Ingredients
  

  • 1 cup graham cracker crumbs crushed finely
  • 1/4 cup sugar for the crust
  • 1/4 cup unsalted butter melted
  • 1 box chocolate cake mix follow the box instructions
  • 12 large marshmallows one for each cupcake
  • 1/2 cup mini chocolate chips optional, for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Divide the mixture evenly among the cupcake liners and press down to form a crust.
  • Prepare the chocolate cake mix according to the box instructions and fill each cupcake liner about 2/3 full with the batter.
  • Bake in the preheated oven for about 18 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cupcakes from the oven and place a large marshmallow on top of each one. Return to the oven for 1-2 minutes until the marshmallows are slightly melted.
  • If desired, sprinkle mini chocolate chips on top of the marshmallows while they are still warm. Let the cupcakes cool completely before serving.

    Mine stuck to the liners a little. I let them cool completely, but still… maybe the marshmallow got too hot? Otherwise flavor was awesome, especially the crust.

      Mine never stuck… are you sure you didn’t bake them too long? 18 minutes plus 1-2 mins on marshmallow feels like it could overcook. I might also try chilling after the marshmallow step so it firms up fast. Flavor is great though, that crust hits.

      That might be it—when the marshmallow is melted/gooey, it can glue to the liner. Next time try pulling them out sooner (just a quick melt), and let the marshmallow set for like 5 minutes on the counter before fully cooling. Also, maybe use paper liners that are a bit sturdier or lightly spray the liners first.

      I actually used the full amount and it was fine? Maybe it depends on the brand of chocolate cake mix. Also I didn’t melt the butter all the way once and it still turned out… kinda gritty though 😅
