Ingredients
- 1 cup Rice
- 2 piece Tomatoes
- 100 g Broccoli
- 50 g Cheese
- 2 piece Carrots
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
Instructions
- Rinse the rice under cold water until the water runs clear. In a pot, bring 2 cups of water to a boil, add the rice, and cook according to package instructions until tender.
- While the rice is cooking, chop the tomatoes, broccoli, and carrots into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the carrots and broccoli, sautéing for about 5 minutes until they begin to soften.
- Add the tomatoes to the skillet, along with the garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes begin to break down.
- Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables, mixing well to combine.
- Sprinkle the cheese over the top and let it melt for a minute or two.
- Serve the vegetable rice bowl hot, garnished with additional cheese or herbs if desired.
