Trout and Artichoke Medley

April 24, 2024

Trout and Artichoke Medley is a light yet satisfying dish that perfectly balances the delicate flavor of trout with the earthy, tender goodness of artichokes. This dish is an excellent choice for those seeking a healthy and flavorful meal that feels elegant yet easy to prepare. With the natural richness of the trout and the slight bitterness of artichokes, the combination is as delicious as it is nutritious.

The beauty of this dish lies in its simplicity. Fresh trout fillets are lightly seasoned and gently cooked, allowing their mild, flaky texture to shine. Artichokes, whether fresh or jarred, add a tender, slightly tangy element that complements the trout beautifully. Their unique flavor profile elevates the dish without overpowering the delicate fish.

To enhance the flavors, a few complementary ingredients can be added. Fresh herbs such as thyme, rosemary, and parsley bring a touch of brightness. A drizzle of olive oil adds richness and helps to bring the medley together. For those who enjoy a little acidity, a squeeze of lemon or a splash of white wine can add a delightful zing that brightens the entire dish.

The versatility of the trout and artichoke medley makes it easy to customize. For additional texture, you can toss in some sautéed mushrooms or roasted tomatoes. For a complete meal, serve the medley with a side of quinoa, rice, or roasted vegetables. This dish also pairs wonderfully with a simple green salad or some lightly buttered bread to soak up any remaining juices.

Trout and Artichoke Medley is not only an easy-to-make dinner but also an elegant one that feels special enough for a dinner party or a celebratory meal. It’s light, flavorful, and packed with nutrients, making it the perfect choice for those who want a meal that’s both delicious and health-conscious.

Lemon and garlic is always a win, I could eat this all day! Delicious!

I’m not a fan of artichokes, but my wife loved this dish! Crazy how tastes differ!

    1. User avatar Celestine Stehr says:

      4 stars
That’s interesting! I think artichokes are an acquired taste. Glad your wife enjoyed it! Maybe I’ll give it another try.

Never liked trout too much, but my mom used to make it with artichokes all the time. Weird combo, but I guess it works for some!

  3. User avatar jules.schaden says:

    4 stars
Super simple and quick! I added some cherry tomatoes for color. Will make again!

  4. User avatar arnoldo.altenwerth says:

This sounds fancy but it’s not. I used frozen trout fillets and it still came out fine. Garnish with parsley makes it look restaurant-y.

  5. User avatar janell.wunsch says:

    4 stars
The flavors are good, but I had to improvise: my artichoke hearts were marinated and already salty, so I went lighter on the salt. If you’re using plain canned, follow as written.

  6. User avatar alva.grimes29 says:

    4 stars
Yum! But next time I’ll use more lemon juice. I love sour stuff!

  7. User avatar wellRespected says:

5 stars from me. I served it with rice and it was gone in minutes. Super easy weeknight dinner. Next time I’ll add a little chili flake for heat.

  8. 1 star
I don’t get it. Fish and vegetables on a grill? Sounds weird to me.

  9. User avatar steve_maga says:

Artichokes with trout… kinda weird but in a good way? I was skeptical, but it tasted really well-balanced. The parsley garnish was a nice touch too.

  10. 5 stars
This looks like such a clean, flavorful combo—lemon + garlic with tender trout. I love that the artichokes are warmed in a pan instead of overcomplicated. Definitely trying this next week!

    1. User avatar dallas.wehner2021 says:

      5 stars
Totally agree—lemon + garlic on trout is such a winning combo. I also love the simple artichoke warm-up step, it keeps things quick and flavorful.

    2. User avatar micah.gutkowski87 says:

      3 stars
I’m not sure about mincing the garlic and mixing it in with the trout—feels like it might burn on the grill. Maybe I’d add garlic to the lemon/olive oil instead?

  11. 3 stars
Was this supposed to feed a family? I barely got any. Needs more ingredients.

    1. 4 stars
I totally agree! I thought there would be leftovers, but I barely got a portion. More ingredients would be better for sure!

  12. 3 stars
Not bad. But the seasoning step feels a little incomplete—should I season the artichokes too? Mine were kinda bland compared to the fish. I added a pinch of salt and pepper when reheating and it helped.

  13. User avatar carma.goodwin43 says:

    3 stars
This tasted good, but I expected more going on. Maybe add some chili flakes or capers for a little drama?

  14. User avatar dakota.homenick3 says:

    5 stars
This sounds super fresh and bright—lemon + trout is always a win. The artichokes add a nice savory vibe too. I’ll definitely try it on my grill pan.

  15. User avatar eugenio.cremin14 says:

    4 stars
I don’t usually grill fish, but skin-side down + med-high seems doable. The garlic + lemon is the right vibe.

    1. 5 stars
Yes! I’m with you—garlic + lemon really makes trout pop. I’ve found 4–5 min per side works best if the grill’s actually hot; otherwise it sticks, but skin-side down helps.

  16. User avatar Johana Wolf DDS says:

    5 stars
This was surprisingly delicious! The artichokes added such a unique flavor. Will definitely make again!

  17. User avatar Eccentrica Gallumbits says:

Wow, never thought I could cook fish myself! My fam said it was restaurant quality! Thank you!!

    1. 5 stars
That’s awesome to hear! Cooking can be so rewarding. Glad you enjoyed it!

  18. User avatar keenan.kassulke69 says:

    4 stars
Simple and pretty quick. I did add a pinch of red pepper flakes because I like a little kick, but overall the directions were spot on. Trout cooked fast—don’t walk away from the grill!

  19. User avatar lizzie.weber26 says:

    5 stars
Artichoke hearts on fish is underrated. The timing seems about right—4-5 minutes per side is exactly how I do trout when it’s not too thick.

    1. User avatar jeffery.orn52 says:

      5 stars
Yes! I love artichoke hearts with fish—more flavor than people expect. 4-5 minutes per side has always worked for my trout too. 😋

  20. User avatar chauncey.bosco54 says:

    3 stars
Not bad, but 4-5 minutes per side was a little much for my grill. I think my fillets were thinner. Otherwise tasty and light.

  21. User avatar barry.kautzer53 says:

    2 stars
Artichokes? Seriously? Nobody likes them. I just skipped that part and it was basic.

    1. User avatar daron.wilderman30 says:

      5 stars
I actually love artichokes! They add a unique flavor to dishes. You should give them another try.

    2. User avatar ShanksOnePiece says:

      2 stars
Why would you make this recipe if you don’t like artichokes? Just sounds weird to me.

  22. User avatar yong.kerluke48 says:

    4 stars
I wasn’t sure about the artichoke with fish, but it turned out really good! Just a bit too oily for my taste.

  23. 5 stars
This dish was amazing! The trout was perfectly cooked and the flavors melted together. Will absolutely make again!

    1. User avatar sherell.shields99 says:

      5 stars
So glad you enjoyed it! Trout is one of my favorites, and those flavors do go so well together. Can’t wait to try it myself!

  24. User avatar Leonard Schmidt says:

    3 stars
My trout got burned, I don’t know what went wrong. Maybe grill was too hot? Still tasted okay.

  25. 4 stars
I followed it exactly and everything tasted fresh. The skin-side down part is key—mine got that perfect grill texture.

  26. User avatar Bilbo Baggins says:

    5 stars
Made this last night—so simple but super flavorful. The lemon + garlic combo really pops, and the artichokes add a nice briny twist. I grilled a touch longer until it flaked perfectly.

    1. User avatar philomena.price45 says:

      5 stars
Love this combo—lemon + garlic always wins. I also grill a bit longer when the trout is thicker, so “flaked perfectly” makes total sense.

  27. User avatar travis.cremin18 says:

    1 star
I can’t believe people eat trout.. looks gross to me. No thanks.

  28. User avatar matthew.buckridge14 says:

    3 stars
Artichoke hearts out of a can… okay, I guess. Still, this is faster than most fancy recipes. Mine might need extra salt though.

    1. User avatar Ma'randru-jo says:

      5 stars
Honestly, canned artichokes are the move for quick weeknights—glad it still feels “fancy.” I’d start with a little salt at step 2 and taste the artichokes after heating; they can be a bit bland depending on the brand.

  29. User avatar shannon.damore70 says:

    4 stars
Wait—grill pan medium-high for trout is scary lol. But the instructions say flake test, so I guess I can’t mess it up too bad. I’ll try it tonight.

  30. User avatar esteban.rogahn71 says:

    3 stars
Not sure about grilling skin-side down for 4-5 mins per side. My fillets were thicker and it needed more time—still good though, just watch for doneness.

    1. User avatar lois.bergstrom99 says:

      5 stars
Totally agree—4-5 mins depends a lot on thickness. I usually start checking after 3-4 on the first side and go from there. Glad it turned out good!

    2. User avatar joe_banana says:

      5 stars
Thank you! I’m bad at guessing cook time. My fillets are always chunkier, so I’ll plan on longer and rely on flaking instead of the clock.

  31. 3 stars
Could’ve used more sauce or something—like a little butter or white wine—to really glaze the fish. Tasted a bit dry for me.

  32. User avatar julia.mueller1 says:

    3 stars
Garnish with parsley? Who cares! As long as it tastes good, right? 😄

    1. User avatar Max Quordlepleen says:

      5 stars
You’re right! As long as it tastes good, who needs fancy garnishes? 😋

    2. User avatar devon.sanford18 says:

      3 stars
But the parsley adds color! A little presentation goes a long way, you know?

  33. User avatar Martine Block says:

    5 stars
Love this recipe! So easy for a weeknight dinner. The garlic and lemon combo is spot on!

  34. 2 stars
Meh, trout is always kinda tricky. Also I didn’t have fresh parsley so I used dried—turned out kinda sad lol.

    1. User avatar thao.swift21 says:

      3 stars
Aw man, sorry it turned out sad 😕 Fresh parsley really does make it brighter—dried can be a bit flat. Still, the lemon + garlic should’ve helped!

    2. User avatar Leto II Atreides says:

      4 stars
I get you on trout being tricky. If it was overcooked or the grill temp was too high, it’ll go dry fast. Dried parsley won’t help, but I’d still try again and watch the flake time.

  35. User avatar jone.greenfelder says:

    3 stars
I made this and forgot the garlic (long day). Still good, but I feel like it was missing something… so yeah, don’t skip it.

  36. User avatar cori.anderson says:

    2 stars
Artichokes?? Where do you even get them? Never saw them in my store.

  37. User avatar ken.heller16 says:

    2 stars
Um, is it really necessary to use fresh trout? I used frozen and it was fine.

  38. User avatar miyoko.bosco66 says:

    5 stars
This sounds super fresh and light—love the combo of trout with artichokes and that lemon kick. Gonna try it this week!

    1. 5 stars
Yes!! That lemon + trout combo is seriously perfect. Let me know how it turns out when you try it!

  39. User avatar alleen.torphy13 says:

    2 stars
Honestly, I didn’t love it. The lemon was a bit overpowering for me, and I couldn’t really taste the garlic. Maybe my lemon was extra strong.

    1. User avatar larisa.bins79 says:

      4 stars
Hmm I think if the garlic gets cooked with the lemon it might mellow weird? I usually mince garlic and only do a light seasoning, then I add a little more after grilling.

    2. User avatar lanelle.herman1980 says:

      3 stars
Oof, sorry it didn’t hit for you. Lemon can be super intense—maybe try half the juice next time or add it after cooking so it’s not as “punchy.”

  40. User avatar marvin.mueller92 says:

    4 stars
Made this for my family and they all loved it! I used frozen trout and it was still good.

  41. User avatar lourdes.armstrong says:

    3 stars
Looks good but I cant grill… can I bake it? Like 450F? Also do I keep garlic on the skin-side or mix it all?

  42. User avatar devona.hoppe16 says:

    5 stars
Made this last night—so fresh and simple. The lemon + garlic combo really brightens the trout, and the artichokes add a nice little tang. Mine took closer to 5-6 minutes per side, but it flaked perfectly.

  43. User avatar fatima.mueller40 says:

    5 stars
The lemon + garlic combo really makes the trout taste bright. I grilled it and the flesh flaked perfectly—4-5 minutes per side was spot on for me.

    1. 5 stars
Yes! The lemon + garlic really pops with trout. I love that you nailed the timing—mine usually lands around there too. 🐟

  44. 2 stars
i like trout but i never cook it skin-side down. may stick, i guess. what if it breaks? still gonna try cuz sounds easy.

    1. User avatar emelia.dietrich39 says:

      5 stars
Honestly, skin-side down is the move—use enough oil and a hot grill pan. If it sticks a bit, let it cook longer; it usually releases when it’s ready.

    2. User avatar jaime.weimann23 says:

      4 stars
If it breaks, it’s still totally edible—just make sure you don’t flip too early. Next time, pat the skin dry and oil the fish *and* the grate/pan.

  45. User avatar rey.emmerich says:

    5 stars
Great recipe! Quick and tasty. Thank you for sharing!!

    1. User avatar chrystal.heller44 says:

      5 stars
Thanks for sharing! Can’t wait to try it!

  46. User avatar Mrs. Tanisha Walter says:

    3 stars
I did the artichokes separately like it says. They warmed through nicely, but I wish they were a little softer—maybe cook them 1-2 minutes longer.

  47. User avatar chet.lehner40 says:

    5 stars
I was skeptical about artichokes with trout, but wow. The medley actually balances out the fish. Will make again.

  48. User avatar dorcas.harvey1966 says:

    4 stars
I’m skeptical about grilling fish that quick. 4-5 minutes per side sounded risky, but my fillets were thin and it worked. Next time I’ll oil the grill too so it doesn’t stick.

    1. User avatar ethan.stracke says:

      2 stars
4-5 minutes per side?? That seems way too much for trout, I think. Mine overcooked last time. Also I used jarred garlic and it tasted weird… might just be me 😅

    2. User avatar Death Hound says:

      5 stars
Same here—I was worried it would be dry. But thin fillets really do cook fast. The lemon + garlic combo is spot on!

  49. User avatar bennett.rau says:

    2 stars
I dunno, my fish didn’t come out right. Maybe I did something wrong? The artichokes were weird…

  50. User avatar Charles Darwin says:

    4 stars
Pretty solid and easy. I used pre-minced garlic (oops) and it still worked. Next time I’ll pay attention to the grill timing so it doesn’t get too dry.

  51. User avatar jani.gaylord1970 says:

    4 stars
Cook time felt a little vague to me, but the “flake with a fork” tip is solid. I’ll probably keep it closer to 4 minutes depending on thickness.

  52. User avatar Dr. Sherly Altenwerth says:

    2 stars
Honestly I dont get why grill it and then just warm canned artichokes. Could’ve just done a quick sauté with some butter/stock. Flavor needs more depth IMO.

    1. User avatar willy.wehner17 says:

      3 stars
Maybe they grill the trout for texture and just keep the artichokes simple so they don’t overpower the fish. Still, a splash of stock/wine would be an upgrade.

    2. User avatar eneida.funk48 says:

      4 stars
I get what you mean—warming canned artichokes can feel a little lazy. I’ve done a quick sauté with garlic + butter and it definitely adds more depth though.

  53. User avatar Questular Rontok says:

    4 stars
Only 2 trout fillets? I’m gonna need more! 🙈

  54. User avatar edward.hoppe42 says:

    3 stars
I think 4–5 minutes per side might be too short for some grills. Also I accidentally used dried parsley—still tasted ok tho. Weird but good.

  55. 3 stars
My trout stuck a bit to the grill pan (even though I oiled it). Next time I’ll use better oil and maybe preheat longer.

  56. User avatar NAFO.SUPREMACY says:

    2 stars
Trout is too fishy for me. I prefer chicken.

  57. User avatar amira.kautzer says:

    2 stars
I followed it exactly and it came out bland. Maybe my trout was too mild? I added extra lemon and pepper after plating and it got better, but yeah… not mind-blowing.

    1. User avatar gisela.heller says:

      4 stars
Yeah, I’ve had trout turn out a little mild too—fresh trout can be super delicate. Next time try more garlic upfront and a pinch of salt right before grilling; also letting it sit 5–10 minutes after seasoning helps the flavors soak in. Lemon after plating is exactly what I’d do!

  58. User avatar Glossu "Beast" Rabban says:

    1 star
This should really come with a warning, I didn’t realize I needed to gut the fish myself. Pretty misleading recipe.

  59. User avatar Bilbo Baggins says:

    4 stars
Honestly, the instructions are simple but that’s good. Garlic + lemon on fish is like… duh, but it works. Would garnish with extra parsley though.

  60. User avatar noma.halvorson says:

    5 stars
This was a total game changer for dinner! The flavors are on point! 😍

    1. User avatar chi.herman76 says:

      3 stars
Sounds great, but how do the artichokes really fit in? Seems a bit odd to me. 🤔

    2. User avatar raphael.little says:

      5 stars
So glad you loved it! The combination of trout and artichokes is just delicious! 😋

  61. User avatar MAGA2024.Trumpster says:

    5 stars
Five stars. The lemon and garlic smell while it cooks is unreal. My family asked when I’m making it again.

    1. User avatar ShanksOnePiece says:

      5 stars
Five stars too! The lemon-garlic combo really makes the whole kitchen smell amazing. I could eat it just for that aroma 😄

  62. 5 stars
Made this for dinner and it was seriously restaurant-level. The lemon + garlic combo really pops, and the artichokes give it a nice savory bite.

  63. User avatar trey.harris18 says:

    2 stars
Honestly, I didn’t like the medley. The lemon tasted kinda harsh and the artichokes overpowered the fish. Maybe my pan was too hot?

    1. User avatar rolande.kulas7 says:

      4 stars
Sorry it didn’t work for you! The lemon can be pretty sharp—next time try using a little less juice or adding it after cooking. And if the pan was too hot, the fish can turn more “citrusy/harsh.” I also find artichokes can be strong, so maybe reduce them a bit or sauté them briefly so they don’t dominate.

  64. User avatar smartestRedditor says:

    1 star
2 trout fillets and only 2 tbsp oil?? Seems too little. Also grilling fish that fast feels risky lol.

    1. 4 stars
I get why you’d think 2 tbsp oil is low, but it’s usually plenty for two fillets—especially if you’re grilling hot. The lemon + garlic helps too.

    2. 4 stars
2 tbsp oil for 2 fillets is basically “coat lightly,” not soak. I’d be more worried about overcooking than oil amount—4-5 min per side sounds about right if your grill is truly medium-high.

  65. 5 stars
Yum! This is a hit at our family dinner. Even the kids liked it! 🍽️

  66. User avatar matt.ledner2016 says:

    5 stars
This sounds super fresh and simple—love the lemon + garlic combo with trout. I think the artichokes add a nice tangy vibe. Definitely making this.

    1. User avatar terminatorXYZ says:

      5 stars
Totally agree—this combo sounds bright and not too fussy. Lemon + garlic on trout is such a win. I’m tempted to add a little chili flake too.

  67. User avatar lauran.brakus says:

    4 stars
Quick tip: marinate for longer! Trust me, it’s worth it.

  68. User avatar damien.ernser30 says:

    4 stars
Super easy weeknight meal. The timing is solid, and the steps are clear. My family ate it without complaints 😅

    1. User avatar Iona Corolla says:

      5 stars
Totally agree—this one feels foolproof. The 4–5 min per side tip saved me. 😄

    2. 4 stars
I tried it and it was good, but I think my garlic was too much? Next time I’ll use like 1 clove. Still an easy dinner though.

  69. User avatar suspiciousCommentator says:

    4 stars
Made something similar once, but I overcooked the trout. Your timing (4-5 min per side) feels reassuring—will watch for the flake test.

    1. User avatar mellisa.altenwerth50 says:

      5 stars
Yes! The flake test is the real cheat code—trout can go from perfect to dry fast. I usually pull it the moment it flakes, even if it looks a little underdone at first.

  70. User avatar eleanore.bergnaum94 says:

    3 stars
Artichokes on grilled fish? Kinda weird to me, but I’ll give it a shot. If it tastes like pizza toppings I might complain 😂

  71. User avatar theron.upton91 says:

    3 stars
I did the artichokes in a pan and they were fine, but I found them kind of bland. Salt/pepper there could use more love.

    1. User avatar donn.lakin6 says:

      5 stars
Totally get that—my first time I felt the same. I now add a little more salt right on the fish, and for the artichokes I toss them with extra lemon juice + a pinch of garlic salt. Big difference.

  72. User avatar nolan.yost4 says:

    3 stars
The recipe is too simple, like… where’s the sauce? I ended up adding a splash of white wine and it improved a lot. Still, good idea.

    1. User avatar Paula Nancy Millstone Jennings says:

      5 stars
Yeah I get what you mean—it’s more of a lemon-garlic dressing than a full-on sauce. The artichokes kind of soak up that flavor though. White wine sounds like a great upgrade!

  73. 4 stars
Turned out good! I didn’t have fresh parsley so I used dried—still worked. Next time I’ll mince the garlic a little finer because I could taste bigger pieces.

  74. User avatar elliot.crooks50 says:

    4 stars
I made it but my trout took a little longer (maybe my fillets were thicker). Still turned out nice and flaky. Artichokes were a great match.

  75. User avatar alfredo.ankunding says:

    3 stars
Artichokes in the middle of everything… kinda weird to me. But I’ll admit it paired nicely with the lemon. Still not sure I’d call it a “medley.”

  76. User avatar tyler.runte76 says:

    4 stars
Yum! Quick and good. Also i didnt have parsley so i used dried and it was fine 😅

  77. User avatar gerald.reinger79 says:

    2 stars
Umm I might be doing something wrong, but mine came out a bit dry. Maybe I cooked too long or the heat was higher than medium-high. Flavor was decent.

  78. User avatar devin.schuster49 says:

    5 stars
Super fresh flavor combo! The lemon + garlic really makes the trout pop, and the artichokes add a nice tangy bite. I’ll definitely make this again.

  79. User avatar renna.barrows says:

    3 stars
Not sure about cooking artichokes separately for just 5 minutes—mine felt a bit cold inside when I served. Next time I’ll warm them longer or add a splash of lemon juice.

  80. 5 stars
I was skeptical about artichokes on trout, but wow—together it’s better than I expected. The flavor balance is great.

Too much lemon I think. Next time I’ll just use half. Still edible tho.

I don’t know, half sounds like not enough. What’s the point of the lemon if you can’t taste it? 🤔

I actually love the lemon! It adds such a fresh taste. Maybe give it another shot? 😉

I’m not sure about “medium-high” with 2 trout fillets—mine would probably burn. Still, the flavors look legit.

Liked it a lot, but next time I’ll reduce the lemon a bit—mine was a little too bright. Still tasty though.

Dude, I made this but used salmon instead of trout. It was okay, but not what I expected.

I tried it but I think my garlic burned because my grill pan was too hot. Also I used bottled lemon juice (oops) and it tasted a bit flat. Could still be good with fresh lemon though.

This sounds super fresh and simple. The lemon + garlic combo with trout is always a winner, and the artichokes add a nice briny twist.

Not bad, but I think 2 cloves garlic is a lot for my taste. I’d do 1 next time. Also, I squeezed in more lemon than the recipe and it was better.

I totally get that—2 cloves garlic can be punchy. Next time I’ll try your 1-clove version. Glad extra lemon worked for you!

Interesting… I’m actually team “more garlic” 😅 but I’ll admit trout can get kinda strong if you go heavy. What kind of lemon did you use—fresh or bottled?

Five stars for the effort-to-flavor ratio. My whole family ate it without complaining (rare). Garnish with parsley is a good call.

Love hearing that—thanks! The parsley really does make it pop. I’ll add this to my “easy but impressive” rotation.

Not gonna lie, I’m skeptical it’s that good with just lemon, garlic, and olive oil… but I’ll try it. Quick question: when you say grill medium-high, is that like 375-400F? Also parsley feels optional to me.
