Thai Watermelon and Lime Cooler

August 9, 2023

If you’re craving something cool, refreshing, and full of flavor, the Thai Watermelon and Lime Cooler is the perfect drink to quench your thirst. Inspired by the vibrant flavors of Thailand, this cooler combines the sweetness of ripe watermelon with the zesty punch of lime, creating a drink that’s both refreshing and exotic. The addition of a few simple ingredients gives it a delightful Thai twist that takes it beyond just a regular fruit drink.

Watermelon is the star of this cooler, offering a naturally sweet base that’s hydrating and full of flavor. It’s blended into a smooth juice that pairs beautifully with the tangy lime, which adds just the right amount of citrusy brightness to balance the sweetness of the melon. A splash of coconut water enhances the tropical vibes and adds a subtle hint of creaminess without overwhelming the fresh, fruity flavors.

To give the drink an extra depth of flavor, fresh mint leaves are muddled in, bringing a burst of coolness and a refreshing fragrance that complements the watermelon and lime perfectly. A drizzle of honey or a pinch of sugar can be added to taste, though the natural sweetness of the watermelon is often enough to make it delightfully satisfying.

The final touch is a good splash of sparkling water or club soda, which gives the cooler a light, effervescent quality that makes each sip feel even more refreshing. Garnish with a few fresh mint sprigs or a slice of lime for a visually appealing, aromatic finish.

The Thai Watermelon and Lime Cooler is perfect for hot days, outdoor gatherings, or as a light, refreshing drink at any time of the year. It’s a great way to stay hydrated while enjoying the tropical, bold flavors of Thai-inspired ingredients. Whether served at a party or enjoyed solo, it’s sure to transport you to a sun-drenched beach with every sip.

It was ok, but I think I did it wrong 😕. I didn’t have honey.

  2. User avatar yahaira.gislason says:

    3 stars
I followed it exactly, but my blender kept leaving chunks. Maybe my ice was too big? Still tasted good though, just not fully smooth.

    1. User avatar arie.murphy45 says:

      5 stars
That could be it—big ice cubes often don’t fully break down, so you get chunks. Try using smaller ice or even pulse a few times first, then blend longer. Also make sure your blender has enough power for frozen-y cubes. Glad it still tasted good!

  3. 2 stars
Does anyone else think the mint ruined it? Just sayin’.

  4. 5 stars
This drink is soo refreshing for summer! Love it!

  5. User avatar sunday.fritsch92 says:

    5 stars
Yum! I made it for my kids and they loved it! Mint leaves are a nice touch.

  6. User avatar Storm Atronach says:

    4 stars
I was skeptical about honey in a drink, but it really adds a nice touch! Will make again.

  7. User avatar Spider Soldier says:

This drink is so refreshing! Perfect for hot summer days. I loved it.

    1. User avatar Oolon Colluphid says:

      5 stars
I agree! This drink is a lifesaver in the heat. I’ve made it three times this summer already. 🥤

  8. User avatar eliana.wyman says:

I’m skeptical about calling this Thai—feels more like a basic watermelon-lime cooler to me. But flavor-wise it’s legit.

    1. 3 stars
This is just a watermelon lime cooler? I mean, it’s good but not Thai to me. Also 2 tbsp honey seems a lot—maybe try 1? 😅

    2. User avatar alethia.bins81 says:

      4 stars
Honestly I get the Thai skepticism too—sounds like a super simple watermelon-lime drink. Still, if it tastes right, I’m in. 😄

  9. User avatar brittny.carroll38 says:

    2 stars
    Isn’t this just a watermelon smoothie? 😂

  10. User avatar esperanza.jacobs21 says:

    3 stars
Wow! This sounds fancy, but is it really just fruit and honey? Seems too easy.

    1. 5 stars
Yes, it’s super simple! Sometimes the best things are easy. You should try it!

  11. 4 stars
Watermelon and lime? I never would have thought! Impressive combo!

    1. User avatar Reg Nullify says:

      5 stars
Thanks! It’s really refreshing! Can’t wait to try it!

  12. User avatar shirly.sipes33 says:

    2 stars
Watermelon is 90% water, right? Is there even any nutrition? 🤔

    1. 2 stars
I dunno, it seems like all that blending just turns it into juice. Who needs that? Just eat the fruit! 😂

    2. User avatar onie.flatley1972 says:

      4 stars
You’re right that watermelon is mostly water, but it’s also got vitamins A and C, plus some antioxidants! So it’s not just empty calories. 😊

  13. User avatar lucienne.bailey says:

    5 stars
I followed the steps exactly and it came out smooth, not icy. The lime really pops. Would drink again on a hot day.

    1. User avatar Draugr Thrall says:

      5 stars
Glad it turned out smooth for you! The lime + honey combo sounds like it would really brighten the watermelon—definitely a “hot day” drink.

  14. User avatar tuan.gulgowski17 says:

    5 stars
This is so refreshing! Perfect for hot summer days. I added a little more honey for sweetness.

  15. User avatar rickiestmorty says:

    4 stars
The instructions are simple, which I like. I did find 2 limes juice might vary a lot—mine was less tangy, so I added another splash.

    1. User avatar Ice Wraith says:

      4 stars
2 limes juice might be a typo? I just used “juice of 2 limes” and it was kinda bland, so I also added a bit more. Next time I’ll just taste while blending—does anyone know if it’s supposed to be 2 limes worth or like a measured amount?

    2. User avatar Werewolf says:

      5 stars
I love that it’s straightforward too—blender recipes are the best. And yeah, lime can be super unpredictable. Your extra splash makes sense, especially if the ones you had were less tart.

  16. 4 stars
I made it exactly as written—great texture and not too sweet. Next time I’ll juice the limes myself for an even brighter flavor.

    1. User avatar ardath.becker40 says:

      5 stars
Love that you followed the recipe exactly! 🌿 And yeah, juicing fresh limes usually does make it pop—brighter and more aromatic.

    2. User avatar elisha.blanda says:

      3 stars
Not gonna lie, I’m surprised it wasn’t too sweet with honey. 😅 I usually cut the honey down a bit, but maybe the watermelon makes up for it.

  17. User avatar basementDweller says:

    3 stars
Too much lime for my taste. Maybe less next time?

    1. User avatar ira.corwin2000 says:

      2 stars
Nah, I loved it! The lime gives it a zing! Don’t skimp on it!

    2. User avatar gerry.feeney says:

      4 stars
I totally agree! I prefer a milder flavor too. Maybe just one lime instead?

  18. User avatar alec.walker48 says:

    5 stars
Wow, I didn’t expect it to be this delicious! My kids loved it too. 🍉💚

  19. User avatar toby.bergnaum2000 says:

    5 stars
This is such a refreshing drink! I made it for a summer BBQ and everyone loved it! 🍉

  20. User avatar fern.daugherty44 says:

    2 stars
I found these flavors really odd together. Watermelon and lime?? Not sure about this one.

    1. 5 stars
I actually loved this combo! The watermelon and lime are super refreshing, especially in the summer. Give it a try!

  21. User avatar keeley.goodwin28 says:

    5 stars
Yum!!! So delish! Can I use lemon instead of lime?

  22. User avatar rich.landlord says:

    4 stars
I left out the honey and it was still nice! Healthy option for a snack.

  23. User avatar santo.stanton2004 says:

    3 stars
Easy recipe, but I expected more “Thai” flavors. No ginger or spice, so it feels more like a regular summer cooler to me. Still tasty though!

  24. User avatar yer.nikolaus89 says:

    5 stars
This was so refreshing! The watermelon + lime combo is perfect, and the honey actually balances the tartness nicely. I added a little extra mint and it tasted super fresh.

  25. 3 stars
Nice recipe but a bit too sweet for my taste. Maybe less honey next time.

    1. User avatar alita.lehner1 says:

      4 stars
I get what you mean! I prefer my drinks a bit tart too. I’ll try cutting back on the honey next time. Thanks for the tip!

    2. User avatar mitch.brown49 says:

      3 stars
Less honey? I thought it was perfect as is! But I guess everyone has their own taste. What about adding more lime instead?

  26. User avatar Bowerick Wowbagger says:

    5 stars
I made this for a party and it was a hit! Everyone asked for the recipe. 🌟

  27. 4 stars
Loved how easy it was to make! It was gone in a flash at my party.

  28. 5 stars
Wow, this is literally juice-shop level. It’s sweet, zingy, and the mint on top makes it look fancy even when you’re not trying.

    1. 3 stars
Not gonna lie, I’m skeptical about the “mint makes it fancy” part 😂 I tried similar drinks and the mint just tastes like soap if it’s not fresh. Still, sounds like a good quick blend—would probably use less honey for my taste.

    2. User avatar eugene.mayer66 says:

      5 stars
Right?? The flavor combo is so on point—sweet watermelon + bright lime is a perfect match. And yeah, the mint makes it feel like something you’d pay for at a café.

  29. User avatar hung.shanahan says:

    4 stars
I added some extra mint, and it was so good! Definitely making again.

    1. User avatar paul.weimann76 says:

      5 stars
Extra mint sounds refreshing! Can’t wait to try it that way!

  30. User avatar wade.robel1985 says:

    5 stars
This is so refreshing! Perfect for a hot summer day. Love it!

  31. User avatar yoko.kerluke says:

    3 stars
Quick and easy, but I feel like it needs more flavor… maybe some ginger?

    1. 4 stars
I totally agree! A little ginger could really kick it up a notch. Or maybe even some chili powder for a spicy twist!

    2. User avatar ross.wuckert says:

      3 stars
Nah, I think it’s fine the way it is. Sometimes simple is best! Don’t mess with perfection.

  32. User avatar steve_maga says:

    5 stars
This is soooo refreshing! I didn’t have mint, but it was still great. Will definitely make again!

  33. User avatar manual.greenholt says:

    1 star
Seems like too many ingredients. Why not just use watermelon juice? 🤷‍♂️

  34. User avatar bill.conn45 says:

    2 stars
Easy to make, but my blender just couldn’t handle the watermelon! Had to do it in batches.

  35. User avatar levi.halvorson says:

    3 stars
Not sure about the lime. It was too tart for my taste. Maybe less lime next time?

  36. 2 stars
Why do we have to use watermelon? Can’t I just use regular water? 🤔

    1. User avatar Barliman Butterbur says:

      5 stars
Water? 🤨 No way! Watermelon gives it a sweet flavor that water just can’t. Trust me, you wanna stick with the recipe!

  37. 3 stars
Honestly, I was skeptical about blending ice straight in. It came out good though—just blend a bit longer so it gets truly smooth.

  38. User avatar Paula Nancy Millstone Jennings says:

    2 stars
The amounts are weirdly specific—“2 lime juice”?? Like is that 2 tablespoons or 2 limes? I used 2 limes and it came out too tart, had to add more honey.

  39. User avatar roselle.dare says:

    2 stars
I don’t really get how watermelon and lime go together. Seems weird to me.

  40. User avatar arnoldo.schaefer89 says:

    3 stars
Hmm, I wasn’t sure about the honey. It made it too sweet for me.

    1. User avatar arnoldo.prosacco41 says:

      4 stars
I actually love the sweetness the honey adds! Maybe try less next time?

    2. User avatar Gag Halfrunt says:

      3 stars
Too sweet? Come on, honey and watermelon are a match made in heaven! Just use less honey next time.

  41. User avatar melvina.hyatt73 says:

    2 stars
Cooler? More like warmer… didn’t turn out like I expected. 😩

    1. User avatar Marco Doyle says:

      4 stars
Sorry to hear that! Did you use fresh watermelon? Sometimes the ripeness can make a huge difference.

  42. User avatar matthew.douglas1993 says:

    2 stars
I don’t think watermelon and lime go together. Sounds weird.

  43. User avatar frederic.schimmel43 says:

    5 stars
WOW fresh drink! Perfect for a BBQ. Didn’t garnish with mint tho. Still delish!

  44. User avatar reta.farrell63 says:

    1 star
It’s just a smoothie with watermelons, right? not anything special.

    1. 4 stars
It’s not just a smoothie, it’s a refreshing summer drink! The mint and lime really make it special. Give it a try!

  45. User avatar john.lockman says:

    1 star
Watermelon is not good for drinks. I had no honey at home, so I used sugar and it was really sweet. Not making again.

  46. 4 stars
Good idea, but I think 2 tbsp honey might be a lot depending on how sweet your watermelon is. Mine tasted almost like a dessert drink.

  47. 1 star
Is this really a traditional dish? I’ve never heard of it before. Seems weird.

  48. 4 stars
I was skeptical, but this was surprisingly good! Who knew?

  49. User avatar Arthur Philip Deodat says:

    4 stars
Easy and tastes like summer. I used frozen watermelon cubes when mine was out of season and it still blended great.

    1. 3 stars
I tried something similar, but I think 2 limes is too much—mine turned kinda sour. Maybe I’m doing the honey wrong? Still, the idea is nice and refreshing.

    2. User avatar joe_banana says:

      5 stars
This sounds perfect for hot days 😍 I love that it’s simple but still feels fancy with the mint. Gonna try it with frozen watermelon cubes too—good to know it blends well!

  50. 4 stars
I was skeptical about mixing watermelon and lime, but wow, it actually works! Good recipe!

  51. User avatar oPandariaNo says:

    5 stars
Simple and easy! My kids loved it, even asked for more! Will definitely make this again.

  52. User avatar Samwise Gamgee says:

    5 stars
This was so refreshing! Perfect for hot summer days. 🍉💚

    1. 5 stars
Absolutely! I made this last week and it was a lifesaver. So good! 😋💦

    2. 3 stars
Looks good, but won’t the honey make it too sweet? 🤔

  53. 4 stars
Awesome recipe, but I used lime juice from a bottle. Still tasty!

  54. User avatar janyce.cole72 says:

    4 stars
Ain’t gonna lie, I didn’t have mint so I skipped that part. Still turned out good!

  55. User avatar gabriel.osinski56 says:

    3 stars
Is it really healthy? I don’t see how honey helps.

    1. User avatar jaime.will says:

      3 stars
I was wondering the same thing! Honey is sweet, but can be bad too if too much. Is watermelon that healthy?

    2. User avatar Clemmie Berge I says:

      4 stars
I think honey adds flavor and some health benefits, but it’s still sugar. Just don’t overdo it! Looks refreshing!

  56. User avatar augusta.schultz6 says:

    2 stars
Not good. It turned out too watery for me. I think I added too much ice. 😩

    1. User avatar noelle.toy66 says:

      3 stars
I think the ice is key to keeping it cool, but yeah, too much can ruin it. Maybe add a bit less ice and more watermelon next time! Good luck! 👍

    2. User avatar Raeann Gislason says:

      4 stars
Sorry to hear it turned out watery! Maybe try less ice next time? Love the idea of this cooler though! 😊

  57. User avatar karolyn.wiza78 says:

    5 stars
My kids loved this! Super easy to make too.

  58. User avatar fiona.weimann17 says:

    3 stars
Not bad, but I feel like I could make it better myself.

  59. User avatar gertrude.kautzer5 says:

    5 stars
Watermelon + lime = love! Def making again!

    1. 5 stars
Absolutely! I love how refreshing this drink is. Perfect for summer!

    2. 2 stars
I dunno, do u really think it’s that great? Seems kinda basic to me.

  60. User avatar alden.leannon2012 says:

    3 stars
Tried this but it was too sweet for my taste. I think it needed less honey.

  61. User avatar Loonquawl and Phouchg says:

    4 stars
I forgot the honey at first (oops), and it was still tasty but way too sour. Honey is important here.

    1. 3 stars
I think sour can be fixed with more watermelon? Like add more fruit and maybe less lime juice. Honey is good but idk if it’s “important” important. Mine was okay without it tbh.

    2. User avatar kindra.purdy50 says:

      5 stars
Haha I did the same thing—forgot the honey at first. I was like “why is this so sharp?!” Adding the honey after made it perfect. Great call.

  62. User avatar anonymous_hacker says:

    3 stars
Not sure about the “ice cubes” amount—when I blended, it got frothy and sort of foamed up. Maybe chill the glasses first?

  63. User avatar Thufir Hawat says:

    2 stars
Way too sour for me. I used 2 limes but maybe they were extra tangy? Next time I’ll double the honey or use less lime juice.

  64. User avatar Marquis Rippin MD says:

    2 stars
How do you even cut a watermelon? I always struggle with that part.

  65. 4 stars
Super easy to make! I didn’t have honey, so I used sugar instead. Still tasted great!

  66. User avatar doretta.okeefe64 says:

    3 stars
Can you use lemonade instead of lime? Asking for a friend.

    1. User avatar guy.jacobs1 says:

      4 stars
I think lemonade would make it sweeter, but it’s worth a try! My friend did it once and loved it.

    2. User avatar gaye.bernhard says:

      2 stars
Nah, that’s going to taste weird. Lime is tart, lemonade is sweet. Just stick to lime!

  67. User avatar Shaddam Corrino IV says:

    5 stars
Watermelon cooler for the win! Can I sub the honey with sugar? Asking for a friend.

    1. User avatar Oolon Colluphid says:

      5 stars
Absolutely, sugar works great too! Just adjust the amount to your taste. Enjoy!

    2. User avatar annika.schultz1955 says:

      3 stars
I dunno, sugar might change the taste a bit, honey seems better. Just saying…

  68. User avatar shaniqua.nicolas58 says:

    5 stars
5 stars, my kids loved it!!!

  69. User avatar amal.heathcote49 says:

    2 stars
I don’t get why you put honey in it. Watermelon is sweet enough!

  70. User avatar earlene.zieme1993 says:

    4 stars
Really good, but I think 2 tbsp honey is a bit much if your watermelon is already sweet. Next time I’ll start with 1 tbsp and adjust.

  71. User avatar Chi Spurger says:

    1 star
Okay but why use mint leaves? I hate that stuff, it ruins everything.

    1. User avatar Falmer Spellsword says:

      3 stars
Mint is like the best part tho! But everyone has different tastes, I guess. Just don’t ruin it for the rest of us! 😂

    2. User avatar Mrs. Mari Swift says:

      4 stars
I think the mint adds a refreshing flavor! But if you don’t like it, just skip it. The cooler will still taste great!

  72. User avatar willy.oconner8 says:

    4 stars
Made this for a summer get-together and it was a hit. I used a little extra mint on top and it looked fancy.

  73. 4 stars
I added some soda water to make it fizzy! Yum!

  74. User avatar everett.luettgen93 says:

    2 stars
Boring… I know it’s healthy, but it tasted kinda plain. Would’ve liked something like ginger or a pinch of salt.

  75. User avatar ferne.dickinson says:

    5 stars
I made it exactly like the recipe and it turned out super smooth. Mint on top is such a nice touch.

  76. 3 stars
I’m not sure about the “Thai” part… it’s just watermelon, lime, honey, and ice, lol. Still tasty though.

  77. User avatar rickiestmorty says:

    4 stars
Just 2 ingredients? I thought we needed water. Glad I was wrong! 🙂

  78. User avatar janeth.koepp says:

    2 stars
It was okay, but I expected more flavor. Kinda bland tbh.

  79. 5 stars
    GREAT!!! 10 outta 10

  80. User avatar michelle.schoen1957 says:

    5 stars
so easy omg. i added extra mint and it was like spa water but better

  81. User avatar olin.mraz59 says:

    3 stars
Is honey really necessary? I think watermelon is sweet enough. Just sayin!

  82. User avatar Pamella Gaylord says:

    5 stars
This drink is soooo refreshing! Perfect for hot summer days. Thanks for sharing!

  83. 5 stars
This is ridiculously refreshing. The lime + honey combo really makes the watermelon pop—perfect for hot days.

  84. User avatar clifford.schinner14 says:

    5 stars
So refreshing! The watermelon + lime combo tastes super bright, and the honey rounds it out nicely. I added a little extra mint and it was gone instantly.

  85. User avatar Oolon Colluphid says:

    5 stars
I love how fast this is. Literally blender, pour, mint. The flavors are clean and bright, and the ice keeps it cold without watering it down too much.

  86. 5 stars
Watermelon is a fruit! Who knew! LOL! This is awesome!

    1. User avatar aubrey.stark39 says:

      4 stars
I always thought it was a vegetable. But whoa, this drink sounds refreshing!

    2. 5 stars
Haha, right?! Watermelon is nature’s candy! Can’t wait to try this cooler!

  87. User avatar lucio.mann1972 says:

    4 stars
Thx for the recipe! My kids loved it.

    1. User avatar pilar.cummerata says:

      5 stars
I’m so glad your kids enjoyed it! It’s such a refreshing drink for hot days!

  88. User avatar kenisha.larkin1 says:

    5 stars
This is soooo refreshing! Perfect for summer days! 😍

  89. User avatar deanne.rutherford46 says:

    2 stars
Not gonna lie, it’s just juice with ice. Kids loved it but I expected more wow factor. Still, the lime makes it better than plain watermelon.

    1. User avatar sade.mills52 says:

      4 stars
I actually think “juice with ice” is exactly what makes it refreshing—especially for kids. The lime + honey sounds like a nice balance, and the mint garnish helps it feel fancy.

    2. User avatar Baby Goron says:

      3 stars
We tried this and… yeah it was good, but I don’t get the Thai part lol. My blender kept it a little chunky even after blending, so next time I’ll strain or add a bit more lime.

  90. User avatar shara.padberg82 says:

    5 stars
Genuinely delicious. Tastes clean, not syrupy. Mint on top is the perfect touch. Making again for sure!

  91. User avatar bradly.walsh says:

    2 stars
Too watery for me. I blended it too long maybe, but it didn’t feel thick like I hoped.

    1. 4 stars
Hmm I get you—this one can turn watery depending on how much ice you use and how long you blend. Try using less ice, and blend just until smooth (like 30–45 seconds). Also chill the watermelon first so it’s not adding extra liquid.

    2. User avatar may.willms34 says:

      3 stars
I think you overblended it, yeah. But also the watermelon might have been really juicy—mine was thicker when I used sweeter, colder watermelon and barely pulsed it. Quick fix: add a bit more honey or even a couple extra ice cubes to thicken it up.

  92. 1 star
This recipe is just watermelon juice and lime! Nothing special. 😒

Come on, sometimes simple is best! It’s all about the flavors. Plus, honey adds a nice touch!

I think it’s refreshing! Watermelon and lime is a classic combo, even if it seems simple. 🍉🍋

Too much lime! Made my mouth pucker! xD

I actually love the lime! It gives it a nice kick. Maybe try less next time?

Yea but watermelon is sweet, like why so much lime? 🤔

I’m not really a fan of anything cold. But this one was surprising good!

That’s awesome to hear! I was skeptical about cold drinks too, but this one won me over. Perfect for summer!

Yum! But where do I get mint leaves? Stores don’t have them here!

Yum! but my kids didn’t like mint. Next time I’ll skip it. Still, a good drink!

Ok but the amount of lime juice is unclear… like 2 limes? or 2 tbsp? I guessed and it came out a bit too sour for my liking.

Not gonna lie, mine didn’t blend as “smooth” as I expected—more like a thick smoothie. Maybe my watermelon was too watery?

    1. 5 stars
That sounds like you’re super close! If it came out thicker, it’s often because there was either less liquid than expected or the ice didn’t fully break down. Watermelon can be really watery vs. more firm/less juicy depending on the fruit—so try blending longer and/or adding a splash of water (or extra lime juice) until it hits the smooth consistency you want.

Pretty good, but 2 tbsp honey felt a bit too sweet for me. Next time I’ll do 1 tbsp or use less if the watermelon is already ripe.

Mine separated a little after blending, like watery on the bottom. Still tasted great though—just not as pretty.

Simple but classy. The mint garnish makes it feel fancy for something that takes like 5 minutes. My friends asked for the recipe.

So good! I didn’t have mint so I used basil (yes, I know). Weirdly worked, and the aroma was nice. 10/10 would make again.

I substituted agave for honey and it was fine. Would definitely make again, especially for brunch.

So refreshing! The watermelon + lime combo tastes super bright, and the honey makes it nicely balanced—not too sharp.

This was super refreshing! The honey makes it taste perfectly balanced with the lime—like a legit Thai-style cooler. I added extra mint and it smelled amazing.

Not bad, but my honey didn’t fully mix and it was kinda stringy at first. Also i think i put too much lime? Still drinkable.

    1. 5 stars
Thanks for sharing! I’ve had honey go stringy too—usually warming it up for like 10 seconds (or stirring it in first) helps it blend smoother. Also, 2 limes can vary a lot by size, so your hunch makes sense. 😄

    2. 3 stars
Hmm I think if it was stringy, that means the honey wasnt dissolved, not the lime. Maybe you should add honey after blending a bit? Also watermelon is watery, so too much lime might overtake it. Still drinkable tho is a win.
