Ingredients
  

  • 8 ounces lo mein noodles
  • 1 pound shrimp peeled and deveined
  • 2 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1/2 cup carrots sliced
  • 1/2 cup Bell peppers sliced
  • 1/2 cup mushrooms sliced
  • 1/2 cup snow peas sliced
  • 1/4 cup soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes
  • Green onions sliced (for garnish)

Instructions
 

  • Cook the lo mein noodles according to package instructions. Drain and set aside.
  • In a wok or large skillet, heat the vegetable oil over high heat.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove shrimp from the pan and set aside.
  • In the same pan, add the sliced carrots, bell peppers, mushrooms, and snow peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  • In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, sesame oil, and red pepper flakes.
  • Return the shrimp to the pan with the vegetables. Add the cooked noodles and sauce mixture. Stir-fry for an additional 2-3 minutes until everything is well coated and heated through.
  • Garnish with sliced green onions and serve hot.

      I wanna try this but I’m skeptical about 3-4 minutes for the veggies. Carrots usually need longer unless they’re super thin. Also I’m confused why it says cook noodles then drain—don’t they sometimes need a splash of sauce/water to not dry out?

      Ahhh yeah, clumpy lo mein is usually from skipping the rinse or not tossing right away. Next time rinse briefly + toss with a little oil so they don’t stick—glad the flavor still came through!
