Ingredients
  

  • 2 cups arugula fresh, washed and dried
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onions thinly sliced
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt optional
  • to taste black pepper freshly ground, optional

Instructions
 

  • In a large bowl, combine the arugula, cherry tomatoes, and red onions.
  • Drizzle with olive oil and lemon juice.
  • Toss gently to combine and add salt and black pepper to taste.
  • Serve immediately or chill in the fridge for a cool, refreshing salad.
