Ingredients
  

  • 2 Tomatoes
  • 1/2 cup shredded coconut
  • 1/4 cup cilantro chopped
  • 1/4 cup red onion chopped
  • 1/2 lime juiced
  • Salt and pepper to taste

Instructions
 

  • Dice the tomatoes and place them in a bowl.

    Step 5 says serve immediately, but salads usually taste better after like 10 minutes. I’d test it either way. Also, how big are the tomatoes? 2 medium? Kinda vague.

      Good catch on the “serve immediately” part—10 minutes can definitely help the flavors meld, especially with the lime and salt. I’d do both: let it sit briefly, then serve. And for the tomatoes, I meant about 2 medium tomatoes (roughly ~1 to 1 1/2 cups diced). If yours are small, just use a bit more to match the volume.
