Ingredients

- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp garlic minced
- 1/2 tsp ginger minced
- 2 Green onions chopped
- 1 tbsp sesame seeds
Instructions
- Cook the udon noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until golden brown and crispy on all sides. Remove from the skillet and set aside.

I left out the garlic and it still tasted fine. I think you can do what you want with this recipe.

Actually, most soy sauce is made without fish! It’s totally vegetarian. You might be thinking of fish sauce, which is different. Don’t worry, this recipe is meat-free!

Only thing… I had no rice vinegar so I used lemon juice and it tasted kinda off. Will make again when I restock.
Good note! If anyone’s out of rice vinegar, I’ve found apple cider vinegar is closer than lemon. Still not exact, but way less zesty.
Yeah, rice vinegar has a pretty specific mellow tang. Lemon juice can be sharper/bright in a different way—totally believable it tasted “off.” Glad you’ll try it again!
