Arugula Green Salad

October 9, 2025

An Arugula Green Salad is the kind of dish that proves simplicity can be incredibly flavorful. With its peppery bite, vibrant color, and light texture, arugula brings a freshness that instantly elevates any meal. This salad is crisp, clean, and elegant and the perfect accompaniment to pasta, grilled chicken, or seafood paella, yet satisfying enough to enjoy on its own.

The key to this salad’s charm lies in the arugula itself. Its slightly bitter, peppery flavor creates a beautiful contrast when paired with a light vinaigrette or a squeeze of fresh lemon juice. Olive oil adds smoothness, while shaved Parmesan, cherry tomatoes, or thin slices of red onion can add depth and brightness. Every bite feels balanced: tangy, sharp, and refreshingly green.

Arugula’s versatility makes it ideal for every season. In spring and summer, it pairs wonderfully with juicy fruit like strawberries, peaches, or watermelon for a sweet-savory twist. In fall and winter, it works beautifully with roasted vegetables, nuts, and hearty grains. The leaves hold up well under dressings, so the salad stays crisp without becoming soggy – a big reason it’s a favorite among chefs and home cooks alike.

Beyond its taste, this salad delivers a dose of nutrition with every forkful. Arugula is packed with vitamins A and K, antioxidants, and minerals that support a healthy diet. Combined with simple, high-quality ingredients, it offers a refreshing, wholesome balance to any menu.

An Arugula Green Salad is more than just a side – it’s a statement of freshness. It shows that with the right mix of textures and flavors, even a few ingredients can create something remarkable. Light yet flavorful, it’s the kind of salad that fits any occasion, from a quick weekday lunch to a refined dinner spread.

This salad is so refreshing! I love the lemon juice, it really adds a nice kick. I made it for a picnic and everyone loved it!

I dunno, lemon juice can be too sour for me. Maybe add honey next time?

    2. 5 stars
That sounds delicious! I love lemon in salads too. Great idea for a picnic!

  2. User avatar rickiestmorty says:

Honestly, I think this salad is a bit overrated. There are better salads out there. How about some croutons?

  3. User avatar sherryl.corkery87 says:

I don’t see how just greens and some tomatoes can be that great. Sounds kinda plain to me. What’s wrong with adding some cheese?

  4. User avatar un.gutmann1993 says:

    5 stars
    Yummy 😋

  5. 4 stars
Easy to make, but I forgot to add the salt. Still good though. Gonna try it again with some feta!

I like arugula but what the heck is ‘extra virgin’ olive oil? Is my regular olive oil not good? 🤔

  7. User avatar Nunu & Willump says:

    4 stars
Simple and actually works. I used red onion but maybe next time I’ll do something milder so it doesn’t overpower the greens.

  8. 3 stars
Could use more seasoning. Like, I added salt and pepper but it still felt kind of plain. Maybe some garlic powder or balsamic would help.

    1. 3 stars
I think it’s fine as-is? I always add more salt than the recipe says and it wakes up. Also I’m not sure balsamic would fit with lemon… but you could try a little if you like sweet stuff in salad 😅

    2. User avatar marianna.mcdermott1967 says:

      5 stars
Totally agree—arugula can be super peppery already but this one still needs a little something extra. Garlic powder sounds great, and a tiny drizzle of balsamic would add depth without overpowering everything.

  9. User avatar Frankie and Benjy says:

    5 stars
Wow, so good—didn’t expect much but it’s great. 10/10 for a fast side!

  10. 3 stars
Salad? Where’s the meat? Gotta have protein!

This salad is super easy and tastes great! I love the lemon juice in it.

I totally agree! The lemon juice really makes a difference. It’s so refreshing!

Sounds easy, but I don’t like arugula… Can I use spinach instead?

  12. 3 stars
Super simple, but I wish it had more flavor. Maybe some nuts or bacon would help.

  13. 4 stars
So easy to make! I added some feta cheese and it was delicious! Will make again!

    meh…

No offense, but it’s just salad. How could it be that great? 🍅

  15. User avatar Ms. Trinidad Walker says:

    4 stars
Arugula is like rocket. Same right? Plus I didn’t have red onions, used white, still good.

  16. User avatar ShanksOnePiece says:

    1 star
I made this and my kids wouldn’t touch it! Guess not everyone likes green stuff. 😞

  17. 3 stars
Pretty good, but I found the raw onion a little sharp. Maybe I should thin slice even more or rinse the onion. Otherwise easy and tasty.

  18. User avatar cristobal.quigley1959 says:

    2 stars
I tried it and my lemon juice tasted kinda sour? maybe my lemons were old. Either way, I was not thrilled.

  19. 5 stars
So fresh and healthy! I added some feta cheese and it was divine! 🌱🍅

  20. 5 stars
This salad is so refreshing! I love how simple and quick it is to make. Perfect for summer.

  21. User avatar nguyet.ondricka20 says:

    3 stars
I followed the recipe but my salad tasted a bit sharp. Maybe I should’ve used less lemon juice or added something creamy like yogurt or avocado.

    1. User avatar smartestRedditor says:

      5 stars
Totally—arugula can taste peppery/bitter, and with 1 tbsp lemon it can get sharp fast. Next time start with 1/2 tbsp lemon and add more only if it needs it. A little olive oil or a drizzle of honey also helps balance.

    2. User avatar jose.pacocha54 says:

      4 stars
Sharp salad means too much lemon or onions, yeah? I once used bottled lemon and it was way more sour. Maybe try rinsing the red onion slices quickly, or add avocado like you said—also yogurt works. No joke.

  22. User avatar lakisha.gorczany2008 says:

I totally agree! This salad looks so vibrant! 🌟 Can’t wait to try it myself.

  23. User avatar maire.funk18 says:

Simple and super fresh! The lemon + arugula combo really pops. I added a handful of shaved parmesan and it tasted like a fancy lunch.

    1. User avatar ryan.mayer says:

      4 stars
Fancy lunch vibes indeed 😄 I’m gonna try the parmesan next—though I feel like it should’ve already been there. Also I used bottled lemon once… never again lol.

    2. User avatar mikki.toy64 says:

      5 stars
Totally agree—arugula + lemon is such a bright combo. I skipped the red onion this time and it still slapped 👌

  24. User avatar Grandpa Gohan says:

    1 star
What? Only arugula and tomatoes? Sounds like rabbit food. Where’s the meat?

    1. User avatar reid.bergstrom71 says:

      4 stars
Not every dish needs meat! This salad is refreshing and healthy. You can always add grilled chicken if you want.

  25. User avatar kent.rosenbaum42 says:

    2 stars
I tried it and the onions were way too strong even with thin slices. Might use less next time or soak them briefly. Flavor otherwise was good.

  26. 5 stars
Simple and healthy! Great for anyone on a diet like me. Love it!

  27. 5 stars
I made this for my party, everyone loved it! Thanks!

A quick and delish salad. My kids even liked it!

  29. User avatar anjelica.collier94 says:

    3 stars
The dressing could use more flavor. I added garlic and it was much better.

  30. 1 star
Was gonna try this, but got distracted watching TV. Do you think it’ll still taste good if I leave it overnight?

  31. User avatar vaughn.rowe39 says:

    3 stars
1 tablespoon lemon juice seems like a lot. I used less and it was still good—otherwise I think it would’ve been sour.

  32. User avatar Shaddam Corrino IV says:

    2 stars
Meh. Just some leaves and tomatoes. Not worth the fuss.

  33. User avatar King of Red Lions says:

    3 stars
What is arugula? Is that even a real vegetable? 🤔

  34. 2 stars
This salad is too simple. No flavor at all. Needs cheese or something.

  35. User avatar chadwick.roberts12 says:

    5 stars
Perfect side dish! I love how easy it is to make, great for summer.

    1. User avatar Jim Laucher says:

      5 stars
Totally agree! This salad is so fresh and easy to whip up. Perfect for hot days!

  36. 4 stars
This is the kind of salad I can actually make on a weeknight. The steps are straightforward, and the ratio of lemon to oil feels right.

  37. User avatar MAGA2024.Trumpster says:

    4 stars
Okay, I get the idea, but where’s the crunch? I threw in some cucumbers and that made it feel like a real meal.

  38. User avatar lavern.kris73 says:

    4 stars
Really enjoyed this! Arugula gives it a nice peppery taste. I added some feta and it was yum!

    1. User avatar florencio.toy says:

      2 stars
I didn’t find it that great. Arugula is too bitter for my taste. Maybe try spinach instead!

    2. User avatar Super Saiyan 3 Goku says:

      5 stars
Glad you liked it! Feta sounds like a great addition. I always add some nuts for crunch too!

  39. User avatar vonnie.steuber30 says:

    2 stars
I followed it exactly and honestly… kind of bland? Like, the lemon is there but it needs something else—nuts, vinegar, honey? Not bad, just not wow.

    1. User avatar melita.upton17 says:

      4 stars
Totally get that—arugula + lemon can be a little “one-note” unless you add another flavor punch. I usually toss in toasted nuts (almonds or walnuts) or a tiny splash of vinegar/honey to round it out.

  40. User avatar gustavo.hoppe says:

    2 stars
I don’t like arugula. Tried it once, but it’s too bitter for me. Skip this one.

  41. User avatar bryon.mueller1971 says:

    5 stars
So fresh and peppery—exactly what I wanted. The lemon + olive oil combo is perfect. I added a handful of shaved parmesan and it was even better.

  42. User avatar johnnie.durgan88 says:

    3 stars
Isn’t arugula just a fancy name for rocket lettuce? 🤔

  43. User avatar Arwen Evenstar says:

    4 stars
I didn’t have cherry tomatoes so I used regular ones. Still turned out good! 😄

  44. User avatar junie.deckow says:

    2 stars
Honestly, I found it kinda bland. Maybe it needs more dressing or something?

  45. User avatar juanita.lebsack says:

    5 stars
This salad is amazing! The arugula is so fresh and peppery. Perfect for summer.

  46. User avatar agueda.beahan says:

    5 stars
Made this tonight and it was honestly gone in minutes. I used a bit more olive oil than the recipe, and it still worked great. Definitely will repeat.

    1. User avatar pat.muller46 says:

      5 stars
Love that it disappeared so fast 😄 Arugula + lemon + a little extra olive oil is the move.

  47. User avatar Captain Ginyu says:

    5 stars
This has become my go-to salad! So refreshing, especially in summer. Highly recommend!

    1. User avatar donette.rempel2024 says:

      3 stars
It looks okay, but I’m not a fan of arugula. Can’t it be made with lettuce instead?

    2. User avatar suspiciousCommentator says:

      5 stars
I agree! This salad is so light and tasty. Perfect for hot days!

  48. 4 stars
Easy peasy. I used what I had (baby spinach instead of arugula) and it still tasted great. Next time I’ll make sure it’s really dry so it doesn’t get watery.

    1. User avatar Dremora Lord says:

      5 stars
Yes! Dry greens make a huge difference—thanks for the spinach swap tip too.

  49. 3 stars
Too much lemon juice for my taste, but my friend loved it.

  50. User avatar Spriggan Earth Mother says:

    3 stars
I prepared this salad but forgot the lemon juice! Was still ok but needs that zing.

  51. User avatar Flame Atronach says:

    4 stars
Quick, simple, and honestly feels fancy for how little effort it takes. I used bottled lemon juice because I was lazy, still good though.

  52. User avatar myron.mueller says:

    5 stars
I chilled it for 30 minutes and wow—way more refreshing. Totally makes sense to serve it cold.

  53. User avatar Ha Dahamar says:

    4 stars
The instructions are so straightforward it feels almost too easy, lol. But yeah, it turned out good. I skipped salt because my tomatoes were already flavorful.

    1. User avatar elizbeth.gutkowski21 says:

      3 stars
Hah I tried something like this and mine was kinda bland. Maybe I didn’t use enough lemon juice? Also I think arugula is always spicy so I added extra salt anyway—maybe that’s why yours worked.

    2. User avatar Lenard Abshire says:

      5 stars
Totally get what you mean—these kinds of salads *are* almost too easy 😂 But “simple” can still be the whole point. Skipping salt if your tomatoes were already flavorful makes perfect sense!

  54. 2 stars
I don’t know about this… arugula? Never heard of it. No thanks.

  55. User avatar rubin.senger68 says:

    3 stars
Honestly, I’m not sure I love arugula like that. It was a bit too bitter for my taste, but the tomatoes helped. Salt at the end made a difference.

  56. User avatar wilford.smith1991 says:

    4 stars
I like the idea, but arugula can be a little too peppery for my taste. Next time I’ll mix it with spinach or reduce the lemon a touch.

  57. User avatar brunilda.wuckert0 says:

    3 stars
My arugula wasn’t super dry so it kinda got watery. Still good, but chilling it helped a lot.

    1. User avatar Théoden says:

      3 stars
Hmm mine always gets wet too, I think it’s because I don’t dry the arugula enough. Maybe next time I’ll dry it with paper towels longer… or just not wash it as much? 😅

    2. User avatar liberal.hero says:

      5 stars
Totally makes sense—arugula can hold onto water fast. Chilling it after tossing is such a good fix. Glad it still tasted good!

  58. 4 stars
I used spinach instead of arugula. Still came out great!

  59. User avatar Pasta Fasta says:

    1 star
I didn’t like it at all. Too much greens, not enough other stuff. Sorry.

  60. User avatar Gaius Helen Mohiam says:

    3 stars
Ok so… I forgot to dry the arugula and it got kinda watery. Still tasted decent though. Will try again when I’m more awake 😂
