      3 stars
Maybe ur flour was bad? Or too cold water? It gotta be warm! That can mess it up I think.

    2. User avatar suspiciousCommentator says:

      4 stars
Sounds like the yeast might not have activated properly. Did you let it froth before adding it to the mix? Sometimes it needs a few more minutes.

  56. 2 stars
Focaccias are hard to make! I used too much water and it was sticky. 😩

  57. 4 stars
Yum! I love how simple this recipe is. Perfect for a cozy dinner!

    1. User avatar Fenchurch says:

      2 stars
Really? This looks kinda boring. Focaccia needs more flavor, dontcha think? Maybe add some garlic next time?

    2. User avatar talisha.baumbach says:

      5 stars
I agree! Simple recipes are the best, especially when they taste this good. Can’t wait to try it!

  58. User avatar ardelle.gottlieb says:

    3 stars
The flavor is great, but my focaccia didn’t really rise to “doubled” after 1 hour. I think my yeast was old. Anyone else—check your yeast freshness!

    1. User avatar Jarvis Lind says:

      4 stars
Totally agree—my “doubled” happened more like 30% 😩 Yeast was definitely questionable. Flavor still slapped though!

    2. User avatar Hillman Hunter says:

      3 stars
Mine didn’t double at 1 hour either, but it still came out airy. I think it was the room temp—my kitchen was kinda cool.

  59. 1 star
Mine came out gummy in the middle even after 25 min. Maybe my oven runs cold? But the outside looked perfect so I was sad 😅

    1. User avatar margaretta.rohan1985 says:

      4 stars
Aw that’s the worst 😅 If the outside looked perfect but it was gummy in the middle, your dough likely needed more time to fully set. I’d try baking 5–10 min longer (or until the center reads ~190°F/88°C if you have a thermometer).

  60. User avatar alisia.metz20 says:

    4 stars
I used fennel seed and it tasted kind of licorice-y (in a good way?)—my family was split. Next time I’ll probably reduce to 3/4 tbsp because overpowering for some folks.

  61. 3 stars
I don’t trust recipes with buttermilk. Just use milk! How can it be the same? 🤨

  62. User avatar glenn.marks1964 says:

    3 stars
Good but a little too dense for me. I think I might have kneaded it too much. Still edible!

    1. User avatar bennie.damore says:

      4 stars
Maybe try not kneading it as much next time? It for sure can get dense. Glad it was still tasty!

  63. User avatar wellRespected says:

    4 stars
Not gonna lie, 220°C for 25 minutes might be too hot for my oven—top browned fast and the center needed a few more minutes. Otherwise, great flavor!

  64. User avatar mathWizard says:

    2 stars
Can I use milk instead of buttermilk? Also, fennel seeds always taste like toothpaste to me (idk why) 😅

  65. User avatar rachel.wiegand says:

    3 stars
I had trouble with the dough not rising. Did I miss something? I’ve baked bread before, but this was odd.

  66. User avatar aaron.wunsch says:

    3 stars
The instructions are solid, but 220°C felt a little too hot. Mine browned fast on the top. Next time I’ll tent with foil for the last 10 minutes.

  67. User avatar Nidalee says:

    5 stars
    Easy. Tastes great. 10/10

    1. User avatar graham.jast35 says:

      5 stars
Totally agree—this is such an easy win. Fennel seeds make it taste really special.

  68. User avatar hippopotamus says:

I think this is too much work. Baking is hard. Who has time?

    1. User avatar magdalen.raynor2020 says:

      4 stars
Yeah, baking can be a lot of work, but the smell of fresh focaccia is so worth it! Maybe you could try it on a weekend when you have more time?

  69. User avatar jim.hirthe38 says:

    1 star
220°C is way too hot, it burnt my bottom in like 15 minutes. Also fennel seeds are too much for my taste. Sorry, not for me.

    1. User avatar vern.shanahan says:

      4 stars
Yeah 220°C seems aggressive. I usually do 200°C and mine comes out way better—golden but not scorched. Also fennel can be overpowering; maybe cut it to 1/2 tbsp next time.

    2. User avatar Eccentrica Gallumbits says:

      2 stars
Oof, that sounds frustrating. I bake mine closer to 200°C fan / 220°C conventional sometimes, but 220°C can definitely brown the bottom fast depending on your oven tray and rack position. I wonder if you’re using the bottom rack? Try moving to the middle and maybe preheating with the tray, but bake on a lighter tray next time.

  70. User avatar jimmy.dubuque says:

Made this yesterday—fennel seeds are such a nice touch. The dough was super sticky at first but kneading it for 10 mins got it smooth. Mine browned beautifully at 25 minutes.

This focaccia is amazing! The flavor is just right, and the texture is perfect. I can’t believe how easy it was to make. I’ll definitely be making this again!

I think 220°C is a bit aggressive for my oven—edges browned faster than the center. I added a foil tent halfway through. Still tasty though!

    1. User avatar Charles Feil says:

      5 stars
220°C does run hot for some ovens—I usually start at 200°C and give it a few extra minutes. Your foil tent tip is spot on!

Why buttermilk? Can’t I just use regular milk? Seems unnecessary to me. But I’ll try it anyway.

  76. User avatar evan.bartell42 says:

Not gonna lie, I might’ve messed up step 1. The yeast got frothy but then the dough didn’t rise much after an hour. Could be my kitchen was too cold. Flavor is decent.

Too much work for bread! I like mine store-bought and easy. 🙄

    1. 4 stars
I totally get you! Sometimes it’s just easier to grab a loaf from the store. But making it homemade does taste better! 😊

Too long! Who has time for that? Just buy it and be done! 🙄

Why buttermilk? Can I use regular milk? Seems unnecessary to buy special ingredients.

    1. User avatar Sabrina Goodwin says:

      5 stars
Buttermilk adds a tangy flavor and makes the focaccia super soft. Regular milk won’t give the same result!

  79. 4 stars
Pretty straightforward recipe. My dough was *very* sticky, so I leaned into the flour a bit during kneading (not too much) and it worked.

  80. User avatar granville.lebsack61 says:

I accidentally used regular milk instead of buttermilk because I misread (oops). It was flat and didn’t really taste like anything. Learn from me: buttermilk matters, y’all.

    1. User avatar chelsie.renner says:

      5 stars
Oof, buttermilk really does make a difference! Flat + bland makes total sense—glad you shared the lesson. Next time you can add a quick “buttermilk” hack if you’re stuck.

  81. User avatar Falmer Shadowmaster says:

This turned out so soft and flavorful. The fennel seeds give it this subtle “fancy bread” vibe without being overpowering. I also liked the dimples—crispy bits were the best part.

  82. User avatar gertha.zboncak50 says:

Pretty good overall. My dough was still pretty sticky after kneading, but it smoothed out after another minute or two. Would bake just 2-3 minutes longer next time.

This bread is amazing! The fennel gives it such a unique flavor. Will definitely make again!

It was okay, I guess. My kids didn’t like the fennel taste 🤔. Maybe add garlic next time?

    1. User avatar bulah.brakus says:

      5 stars
I totally get what you mean! Fennel can be strong. Garlic would definitely give it a nice twist! 👍

  85. 3 stars
The fennel seeds are a great idea, but 1 tbsp felt like too much for me. Next time I’ll do half. Also, I accidentally forgot the dimples at first… it still baked, just less fancy lol.

  86. User avatar Bowerick Wowbagger says:

Yeast mixture didn’t get frothy after 5 minutes. I waited another 10 and it was still meh, so I used a newer packet. Lesson learned: my water was probably too hot/cold.

  87. User avatar leslie.hoeger says:

OMG this smells good! Just made it and can’t wait to eat! Yummy 😋

Best focaccia ever! The fennel flavor is on point. Will definitely make again!

I followed it pretty closely, but my rise took way longer than an hour. Ended up baking anyway and it was still tasty, just denser. Might be my kitchen.

  91. 4 stars
Not bad! I followed it pretty closely, but my dough was a little wetter than expected, so I added a touch more flour while kneading. Still rose well and tasted great with soup.

  92. User avatar deane.fritsch2 says:

    4 stars
I followed it pretty closely, but my rise took way longer than an hour (like 2 hours). Still delicious though—nice flavor and good crumb. I’ll probably check yeast temp next time.

  93. 2 stars
I don’t even know what fennel is. Can I just use nothing? It sounds fancy but I’m confused.

    1. 4 stars
Fennel is just a spice, but it adds a nice flavor! You can leave it out, but the bread might taste a bit plain. Give it a try if you can find it!

    2. User avatar Luciano Parker says:

      3 stars
Honestly, who needs fancy things? Just use the recipe without fennel; it should still work fine. Keep it simple!

  94. User avatar Falmer Shaman says:

I was skeptical about 220°C for 25 min but it worked. Crust is crunchy, crumb is soft. Next time I’ll add a little more sea salt on top like you would with restaurant focaccia.

  95. User avatar Slaughterfish says:

    5 stars
Focaccia! Yum! I added some herbs too and it turned out great. Thx for the recipe!

  96. 5 stars
Made this today and wow—fennel really shines. My dough was super sticky at first but kneading got it smooth after a while. Beautiful golden crust.

    1. User avatar rick.bergnaum says:

      4 stars
Mine was also super sticky at first, so I’m relieved it wasn’t just me 😅. Did you add more flour or just keep kneading? I’m planning to try it again.

    2. User avatar Liberty Abbott II says:

      5 stars
Totally agree—fennel seeds make it taste way more “fancy” than basic focaccia. The golden crust thing is real too. Nice job sticking with the knead until it came together!

  97. User avatar tissues_with_issues says:

I was skeptical about fennel in focaccia but wow. The buttermilk makes it tangy and tender. Will bake again for sure.

  98. 3 stars
For a focaccia, mine turned out more like bread rolls because I didn’t stretch enough to the tray. Flavor was still great, just not that airy focaccia vibe.

    1. User avatar franklyn.gislason64 says:

      4 stars
That’s actually super common with focaccia—those dimples and that gentle stretching are what keep it airy instead of roll-y. Next time, try stretching more boldly to the edges before the rise (and don’t over-knead for too long).

  99. User avatar nicholas.mertz5 says:

    4 stars
Really good texture! The dimples and olive oil trick actually works—surface stayed crispy while the inside stayed tender. I used flaky sea salt on top and it was perfect.

    1. User avatar rickiestmorty says:

      5 stars
Yes!! I love when the dimples + olive oil thing actually does what it promises. Flaky salt on top is the move.

  100. User avatar oscar.satterfield68 says:

The yeast activation step is key. I almost skipped letting it get frothy and glad I didn’t—mine definitely wouldn’t have risen otherwise.

  101. User avatar agnus.mante1959 says:

    2 stars
Meh. Couldn’t really taste the fennel, and mine was kind of dense. Maybe I over-kneaded or didn’t let it rise enough. Still edible though.

  102. 4 stars
Nice flavor, but mine didn’t brown as much at 25 minutes—maybe my oven runs cool. I’d probably add 5 minutes next time.

  103. 4 stars
Honestly, I was skeptical about the fennel seeds at first, but they add such a nice twist. Who knew? Will make again!

  104. User avatar basementDweller says:

    3 stars
I followed the steps exactly and the rise seemed slow. After 1 hour it was only like 70% up. Still baked up tasty though, just less fluffy than I wanted.

    1. 4 stars
Hmm 70% after an hour doesn’t sound totally crazy, especially if your “warm place” wasn’t actually warm enough. Next time try proofing in a turned-off oven with the light on (or ~27–30°C) and give it more time—focaccia is pretty forgiving.

    2. User avatar Humma Kavula says:

      4 stars
I’ve had this happen when my buttermilk was less “room temp” than I thought. Also the dough can look like it’s not rising yet but then it does a quick jump during baking. Did you check expiration on the yeast?

  105. User avatar branda.mann says:

    5 stars
Super easy instructions, even for beginners. I like that it uses buttermilk; it makes everything tangy. Great with soup and salads.

  106. User avatar cher.lehner says:

    5 stars
This focaccia is AMAZING! So fluffy and flavorful! Definitely my new favorite bread to make.

  107. 5 stars
Followed it pretty closely and the dough was indeed sticky at first, but kneading got it smooth. Rise time was spot on in a warm kitchen. Would make again for sure.

  108. User avatar King Vegeta says:

    5 stars
Simple and delicious! I’m always impressed by how good homemade bread can be. Just wait till you try it warm out of the oven!

    1. User avatar rickiestmorty says:

Bread? I tried making bread once. Ended up with a dough brick! How do you avoid that?

    2. User avatar jarod.jacobs says:

      5 stars
Totally agree! There’s nothing like that fresh bread smell in the house. Makes it worth every step!

  109. User avatar olinda.kuhn1987 says:

Mine rose great, but when I stretched it, it kept springing back. I think I should’ve let it rest 10 minutes before shaping.

    1. User avatar joaquin.considine1988 says:

      5 stars
I’ve had the same thing! I rushed the stretching once and it kept snapping back. Now I let it sit 10 minutes covered and it stretches easier without fighting me. Your note is spot on.

    2. 5 stars
That sounds very plausible—focaccia dough usually needs a little rest after rising and before shaping so the gluten relaxes. If it springs back when you stretch, a 10-ish minute rest (covered) usually helps a ton.

  110. User avatar nella.bartoletti5 says:

    5 stars
This came out super aromatic—fennel seeds are such a nice touch. The dimples + olive oil drizzle make it look bakery-level. Mine was slightly more brown at 25 minutes, but still perfect.
