The bacon and spinach omelette is a classic combination that never goes out of style. It’s simple, satisfying, and packed with flavor. Whether you’re starting your day with a hearty breakfast or whipping up a quick brunch, this omelette offers the perfect balance of smoky, savory bacon and fresh, earthy spinach wrapped in fluffy, golden eggs.
What makes this omelette so appealing is its ease and versatility. The ingredients are straightforward but come together to create something greater than the sum of their parts. Crisp, crumbled bacon adds depth and richness, while wilted spinach brings a fresh and slightly bitter contrast. Together, they create a filling that’s bold but not overpowering.
The base of the omelette is made with well-beaten eggs, cooked low and slow to keep them tender and soft. Once the eggs are mostly set, the bacon and spinach are added, sometimes with a bit of shredded cheese for extra creaminess. The whole thing is folded neatly in half and served hot, with steam rising from the center and the edges perfectly golden.
You can easily customize this omelette to suit your taste. Add onions or garlic for extra flavor, or toss in mushrooms, tomatoes, or even avocado. For a lighter version, swap the bacon for turkey bacon or skip the cheese. It’s a dish that adapts to whatever you have in the fridge and still feels like a treat.
The bacon and spinach omelette is not just about taste — it’s also packed with protein, making it a great option for those looking to stay full and energized throughout the morning. It pairs beautifully with toast, roasted potatoes, or a side of fruit for a complete meal.
Whether you’re cooking for one or feeding a table of hungry guests, this omelette delivers a flavorful, no-fuss meal that always satisfies.

Ingredients
- 4 strips bacon
- 2 cups spinach fresh
- 6 eggs large
- 1/4 cup milk
- Salt and pepper to taste
- 1/2 cup shredded cheese optional
Instructions
- In a large non-stick skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and chop into small pieces.
- In the same skillet, add the spinach and cook until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet and cook over medium heat. As the eggs start to set, gently lift the edges with a spatula to allow the uncooked eggs to flow underneath. Continue to cook until the top is just set.
- Sprinkle the cooked bacon, cooked spinach, and shredded cheese (if using) evenly over half of the omelette. Fold the other half of the omelette over the filling.
- Cook for another minute to melt the cheese and ensure the omelette is heated through.
- Slide the omelette onto a plate, cut in half, and serve hot.
Simple and easy! I just used whatever cheese I had in the fridge, and it was still yum! Great for breakfast.
Made this for brunch and it turned out fluffy and flavorful. The bacon + spinach combo is a winner—super satisfying.
Yes!! Bacon + spinach is such a great combo. I also love that it stays fluffy instead of rubbery—brunch win for sure.
I tried it but my bacon took way longer to get crispy, and I think I overcooked the eggs a bit. Still tasted good though—next time I’ll pull it when the top is just set like you said.
My kids loved it. Also I accidentally overcooked the bacon a tiny bit but the smoky taste worked anyway. Easy recipe!
Aww that’s awesome your kids liked it! 😄 And I love that the slightly overcooked bacon still worked—the smoky flavor is definitely a plus. I’m trying this one soon.
Overcooked bacon is kinda my thing… but I always worry it’ll make the omelette too dry. Still, with spinach and cheese it probably balances out. Easy though, yeah.
Yum, I love cheesy omelettes! Gonna try this today.
Hope it turns out great! I usually add some salsa on top for extra flavor.
6 eggs feels like a lot—ended up with a giant omelette for just two of us. But flavor was great, and next time I’ll just use 4.
6 eggs definitely makes it huge 😂 But I’m glad the flavor worked out! Next time going with 4 should still give you a nice fold without the “breakfast for a crowd” situation.
Delicious! I added some tomatoes and onions to mine. Yummy!
Bacon and spinach together? Never thought of that. Turned out better than expected!
I followed the recipe exactly, but mine turned out super runny. Not sure what went wrong.
Maybe you used too much milk? It can make it runny if you’re not careful.
I dunno, mine was perfect! Maybe you didn’t cook it long enough? 😅
Awe some recipe! Made it for brunch and everyone wanted seconds. But isn’t spinach bad for you if you eat too much? 🤔
Might be better with different fillings? Like maybe mushrooms or somethin, idk.
Not bad, but my omelette turned out kinda rubbery. I think I cooked the eggs too long after folding. Also, I forgot to melt the cheese for a full minute—my bad.
Hah I’ve done the same thing—forgot the cheese melt and then overcooked the eggs cuz I was impatient. Try lower heat or take the pan off for a few seconds before folding. Also did you use non-stick? Mine sticks if I’m not careful.
Good catch on the timing! If the eggs keep cooking after they’re “just set,” they can get rubbery fast. Next time, pull it right when the top looks slightly wet and let carryover + the 1 minute cheese step finish it.
Really easy and quick breakfast. I added some hot sauce, and it was amazing!
I don’t know about putting hot sauce on omelettes. Just doesn’t sound right to me.
Hot sauce sounds like a fun twist! Gotta try that next time. Thanks for the tip!
Y’all, this is just scrambled eggs with bacon! Where’s the omelette part? Disappointing.
Wasn’t impressed. Thought the eggs were bland. 🤷♂️
Super delicious! My kids loved it! I added some salsa on top, yum!
Yummm! 😋 Best breakfast ever! I might have eaten two servings…
Made this for brunch and it was a hit. Crispy bacon + wilted spinach is such a good combo, and the fold technique worked perfectly. Definitely saving this.
I’m not a fan of cooked spinach… maybe it’s just me but it was a weird texture.
This was AMAZING! The flavors just popped. Will definitely make again!
It was okay, but I think it needed more seasoning. Maybe some garlic powder?
