Ritzy Cookies with Peanut Butter Filling are the ultimate treat for those who crave a perfect balance of buttery sweetness and savory peanut butter. These cookies are a fun and indulgent twist on traditional sandwich cookies, with a rich, crispy cookie base and a creamy, smooth peanut butter center. The combination of flavors and textures makes them irresistible, whether you’re enjoying them as a snack or serving them at a party or gathering.
The magic of Ritzy Cookies lies in their simplicity. The outer cookies are made from a buttery dough that’s rich and slightly crisp, giving them a satisfying texture. The flavor is subtly sweet and pairs perfectly with the creamy peanut butter filling that’s sandwiched between two cookies. The peanut butter adds a savory depth to the sweetness of the cookie, creating a flavor contrast that’s both indulgent and comforting.
Making Ritzy Cookies with Peanut Butter Filling is easy, and the result is a batch of cookies that are as delicious as they are visually appealing. The cookie dough is prepared with ingredients like butter, sugar, and a hint of vanilla, which creates a rich, flavorful base. The peanut butter filling is simple to make as well, with creamy peanut butter, powdered sugar, and a touch of vanilla to make it smooth and spreadable.
The cookies can be shaped into round discs and baked until they are golden brown, allowing the texture to remain crisp. Once they’ve cooled, a generous spoonful of the peanut butter filling is added between two cookies, creating a sandwich of sweet and savory goodness.
These Ritzy Cookies with Peanut Butter Filling are highly customizable. You can add chocolate chips to the cookie dough or drizzle melted chocolate over the finished cookies for an extra layer of sweetness. If you prefer a more decadent touch, sprinkle the cookies with sea salt to complement the rich peanut butter flavor.
Perfect for satisfying any sweet tooth, these cookies are a hit for cookie lovers and peanut butter enthusiasts alike. Whether served at a holiday party, packed in a lunchbox, or enjoyed with a glass of milk, Ritzy Cookies with Peanut Butter Filling will quickly become a favorite treat in your baking repertoire.

- Using a butter knife, spread peanut butter on one side of a Ritz cracker.
- Place another Ritz cracker on top of the peanut butter to form a sandwich.
- Dip the sandwich cookie into the bowl of melted candy melts using a fork, covering the entire cookie.
- Place the coated cookie onto wax paper.
- Let cool for about 30 to 45 minutes.
Could you use chocolate chips instead? I didn’t have candy melts and ended up with a thicker coating. Kinda worked, but not the same vibe.
1. Melt. 2. Sandwich. 3. Dip. 4. Wait. Super simple. Five stars.
These are dangerously easy. I did 30 seconds for the melts and stirred once—came out smooth. The PB + Ritz combo is weirdly perfect.
Honestly I’m with you—these are basically foolproof. I did the same short melt + one stir and they came out glossy smooth too. The PB + Ritz combo is such a “why does this work?” moment.
😐 Meh.
These are super easy to make and taste incredible! My kids love them!
Mine seized a bit in the microwave (oops—my candy melts were older). Still tasted fine, just looked kinda chunky.
Ahh that chunky look happens when the candy melts are a bit past their prime—still, good to hear it tasted fine! Next time try stirring every 15 seconds so it doesn’t seize.
Seized?? Mine would’ve turned into rock lol. I think microwave timing is everything—40 sec seems short/long depending on the wattage. Did you stir at all? Mine always turns out smooth with fresh melts.
These cookies are the bomb! Super easy to make and so yum 😋
I tried these and they turned out great too! Thanks for sharing! 😍
Not gonna lie, I made these once and everyone asked for the recipe. Super easy even when you’re not “baking” for real.
Are you suer this is correct? It just seems wrong to me.
I think it’s right! Ritz crackers and peanut butter are a classic combo. Give it a try!
No way! Ritz and candy melts? That sounds gross! How can that even work?
I don’t get why people use candy melts—why not just chocolate? Also, letting them cool 45 minutes feels kinda long for a snack.
I love the idea, but 20 melts felt like too many/too little? My batch came out clumpy because I probably didn’t measure right. Still cute!
Tasted okay but the melting took forever. Maybe I did it wrong? Who knows.
I had the same issue! It can be tricky sometimes. Make sure the microwave isn’t on too high power next time!
Yeah, it took me a while too, but they were worth the wait! Just don’t give up. 😊
What can I use instead of candy melts? Maybe chocolate chips?
Ritz crackers and peanut butter? Sounds weird but actually so good! Who knew?
I know right? It’s like a gourmet snack! Can’t believe I never tried it before. Yum!
The wax paper stuck to mine a bit. Next time I’ll let them cool longer or use parchment. Flavor is still on point.
Ugh, wax paper can be such a pain. Parchment is the move—especially with candy melts. Glad the flavor still nailed it!
Maybe don’t dip so long? I think mine stuck too but I figured it’s because I didn’t spray the wax paper (not sure tho). How long did you cool before touching?
Ritz crackers are so salty! It kinda ruins the sweet candy taste.
I think the saltiness actually balances the sweetness! Just my opinion.
I don’t know, it seems kinda weird to put peanut butter between crackers. Isn’t that just a sandwich? 🤔
I’m not gonna lie, I thought Ritz + peanut butter would taste too salty, but the candy coating saved it. Really good snack.
Who even thought of this? Ritz for dessert? 🤔
I tried them exactly as written and they came out pretty good, but my candy melts seized a little in the microwave. I’d recommend shorter bursts and stirring.
I tried making these, but the candy melts didn’t melt right. They’re just not right.
These cookies are brilliant! The sweet and salty combo is just perfect. My kids loved them!
I tried dipping but my fork left lines and the coating dripped everywhere. Messy, but the kids ate them anyway 😂
Aw man—yeah the fork grooves can leave those little streaks. Next time try a lighter dip (quick dunk, lift straight up) and make sure the candy melts aren’t too thick—maybe add a tiny bit more melts or stir well so it flows smoother.
Made these for my kids and they went crazy for them! Will definitely make again. Thanks, Maurice!
Why peanut butter though—would Nutella ruin it? Like, I’m thinking swap and go. (I might try it anyway.)
These are dangerously good. The sweet + salty combo hits every time, and the candy melts make them look fancy for basically no effort.
Great for parties! I usually just use any cracker I have.
I love how easy these are! Perfect for when friends come over.
This recipe is awesome! I added some sprinkles on top of the chocolate 🍪
These are dangerously easy. The peanut butter + candy coating combo is chef’s kiss. I might add a tiny pinch of salt to the PB next time—just to make them pop.
So easy to make! I made these for my book club and they were a hit!
Too sweet for my taste. I don’t think I’ll make them again.
I didn’t have candy melts, so I used chocolate chips instead. Still turned out great!
Awesome! I’m glad it still worked out for you! Chocolate chips sound yummy too.
I’ve heard chocolate chips don’t melt the same way. Are you sure it turned out great?
Super easy and fun to make! My friends loved them at the party!
Glad to hear it! These are a hit at any gathering. I can’t believe how easy they are to make! 😍
Wut? Ritz and chocolate? Sounds like the worst combo ever.
OMG! Simply delicious! I couldn’t stop eating them 😋
I tried making these but the melted candy glued everything together. Total disaster!
Would not recommend at all.
I don’t think it’s a disaster! Just needs practice. Maybe less candy next time? Don’t give up!
Sounds like you might have used too many candy melts! I had a similar issue once. You just need to coat them lightly! Try again, they can be delicious!
Just okay. I expected more flavor or something. Maybe I did it wrong.
I think you might need more candy melts! They really make a difference in taste. 🥴
I don’t get how these could be flavorless! It’s got peanut butter and chocolate! Maybe you used old ingredients?
Not sure about mixing RITZ crackers with sweets. Sounds weird to me.
These reminded me of my childhood snacks. Nostalgic! 💖
Too much work for a cookie, I just eat the crackers with peanut butter.
Who needs all that extra?
