Cheddar Veggie Egg Quesadilla

Ingredients

  • 1 piece Carrots
  • 1 g eggs
  • 100 g Cheddar Cheese
  • 1 g tortillas
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  • Grate the carrot (using the whole piece) and set aside.
  • In a bowl, whisk the egg with salt and black pepper (the egg is very small per your input amount).
  • Heat a nonstick pan over medium heat and warm the tortilla.
  • Add the grated carrot to the pan for 1–2 minutes, then pour in the whisked egg and cook until the egg is just set.
  • Sprinkle the cheddar cheese evenly over the tortilla (and egg/carrot filling).
  • Fold the tortilla in half and cook 1–2 minutes more, until the cheese melts.
  • Cut into wedges and serve hot.
