Baked Stuffed Tomatoes with Rice and Herbs

Baked stuffed tomatoes with rice and herbs are a beautiful celebration of Mediterranean simplicity. This dish manages to be both humble and impressive – the kind of thing you’d find on a sun-drenched Greek island or at an Italian family table. It’s all about the ingredients: ripe summer tomatoes, fresh herbs, and perfectly seasoned rice, baked until tender and aromatic.

The appeal starts with the presentation. Plump tomatoes, hollowed out and filled with a savory rice mixture, are arranged snugly in a baking dish, their tops placed like little hats. As they roast, the tomatoes soften and sweeten, the juices mingle with the filling, and the herbs release their fragrance, creating a dish that’s more than the sum of its parts.

The rice stuffing is the real heart of this recipe. Usually cooked partially before filling the tomatoes, it’s mixed with parsley, basil, mint, garlic, and often a little onion or scallion for depth. A touch of olive oil and maybe a few pine nuts or currants can elevate the flavor even more. The balance is key – the herbs should brighten the dish without overpowering it, and the rice should be tender but not mushy after baking.

What makes this dish shine is its versatility. It can be served hot, warm, or at room temperature. It works beautifully as a side dish, but it’s just as satisfying as a vegetarian main course, especially with a wedge of feta or a dollop of Greek yogurt on the side. In some traditions, you might find potatoes nestled between the tomatoes, soaking up all the goodness and adding another layer of comfort.

Baked stuffed tomatoes are also ideal for making ahead. They reheat well and somehow taste even better the next day, after the flavors have had time to meld. It’s one of those dishes that feels timeless, rooted in tradition, yet endlessly adaptable. Light but hearty, elegant yet rustic, this dish is a quiet showstopper that reminds you how much joy can come from simple, honest cooking.

Baked tomatoes?! Seriously who eats that? I prefer my tomatoes in a salad.

I dunno, isn’t it kinda weird to stuff a tomato? I was skeptical at first but it was kinda good.

Stuffing a tomato? Sounds weird but it’s surprisingly tasty! I tried it once and was impressed. Give it a go!

I thought tomatoes were bad for you, but these r good?! 🤷‍♂️ I need to look it up.

  4. 4 stars
Good idea, but 45 minutes felt a little long for my tomatoes—they got slightly too soft. Next time I’ll start checking at 35. Flavor is still solid though.

I don’t know… stuffed tomatoes with rice seems like a weird combo to me. But I made it anyway and honestly it was better than I thought. Still, wouldn’t make it weekly.

Do you have to use fresh herbs? I thought dried would be fine. Lemme know!

Just made these and they turned out flat! I think I scooped too much out. Whoops!

You did it wrong, probably. Make sure to measure right. My grandma always said, ‘No eyeballing!’

Flat tomatoes happen! Don’t worry, they still taste great. Just try not to pack them too tight next time! 😊

I dunno. They looked nice in the pic, but mine turned out mushy. Maybe I overcooked them?

Did anyone else find it bland? I added hot sauce but still didn’t help much.

1 star. This didn’t work for me. The cheese burned while the tomatoes were still hard. Not doing this again.

Never thought tomatoes could be so good! 10/10 would recommend to a friend.

I did exactly the steps and somehow my tomatoes stayed firm after 45 minutes 😭. Maybe oven temp runs low. I might cover with foil next time so they steam a bit.

  14. 4 stars
This recipe is so easy! Perfect for a quick meal. I added some ground beef for extra protein.

These came out so cozy and flavorful. The herb mix is legit—my kitchen smelled amazing while baking. I used a bit more mozzarella and they were gone fast.

    1. 3 stars
I made these and followed it pretty much, but mine came out kinda watery. I think I scooped too much pulp? Also I didn’t have fresh thyme so I used dried—maybe that’s why. Still tasted good though.

Totally agree—these are super cozy. I’m always skeptical about “stuffed tomato” recipes but the herb combo really shines. Next time I might try a little extra mozzarella like you did 😄

Weirdly good! The stuffing tastes almost like stuffed peppers, but lighter. I’ll try adding garlic next time.

Baked tomatoes? That’s a little weird. I prefer them raw in salads. Not for me.

    1. 4 stars
Raw tomatoes are great for salads! But baked tomatoes can be surprisingly good, especially stuffed. Just try it!

    2. 3 stars
I get that! Baked tomatoes ain’t for everyone. But they’re pretty tasty with the right seasoning! Maybe give em a chance? 🥴

Wasn’t a fan of the herbs, too much greenery for me. I just like plain rice. lol.

  20. 5 stars
These turned out so flavorful—using all those fresh herbs really makes a difference. I added a pinch of garlic salt and it smelled amazing while baking. Will definitely make again!

I like the idea, but 1 cup cooked rice felt like a lot for only 6 tomatoes—ended up with extra filling. Maybe my tomatoes were smaller? The flavor was great regardless.

    1. User avatar annalisa.schoen says:

Ooh good catch. I’ve noticed tomato size matters a ton—if they’re smaller, 1 cup cooked rice can definitely overfill. Next time I’ll scale the rice down or scoop out more pulp to balance it.

    2. User avatar horacio.gibson22 says:

Idk, i followed it and mine was fine, i think 6 tomatoes just dont all hold the same. Also did u cook the rice fully? like not al dente? 1 cup is a lot tho 😅

Very tasty! I added some ground beef to the mix for extra protein. Yummy! 💪

It’s great to hear your husband enjoyed it! You could swap the tomatoes for bell peppers if you’re not a fan. They’re healthy too!

  27. 3 stars
I like the idea, but mine were a bit dry. Next time I’ll add some of the reserved pulp juices or a spoon of olive oil to the filling.

  28. User avatar jeremy.hayes1982 says:

I forgot to buy fresh herbs. Used dried instead. It was ok, but I think fresh would be better.

Honestly I expected mushy tomatoes, but they held up. Still, I’d cut the tomato tops deeper for more room in the shells.

So delicious! Even my picky kids ate it! Thank you for this recipe.
