Vegetable Rice Bowl

Ingredients

  • 1 cup Rice
  • 2 piece Tomatoes
  • 100 g Broccoli
  • 50 g Cheese
  • 2 piece Carrots
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder

Instructions

  • Rinse the rice under cold water until the water runs clear. In a pot, bring 2 cups of water to a boil, add the rice, and cook according to package instructions until tender.
  • While the rice is cooking, chop the tomatoes, broccoli, and carrots into bite-sized pieces.
  • In a large skillet, heat the olive oil over medium heat. Add the carrots and broccoli, sautéing for about 5 minutes until they begin to soften.
  • Add the tomatoes to the skillet, along with the garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes begin to break down.
  • Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables, mixing well to combine.
  • Sprinkle the cheese over the top and let it melt for a minute or two.
  • Serve the vegetable rice bowl hot, garnished with additional cheese or herbs if desired.
