Not sure why 200°C for only 20-25 min. Mine stayed pale, so I baked closer to 35. Flavor’s there though.

Just use puff pastry! Why change a good thing? Bread will ruin the whole recipe!
I think normal bread would work, but it won’t be the same. Puff pastry is flaky and bread is more dense. Might be a different texture!
