Baked Greek-Style Salmon with Lemon and Dill

February 26, 2024

If you’re looking for a healthy, elegant, and easy dinner, this baked Greek-style salmon with lemon and dill checks all the boxes. It’s a recipe that’s simple enough for a weeknight meal but impressive enough to serve to guests. The fresh Mediterranean flavors shine through, making every bite vibrant and satisfying.

The secret to this dish is its simplicity. Start with high-quality salmon fillets, wild-caught if possible, and season them with just a few ingredients that do all the heavy lifting. A generous squeeze of fresh lemon juice, a drizzle of olive oil, and a sprinkle of sea salt create the perfect base. Add in plenty of fresh dill for a bright, herby flavor that complements the richness of the fish.

What makes this dish distinctly Greek is its clean flavor profile. You won’t find heavy sauces here, just real ingredients that let the salmon speak for itself. Optional extras like sliced garlic, thin rounds of lemon layered on top, or a dusting of oregano bring even more depth and authenticity.

Baking the salmon in the oven is quick and foolproof. At 375°F (190°C), it takes about 12 to 15 minutes, depending on the thickness of your fillets. The salmon should flake easily with a fork and have a tender, moist interior. Be careful not to overbake, salmon continues to cook slightly once it’s out of the oven.

This dish pairs wonderfully with roasted vegetables, a fresh cucumber and tomato salad, or a side of orzo with lemon and parsley. For a traditional touch, serve it with a dollop of tzatziki or a wedge of lemon.

Greek-style salmon is a refreshing way to enjoy seafood, healthy, beautiful, and full of flavor. It’s the kind of meal that feels special without requiring a lot of time or effort. With just a few ingredients and one pan, you can bring the sunny flavors of the Mediterranean straight to your table.

Pretty good, but 2 cloves of garlic felt like a lot for me. Next time I’ll do 1 and add more lemon zest.

    1. User avatar michel.nader says:

      5 stars
Fair point—2 cloves can be strong, especially if the garlic is punchy. Doing 1 and leaning more on the lemon zest sounds like a great adjustment (and dill helps too).

  2. User avatar dane.prosacco17 says:

    4 stars
I didn’t have dill, so I used oregano instead. Still turned out great!

I don’t like fish… but my mom made it and she loves salmon. It smelled good!

  4. User avatar Racheal Hilpert V says:

Yum! Just yum! I could eat this every day! Best salmon recipe I’ve tried. Great job!

I’m glad you loved it! I think the dill really makes it special. 😍

Great recipe! Just what I needed for dinner, thanks!

  6. 4 stars
Easy weeknight meal. I didn’t have dried dill so I used what I had (kind of thyme-y) and it still worked. Great with rice.

  7. User avatar lovetta.waters0 says:

The instructions are simple which I like, but the ingredient list says ‘4 fillets salmon fillets’ which made me laugh. I used about 6 oz each and it worked great.

  8. User avatar dorcas.nolan89 says:

I tried this but used too much dill. It was like eating a pillow of herbs. I think a little goes a long way!

  9. User avatar Sand-Dial says:

    2 stars
Too bland for my taste. I think it needed more spices or something. Maybe I’ll add some chili next time.

  10. User avatar roman.durgan87 says:

    2 stars
Meh. Too much lemon slices overwhelmed it for me. Also, I can’t find good dill where I live so maybe that’s the issue.

  11. User avatar janessa.koss says:

    3 stars
Meh. The flavor was fine, but it didn’t wow me. I think I needed a sauce or something—like maybe yogurt? Still, it was healthy.

    1. User avatar Daphnes Nohansen Hyrule says:

      4 stars
Fair take. I made this once and thought the same thing—felt a little “just salmon + lemon” without a sauce. A quick yogurt-dill or tzatziki would probably make it pop.

    2. User avatar Super Saiyan 3 Goku says:

      4 stars
Nah I liked it. The lemon and garlic already give flavor, and dill is strong enough. Sauce is just extra work tbh. Healthy win ✅

  12. User avatar jimmy.schulist64 says:

    3 stars
I tried it but my salmon was way too dry. Maybe I did something wrong?

  13. User avatar marion.hills67 says:

    5 stars
Easy to make and taste like a restaurant dish! Will definitely make again. 😍

  14. User avatar Shaddam Corrino IV says:

    2 stars
I think 2 tbsp olive oil is too much for only 4 fillets. Mine came out a bit oily, but the flavor was still nice. Might cut oil in half.

  15. 4 stars
I think the recipe is solid, but I was confused by the ingredient line that says “1 Lemon sliced” and then “dill for garnish”—do I add more dill in the oil mix? Either way, good flavor, but I’d tweak the directions.

  16. 1 star
First time cooking fish, and it was a disaster! I burnt it. 🤦‍♂️

  17. User avatar Treebeard says:

    4 stars
Honestly I was skeptical about 15 minutes, but it turned out great. I watched it closely and it was juicy, not dry. Super solid weeknight meal.

  18. User avatar Glossu "Beast" Rabban says:

    4 stars
Good but needed more seasoning. I added some paprika for a kick!

    1. 4 stars
I think the paprika was a great idea! I usually add some lemon pepper too. Makes it pop!

    2. User avatar roosevelt.runolfsdottir says:

      2 stars
Honestly, I don’t know what you’re talking about! This recipe’s perfect as is! You don’t need to mess with it.

  19. 5 stars
Wow, restaurant-level. I served it with rice and it soaked up the garlic-dill oil like crazy. Will absolutely make again.

  20. User avatar arla.pouros13 says:

    2 stars
Not bad, but I thought there was too much dill. 🤔

    1. User avatar Napoleon Marquardt says:

      4 stars
I actually found the dill to be just right! Maybe try using less if you don’t like it so strong next time?

    2. User avatar Aurelion Sol says:

      2 stars
Too much dill? Really? Seems like you just don’t know how to appreciate good flavors!

  21. 5 stars
This was amazing! The flavors were spot on.

    1. User avatar mauricio.schaden says:

      5 stars
I totally agree! It’s like a flavor explosion in your mouth! 😋

  22. User avatar ana.gorczany55 says:

    3 stars
I tried this and it was kinda bland. I thought more spices would help. Maybe some paprika or something would make it better.

  23. 5 stars
Love how minimal ingredients this is. You can really taste the fish. Served with roasted potatoes and it was perfect.

    1. User avatar Super Saiyan Goku says:

      5 stars
Totally agree—simple recipes like this really let the salmon flavor shine. I did it with roasted potatoes too and the lemon + dill combo was spot on!

  24. User avatar alysha.little17 says:

    4 stars
Not bad! I don’t usually bake fish, but the instructions were easy. I only had fresh dill so I used that and it was better than expected.

  25. 5 stars
I followed the steps pretty much exactly (400°F, 18 minutes). Salmon flaked perfectly. Next time I’ll maybe use a tiny bit more dill.

  26. 2 stars
Why is there no mention of temperature for the salmon before baking? I feel like it’s under/over cooking depending on the fish thickness. This recipe needs more specifics.

  27. User avatar daron.heathcote says:

    3 stars
Salmon always works, but I’m not sure about the measurements. “Salt and pepper to taste” is fine, yet my seasoning was bland until I added extra dill.

  28. 5 stars
This came out so flavorful—garlic and dill are a great combo with the lemon. Mine needed the full 20 minutes, but it flaked perfectly. Will definitely make again.

  29. 1 star
Salmon? I thought we were talking bout chicken. Confusing!

  30. User avatar rickiestmorty says:

    4 stars
I didn’t have fresh dill, so I used parsley instead. Did I mess it up? Not sure, but it was still okay.

  31. User avatar mariah.hickle1965 says:

    5 stars
This was delicious! The flavors are perfect together. Will be making again!

  32. 2 stars
Baked salmon? Isn’t that just an easy way to ruin good fish? I prefer frying, much tastier!

  33. User avatar jeffrey.schuppe93 says:

    3 stars
I did not understand why you need lemon with fish? Isn’t it already fishy? But I followed the recipe anyway and it didn’t taste bad, I guess.

    1. User avatar Deep Thought says:

      5 stars
Lemon cuts through the fat of the fish and adds brightness to the flavor! Glad you tried it though!

  34. 1 star
I thought salmon was bad for you?! This recipe really confused me… can someone explain?

    1. User avatar reinaldo.flatley says:

      5 stars
Salmon is actually really healthy! It’s full of omega-3 fatty acids which are good for your heart. Maybe check some articles on it?

    2. User avatar Andres Braun says:

      4 stars
I thought the same thing too! But I read it’s good in moderation. This recipe looks tasty though, might try it!

  35. User avatar leota.rohan9 says:

    3 stars
I put too much salt. Be careful with that part. Other than that, it was ok.

  36. User avatar nelson.muller says:

    4 stars
Can confirm lemon slices work, but I think 15-20 minutes is a big range. My fillets were thick and needed closer to 25 minutes.

  37. User avatar bennett.sipes1982 says:

    3 stars
I didn’t have dill, so I used basil instead. It turned out ok, but I feel I missed something.

  38. 5 stars
This was absolutely delicious! The salmon was so flaky and the flavors were just perfect. Will definitely make again!

  39. 3 stars
Not gonna lie, the garlic tasted a little harsh before it mellowed. Still edible though, just not as “Greek” as I was hoping.

  40. 4 stars
It was okay. I added some capers because I think they go well with fish. Not bad.

  41. User avatar jacques.hagenes30 says:

    3 stars
Mine felt a little bland until I salted heavier. Next time I’ll also add some chili flakes for a kick.

  42. User avatar delta.price1952 says:

    5 stars
This recipe was absolutely delicious! The lemon really made the flavors pop.

    1. User avatar melvin.waelchi says:

      5 stars
I totally agree! The lemon really does bring it all together. Thanks for sharing!

  43. User avatar Ilene Wright says:

    5 stars
Made this tonight—so easy and the dill + lemon combo is seriously perfect. My salmon flaked right on time after ~18 minutes. Will repeat for sure.

  44. User avatar tandra.larson2023 says:

    5 stars
This was delicious! The lemon really makes the salmon pop. 😋

    1. User avatar Glossu "Beast" Rabban says:

      5 stars
I totally agree! The lemon adds such a nice zest to the salmon. It’s a game changer! 🍋👌

  45. 3 stars
I followed it exactly and it turned out bland, which surprised me. Maybe I under-salted? Next time I’ll go heavier on garlic and pepper.

    1. 4 stars
Hmm, that sounds like it could definitely be salt. The recipe only says “salt and pepper to taste,” so depending on your salmon (and even how thick the fillets are), you might need a lot more seasoning than you’d expect. Also, 15–20 min can be a range—if it comes out a bit under-seasoned or slightly overcooked, it can taste flatter. Next time I’d salt the salmon directly before baking (even 10 minutes ahead if you can), then add a bit more garlic/black pepper like you said.

  46. User avatar jude.koch1974 says:

    2 stars
My dill was kinda old and the smell wasn’t great, so the flavor was muted. I think this recipe depends a lot on fresh-ish dill.

  47. User avatar dominique.kertzmann99 says:

    4 stars
Easy and quick! My kids loved it. I doubled the garlic though!

  48. 5 stars
Yum! Best salmon I ever had! Even my kids liked it, and they usually hate fish!

  49. User avatar rich.schaefer says:

    5 stars
Yum! I wasn’t sure, but the lemon made it so fresh! Thanks for sharing!

    1. User avatar lindsay.mertz says:

      5 stars
I absolutely agree! The lemon really gives it that zing! So good!

  50. User avatar theo.rau95 says:

Sounds good, but my friend said salmon is bad for you? IDK, I’m confused.

  51. User avatar phillip.wisozk says:

This is my new go-to. I added a few capers on top (because why not) and it still worked beautifully.

  52. User avatar judy.walsh says:

    2. User avatar erwin.krajcik says:

      2 stars
But how can dill and lemon be good together? Sounds weird to me… 🤔

  53. User avatar ahmed.halvorson says:

  55. User avatar frida.mayert13 says:

I don’t like salmon. Sorry but I don’t think this recipe will change my mind.

Absolutely agree! I made this last night and my family loved it too! So easy to whip up.

  57. User avatar Blue Dartwing says:

Simple and delicious. I used fresh dill instead of dried and added a tiny pinch of chili flakes. The salmon stayed juicy. Great weeknight meal.

  58. User avatar harrison.schimmel1984 says:

    4 stars
Greek-style? It’s more like lemon-garlic salmon to me, but whatever—tasted good. The kitchen smelled amazing while baking.

  59. User avatar lenny.mraz32 says:

    5 stars
My fam loved it! Will make again for sure!

So glad to hear that! It’s one of my favorites too. 😋

    2. User avatar halflife4 says:

      3 stars
Really? I tried this recipe and it was kinda dry. Maybe I did something wrong? 🤔

  60. User avatar vernon.mitchell28 says:

    2 stars
I think 400°F for 15-20 minutes is risky depending on thickness. Mine was thinner and overcooked, ugh. Flavor was still good, just not the texture I wanted.

  61. User avatar Deep Thought says:

    2 stars
Is salmon really that healthy? I heard it’s full of fats. Not sure about this one.

  62. User avatar bobette.gulgowski61 says:

    5 stars
Yum, I’m gonna try this! I love lemon!

    1. 2 stars
I don’t know, salmon with lemon sounds a bit weird. Like, what if it’s too sour?

    2. User avatar harris.orn41 says:

      5 stars
Lemon makes everything better! Can’t wait to hear how it turns out for you!

  63. User avatar rashad.hammes says:

    3 stars
Pretty good, but mine came out slightly dry. I may have overbaked it, or my fillets were thinner than expected.

  64. User avatar sal.flatley8 says:

    5 stars
This was delicious! The lemon really brought out the flavor of the salmon. Will definitely make again.

    1. User avatar Miss Broderick Hettinger says:

      5 stars
I’m glad you enjoyed it! The lemon really does make a difference. Did you add anything else to it?

  65. User avatar butterfly says:

    2 stars
Eh, it’s just salmon. I’m more of a beef person anyway. 🥩

  66. 5 stars
Made this tonight—so simple and actually feels fancy. The lemon + dill combo is perfect with salmon.

    1. User avatar walter.bosco13 says:

      5 stars
I made it too and totally agree—lemon + dill makes the salmon taste way more “fancy” than it has any right to 😂

  67. User avatar Questular Rontok says:

    4 stars
I’m skeptical about how ‘Greek’ this is without any oregano or feta, but I’ll admit it’s delicious. My kids ate it without complaining (rare!).

  68. 2 stars
Too salty for my taste! Maybe just sprinkle a little next time.

  69. User avatar Septimus says:

    3 stars
Can I use frozen salmon? This recipe looks gud, but I ain’t got fresh.

    1. 5 stars
Yeah, frozen salmon works fine! Just thaw it first for best results. Enjoy the recipe!

  70. 5 stars
This was SO easy! I just kinda followed and it came out tasty. Thnx!
