Ingredients
  

  • 4 cups sweet potatoes mashed
  • 1/2 cup granulated sugar
  • 2 eggs beaten
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup brown sugar packed
  • 1/2 cup all-purpose flour
  • 1/4 cup butter melted
  • 1 cup mini marshmallows

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together mashed sweet potatoes, granulated sugar, eggs, milk, 1/4 cup melted butter, vanilla extract, and salt. Spread evenly in a 9x13 inch baking dish.
  • In a separate bowl, mix together brown sugar, flour, and 1/4 cup melted butter until crumbly. Stir in mini marshmallows. Sprinkle mixture over sweet potato mixture.
  • Bake for 30 to 40 minutes, or until topping is golden brown.

    Tried it as written. Mine took closer to 45 min to get fully browned, but it still turned out great. Next time I might add a pinch more salt to balance the sweetness.
