Ingredients
  

  • 1.5 kg leg of lamb bone-in
  • 2 tbsp olive oil extra virgin
  • 4 cloves garlic minced
  • 1 tbsp rosemary fresh, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and pepper.
  • Rub the mixture all over the leg of lamb, ensuring it’s evenly coated.
  • Place the lamb in a roasting pan and put it in the preheated oven.

    180°C seems a little low? My lamb browned slow, but the inside was still juicy. Next time I might crank to 200°C for the first 20 minutes.

      Lol I’d freak out too 😅 60°C sounds scary until you remember you’re aiming for medium-rare. If it turned out tender and it was right on temp, you’re good. Resting also helps a ton.

    Good flavor, but I think 1.5 hours was a bit short for my oven. I ended up closer to 1 hr 45 and it still hit the temp I wanted. Still, the seasoning ratio is solid.
