Ingredients
  

  • 4 pieces chicken thighs bone-in, skin-on
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked
  • 1 cup long-grain white rice rinsed
  • 1 can coconut milk full-fat, 400ml
  • 1 cup chicken broth low sodium
  • 1 can black beans drained, 400g
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper ground
  • 2 tablespoons cilantro fresh, chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub the mixture over chicken thighs.
  • In a large ovenproof pot or Dutch oven, heat some oil over medium-high heat. Sear the chicken thighs skin-side down until browned, about 5 minutes. Remove and set aside.
  • In the same pot, add rinsed rice, coconut milk, chicken broth, and beans. Stir well.
  • Place the chicken thighs on top of the rice mixture. Cover and bake in the preheated oven for 25-30 minutes.
  • Remove from the oven and let it rest for 5 minutes. Garnish with fresh cilantro before serving.

    Pretty good, but my chicken didn’t crisp as much as I wanted. I think I should’ve seared longer or used hotter heat. Flavor is still solid though—smoked paprika is doing the heavy lifting.

      Yeah, totally agree—skin-on thighs can be stubborn. Next time I’d sear closer to 7–8 minutes and make sure the pot is really hot before the chicken goes in (no crowding either). If it still won’t crisp, you can broil for 2–3 minutes at the end—just watch it.

    Why does it say to rinse the rice? I did and it didn’t seem to make sense. The rice coulda been better without rinsing. Just saying.

    Made this tonight—so flavorful. The coconut rice is creamy without being too sweet, and the paprika kick is perfect. I used boneless thighs and it still worked great (just a few mins less in the oven). Will absolutely repeat.

      I tried it but my coconut rice turned out kinda watery 😕 maybe I didn’t rinse the rice enough. Also I used regular paprika (not smoked) and it felt less “kick”y. Still edible though!

    Not bad, but 25-30 minutes felt a little short for bone-in thighs in my oven. I had to add like 10 more minutes. Maybe my pieces were bigger, but keep an eye on doneness.
