Ingredients
  

  • 2 cups cooked rice
  • 1 cup mixed vegetables peas, corn, green beans), carrots
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 2 eggs beaten
  • Salt and pepper to taste

Instructions
 

  • Heat vegetable oil in a large pan or wok over medium heat.
  • Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté until the onion becomes translucent.
  • Push the onion mixture to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs with a spatula until fully cooked.
  • Add the mixed vegetables to the pan and stir-fry for a few minutes until they are tender-crisp.
  • Add the cooked rice and soy sauce to the pan. Stir-fry everything together for a few minutes until the rice is heated through and well-coated in the sauce.
  • Season with salt and pepper to taste.
  • Remove from heat and serve hot.

    Mine got a little dry because I used day-old rice that was already sort of hard. Still tasted fine though—just need a bit more sauce.

      That makes sense—day-old rice is usually perfect for fried rice, but if it was already pretty hard you probably needed extra moisture. A splash more soy sauce (or a tiny bit of water/stock) usually fixes it.

    Can I use instant rice? Like the kind that’s already cooked? I’m lazy but hungry lol. Also the recipe says 2 cups cooked rice—how much is that uncooked?

      Yes—instant or already-cooked rice works great. Just make sure it’s not super wet, and ideally use day-old rice if you can. For the 2 cups cooked rice, you’ll typically need about 1 cup uncooked (it usually doubles when cooked).

    1 tsp ginger seems kinda random to me. But yeah I’m not a chef, just tried it. It was actually pretty good and not bland. Would recommend.
