Wash and chop radicchio into bite-sized pieces, keeping its vibrant purple color intact.

Ingredients

  • 3 cup Rice
  • 120 g Speck
  • 1 Bunch Radicchio
  • 60 g Parmigiano-Reggiano cheese
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a large pot, bring 6 cups of salted water to a boil. Add the rice and cook according to package instructions until al dente.
  • While the rice is cooking, heat olive oil in a large skillet over medium heat.
  • Add the speck to the skillet and sauté for about 3-4 minutes, until it starts to crisp.
  • Chop the radicchio and add it to the skillet. Cook for another 2-3 minutes until it is wilted.
  • Drain the rice and add it to the skillet with the speck and radicchio. Stir well to combine.
  • Grate the Parmigiano-Reggiano cheese and stir it into the rice mixture until melted.
  • Season with salt and black pepper to taste.
