Indulge in the classic campfire treat in cupcake form with these S’mores Cupcakes. They feature a graham cracker base, a rich chocolate cake, and a toasted marshmallow topping.
Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Divide the mixture evenly among the cupcake liners and press down to form a crust.
Prepare the chocolate cake mix according to the box instructions and fill each cupcake liner about 2/3 full with the batter.
Bake in the preheated oven for about 18 minutes or until a toothpick inserted into the center comes out clean.
Remove the cupcakes from the oven and place a large marshmallow on top of each one. Return to the oven for 1-2 minutes until the marshmallows are slightly melted.
If desired, sprinkle mini chocolate chips on top of the marshmallows while they are still warm. Let the cupcakes cool completely before serving.
