Ingredients
- 4 baking potatoes large,
- 1 lb ground beef
- 1 onion chopped
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can diced tomatoes 14 oz, drained
- 1 can green chilies 4 oz, diced
- 1 cup shredded cheddar cheese
- 1/4 cup cilantro chopped fresh
- sour cream for serving
- Green onions sliced, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Scrub the potatoes clean and pierce several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
- While the potatoes are baking, heat a large skillet over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and cooked through, breaking it up into crumbles. Drain any excess grease.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Add the diced tomatoes and diced green chilies. Cook for 5 minutes, until heated through.
- When the potatoes are done, remove them from the oven and cut a slit lengthwise in the top of each potato. Gently squeeze the sides to open up the potato.
- Divide the beef mixture evenly among the potatoes, spooning it into the slit. Top each potato with shredded cheddar cheese.
- Return the potatoes to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Sprinkle with chopped fresh cilantro.
- Serve the loaded baked potatoes with sour cream and sliced green onions, if desired.
I think I used too much cilantro. My dog didn’t like it either.
What a fun twist on baked potatoes! I added some jalapenos, and it was fire! 🔥
My husband said he could eat these every day! Definitely a winner!
Awww yeah, loaded potatoes! I just put sour cream on top and it was a party in my mouth 😂
Yummy!! My kids loved them, even my picky eater. But can you use chicken instead of beef? Asking for a friend!
I dunno if chicken would taste the same. Beef is beef! But hey, try it if you want.
Chicken could work! Just cook it till it’s good, right? Sounds delish!
I don’t know… the flavors were kinda bland. Maybe I should have added more spices?
Whoa, I was skeptical about putting beef in a potato but this is genius! My new favorite dish!
These were AMAZING!!! My family gobbled them up. Will definitely make again!
These were a hit at our family dinner! So cheesy and filling. Definitely making again! 😍
I don’t know, mine didn’t turn out like the picture. Maybe I did something wrong. They tasted ok though.
Not bad. I used dried cilantro by mistake and it tasted kinda flat. Also I only had mozzarella, not cheddar, so it didn’t get that same flavor.
5 stars. I make these every winter. Pro tip: let the beef mixture simmer a bit longer so it thickens—then it fills the potato way better. My family asked for it again today lol.
I dunno if my potatoes were too big, but it took FOREVER to cook. Should’ve checked them sooner!
I followed the recipe but it was too spicy for my kids. Maybe less chili next time?
These are absolutely delicious! My family devoured them in minutes. The flavors are on point! ⭐⭐⭐⭐⭐
These turned out amazing! My whole family loved them! Will definitely make again.
So simple and delicious! 😍 Perfect for weekday dinners!
Absolutely love this recipe! Just made it last night and it was a hit! Thanks for sharing! 😋
This recipe is a total game-changer! My family loved it. Will definitely make it again.
Kinda weird to pierce the potatoes and put them on the oven rack—mine stuck a little. Also I don’t have cilantro so I used parsley; tasted okay but not the same vibe.
I don’t like beef, so I subbed it for chicken. It turned out great!
Nice substitution! I think chicken makes it lighter. Gonna try this for sure!
I didn’t have green chilies, so I used jalapeños. Still turned out delish!
These turned out insanely good—crispy potato edges with that spicy beef. I used smoked paprika and added a tiny splash of hot sauce and omg. Next time I’m doubling the cheese 😄
I tried something similar but my potatoes didn’t get crispy on the edges—maybe I didn’t bake long enough. Do you parboil first or just bake straight on the rack?
Love seeing this kind of result! Crispy edges + spicy beef is the dream. Doubling the cheese is a completely valid science experiment 😄
I followed the recipe but it took way longer than 60 min. Potatoes were still hard. Disappointing.
I tried this and it was okay, but a bit too spicy for me. Maybe a little less chili powder next time?
I just love cheese! More cheese makes everything better! Yumm 😋
I followed it pretty closely, but my potatoes took closer to 70 minutes. Still worth it though—cheese got super melty. Cilantro on top is a must.
Can i omit the ground beef? Maybe use beans instead? Just wondering if that would work.
These are dangerous—so good. The cumin/chili combo really makes the beef pop, and the cheese melt is perfect. I skipped cilantro once and it still worked, but it’s better with it.
Potatoes are just carbs, why wouldn’t ya just go for a salad? Too much effort for a potato. Just fry it. 😂
Pretty straightforward. My potatoes took closer to an hour than 45 minutes, but they were tender. Next time I’ll add a little hot sauce to the beef mix for extra kick.
