Potato Soup

August 30, 2023

When the weather turns chilly, there’s nothing quite like a warm bowl of potato soup to comfort and satisfy. This classic dish is hearty, creamy, and bursting with flavor, making it the perfect meal for a cozy evening at home. Whether served as a main course or a side, potato soup is a beloved dish that never goes out of style.

The beauty of potato soup lies in its simplicity. The key ingredients – potatoes, onions, garlic, and broth – come together to create a rich and satisfying base. You can go the creamy route by adding milk or heavy cream, or keep it lighter with broth-based versions. The potatoes break down slightly as they cook, creating a naturally thick and velvety texture that is both comforting and indulgent.

What makes potato soup so versatile is the ability to add your own twist. Some like to throw in a little bacon for that savory crunch, while others may add cheese for an extra layer of richness. Fresh herbs like thyme or parsley bring a touch of freshness to balance the creamy potatoes, and a dash of black pepper and salt rounds it out perfectly. For extra flavor, some recipes even call for sautéing the onions and garlic in butter or olive oil before adding the potatoes and liquid.

Another great thing about potato soup is its flexibility. You can use any type of potato, from russet to Yukon gold, depending on your preference. You can even make it ahead of time – it tastes even better the next day as the flavors continue to meld. Plus, it freezes well, so you can enjoy it whenever you need a quick and satisfying meal.

With its creamy texture, comforting flavor, and endless customization options, potato soup is the ultimate comfort food that will always hit the spot.

Potatoes in soup? Isn’t that in the name already? Lol.

  2. User avatar valarie.rodriguez says:

    3 stars
Did you really need both milk and cream? Seems like overkill to me.

    1. User avatar mickey.beier says:

      4 stars
I think the cream adds richness! But yeah, it’s a bit much for some. I usually skip one.

  3. User avatar Edmond Larkin says:

    5 stars
Honestly, I thought potato soup would taste bland but the onion + garlic carried it. My whole kitchen smelled good while it cooked.

  4. 3 stars
I followed it exactly and my soup was kinda thick? Like more stew than soup. Maybe my potatoes were bigger than “medium.” Any tips to thin it out?

  5. User avatar Milan Quitzon says:

    2 stars
I kind of messed it up. Shouldn’t you add milk before blending? Idk. It was okay.

    1. User avatar Caridad Bechtelar Sr. says:

      4 stars
Yeah, adding milk before blending would make it creamier! But no worries, it still sounds good! Just try again next time.

  6. User avatar Milton Marvin DVM says:

    3 stars
Not bad, but I think 20 minutes isn’t enough for bigger potato chunks. Mine weren’t fully tender until closer to 30. Otherwise solid.

  7. User avatar conchita.beahan83 says:

This is like a hug in a bowl! So comforting on a cold day. I could eat it all week!

    1. User avatar tory.bruen19 says:

      2 stars
I dunno, it sounds good but isn’t heavy cream kinda too much? 😕 I prefer lighter soups.

    2. User avatar andy.bergnaum says:

      5 stars
Totally agree! It’s like a warm hug on a chilly day. Perfect for winter nights!

  8. User avatar cyrus.streich32 says:

    2 stars
Too many potatoes for my taste. I prefer my soup less chunky.

    1. 4 stars
I totally get that! You could try making a smoother version by blending it more. Less chunks, more yum! 🍲

  9. 2 stars
How many potatoes? I used too many, it was too thick. 😩

    1. User avatar owen.mitchell20 says:

      5 stars
The recipe says 4 medium potatoes. Maybe try that next time? Good luck! 🍲

  10. 4 stars
I didn’t have chicken broth, so I used vegetable broth and it still worked! Not the same but still good.

  11. 5 stars
Made this tonight and it’s ridiculously comforting. I mashed it less than usual so it stayed a little chunky—perfect. The thyme with the cream is such a good combo.

  12. User avatar Douglas Konopelski says:

    1 star
Took me forever to cook. The potatoes just wouldn’t become tender! Maybe my pot is bad.

    1. User avatar rory.greenfelder71 says:

      3 stars
5 minutes wouldn’t be enough to steam em. You sure you didn’t leave em in longer? 🤔

    2. 4 stars
Maybe try cutting the potatoes smaller next time? That helps them cook faster. Good luck!

  13. User avatar terminatorXYZ says:

    4 stars
This is the best potato soup I’ve made. But I put the garlic in with the onions and it burned a little—had to start over. Learn from my mistake haha.

    1. User avatar katerine.schinner78 says:

      5 stars
Haha I’m glad you caught it before it got too bad 😅 Burning garlic is the worst—next time I’ll add it a little later so it doesn’t scorch. Thanks for sharing!

  14. 5 stars
Made this last night and it turned out so creamy without being too heavy. The thyme really shows up in a good way—will definitely make again.

    1. User avatar bryant.borer87 says:

      5 stars
Yes! Creamy but not heavy is exactly what I’m looking for—glad the thyme came through too. 😄 What potato kind did you use (russet or Yukon gold)?

  15. 5 stars
Potatoes, milk, and cream… how could it go wrong? Love it!!

  16. User avatar hilde.graham says:

    5 stars
This soup is a lifesaver during winter! Super cozy. Love it!

  17. User avatar mandy.hahn44 says:

    3 stars
It was okay, but mine turned kinda gluey when I mashed too much. Could be user error, but if you like smooth soup, watch the consistency—add more broth if it gets thick.

  18. 3 stars
Didnt work for me. Potatoes were still hard after 20 mins. What did I do wrong?

    1. 4 stars
Maybe your potatoes were too big? They need to be diced smaller for faster cooking!

  19. User avatar alphonso.cassin1974 says:

    4 stars
The steps are clear and the flavor is nice, but I wish it said how much oil to use in step 1. I ended up guessing and it was fine, just annoying.

    1. User avatar kesha.hermiston33 says:

      4 stars
Totally agree—Step 1 saying “heat some oil” is super vague. Even a quick “1–2 tbsp” would’ve saved me from guessing 😅 Glad it still turned out fine though!

    2. User avatar America Conn says:

      3 stars
I actually just used a splash of olive oil and that’s how my grandma did it. “Some oil” is fine—potatoes always sort it out. But yeah, measurements would be nicer.

  20. User avatar elmer.hegmann1986 says:

    4 stars
So good, but my kids were like ‘ew soup!’ Guess they not fancy. 😅

  21. User avatar keshia.davis14 says:

    5 stars
So easy to make! I added some bacon bits on top for extra flavor. Yum!

    1. User avatar bryon.schamberger says:

      5 stars
Bacon bits sounds so good! I gotta try that next time. Did you put a lot? 🥓

    2. User avatar ShanksOnePiece says:

      2 stars
This soup is just potato and some milk, right? I dunno how that can be so easy, seems too simple…

  22. User avatar Draugr Thrall says:

    5 stars
5 stars! This recipe is a keeper. Great for winter nights!

  23. User avatar oPandariaNo says:

    2 stars
I thought this was going to be good, but it was actually bland. I added more spices but still missing something.

  24. User avatar barrett.spencer1987 says:

    4 stars
Easy to make, but I feel like it needs more flavor. I added a bit of cheese on top to make it better. Not bad, but not great!

  25. User avatar tissues_with_issues says:

    5 stars
This soup is so creamy and delish! Perfect for winter nights. My family loved it!

  26. 5 stars
This potato soup is AMAZING! So creamy and flavorful. Will make it again for sure!

    1. User avatar tony.streich2000 says:

      5 stars
I completely agree! This soup is so rich and satisfying. I can’t get enough of it.

  27. User avatar jerome.bernhard17 says:

    3 stars
Mine turned out a bit thick, like mashed-potato soup. I think I simmered too long. Still ate it, but I’d add more broth next time.

  28. User avatar stevie.crona2014 says:

    1 star
Potatoes in soup? No way! I just can’t heleve it. That’s gotta taste weird.

  29. User avatar Ghislaine Kunde says:

    3 stars
I used veggie broth instead and forgot the garlic. Still turned out okay, but not great.

    1. User avatar Hasimir Fenring says:

      4 stars
Veggie broth is a good swap! Garlic does add flavor tho. Glad it worked out somewhat!

    2. 3 stars
Forgot garlic? Isn’t that like pizza without cheese? 😂 But hey, at least it was edible!

  30. 4 stars
Pretty good, but I think 1 cup milk + 1 cup cream is a little too rich for my taste. Next time I’ll cut the cream in half. Still flavorful though.

  31. 5 stars
This soup is super creamy and delicious! My family devoured it.

    1. User avatar zack.medhurst50 says:

      5 stars
I love creamy soups! Your family must’ve loved it, I know mine would! ❤️

  32. User avatar gabriella.bogan says:

    5 stars
Potato soup is life! Love it simple like this, thanks!

    1. User avatar Pasta Fasta says:

      2 stars
Really? I think it’s kinda bland. I’d toss in some cheese or something to spice it up. Just potatoes and broth sounds boring.

    2. User avatar douglass.schuster1 says:

      5 stars
Absolutely! Potato soup is so comforting and easy to make. I often add some bacon bits for extra flavor. Thanks for sharing!

  33. User avatar Humma Kavula says:

    2 stars
This recipe is pretty good, but shouldn’t you put more thyme? I couldn’t taste it at all.

    1. User avatar breanne.weber says:

      2 stars
More thyme? Really? I felt like that was just right. Are you sure you used dried thyme? Maybe it was old?

    2. User avatar claudio.padberg46 says:

      4 stars
I think 1/2 tsp is enough for a soup. Maybe you just need to let it cook longer to develop the flavor?

  34. User avatar florence.hyatt15 says:

    4 stars
    potato??… soup?? tasty!!!!!!!!!!!

  35. User avatar santos.ferry66 says:

    5 stars
Best potato soup ever!!! I used sweet onion and it was amazing. Also, I forgot to garnish with parsley but it still ate like restaurant food.

    1. User avatar Danika Pfannerstill says:

      5 stars
Glad you loved it! Sweet onion is such a good tweak—adds a nice little sweetness. And hey, even without the parsley, “restaurant food” is still a win 😄

  36. User avatar dotty.dickens61 says:

    3 stars
I made this and my kids didn’t eat it. Maybe add more spices next time?

  37. User avatar kerrie.kshlerin1986 says:

    3 stars
I think garlic should have been optional. Too strong!

    1. User avatar loralee.fisher5 says:

      4 stars
I disagree! Garlic gives it a great flavor! Maybe try less next time?

  38. User avatar alane.bednar2009 says:

    1 star
Potato soup? More like potato slop! No flavor, way too bland for my taste. Yuck!

    1. 3 stars
I don’t know what you’re talkin’ about! This soup is good! You must’ve messed it up somehow. Maybe add more salt or something next time?

  39. User avatar NAFO.SUPREMACY says:

    4 stars
Impressive recipe, but I wish it had more vegetables. Maybe add some carrots next time.

  40. 5 stars
Super easy to make, I added some bacon bits and it was delish! Thanks for sharing!

  41. User avatar Lolita Mayert says:

    5 stars
Not gonna lie, it sounded kind of basic. But wow, it actually tastes better than expected. Next time I’ll add a little extra garlic.

  42. User avatar antwan.graham says:

    1 star
Potato soup? More like potato mush! I didn’t like the texture at all. No thanks!

  43. 1 star
Not sure about the thyme. Seemed weird in a soup. Wouldn’t make again.

  44. User avatar ruthanne.corkery11 says:

    2 stars
The instructions are straightforward, but it’s missing directions for quantities of oil. I just guessed and it was fine, but still—why no oil amount?

  45. User avatar dave.pagac50 says:

    3 stars
I don’t get why people love soup. I’m more of a solid food kinda person. This does smell nice tho.

  46. User avatar Wonko the Sane says:

    5 stars
I’m no chef, but I nailed this recipe! Thanks for making it easy!

  47. 2 stars
My garlic burned a little (oops) but I scraped the bottom and continued. Soup still came out okay—could taste the roast garlic though.

  48. User avatar rosa.kuphal says:

    5 stars
Made this last night and it was super cozy. I used a mix of Yukon gold and russet and the texture was perfect after mashing. The thyme + parsley combo is spot on.

  49. 2 stars
I tried this recipe, but my soup was too watery. What did I do wrong?

  50. 4 stars
Pretty good, but I think it needs a bit more salt at the end. I followed the steps exactly and it tasted slightly bland until I adjusted. Also, don’t rush simmer time.

    1. User avatar porter.leuschke says:

      5 stars
Glad you said that—mine always needs a final pinch of salt too. I agree, if you rush the simmer the flavor just doesn’t come together. I usually taste at 15-20 min and then adjust.

  51. User avatar Effrafax of Wug says:

    4 stars
Pretty good base recipe. I used garlic powder instead of fresh (oops—forgot the cloves) and it was still tasty, just a little less aromatic. Next time I’ll do it properly.

  52. User avatar clarence.jones2002 says:

    3 stars
Potato soup is overrated tbh. It’s always just potatoes and milk. Not bad, just not mind-blowing. Could use something like bacon or smoked paprika.

    1. User avatar elden.lockman71 says:

      5 stars
I get what you mean—classic potato soup can be pretty plain. Bacon (or even pancetta) would add a ton of flavor, and smoked paprika sounds perfect. If you mash it a bit less, it also stays more interesting texture-wise.

  53. User avatar Lumberjack says:

    2 stars
Not bad, but my kids didn’t like it at all. They want pizza instead!!

  54. User avatar jeannie.jacobs says:

    5 stars
This soup is so creamy and delicious! Perfect for a cold day. My family loved it!

    1. User avatar paulita.haley70 says:

      5 stars
I’m so glad to hear that! I made it last week and my kids wouldn’t stop asking for more. It’s the ultimate comfort food.

    2. 2 stars
Creamy? I thought potato soup should be more chunky? I dunno just sounds weird to me.

  55. User avatar chauncey.mitchell77 says:

    5 stars
Made this last night—so creamy without being heavy. The thyme is subtle but really brings it together. I added a little extra pepper and it was perfect.

  56. User avatar Colin the Security Robot says:

    4 stars
I didn’t have chicken broth so I used water instead. Still turned out good!

    1. 5 stars
That’s awesome! Water works in a pinch. I’ll have to try it your way next time!

  57. User avatar jerrie.purdy says:

    4 stars
I usually don’t cook, but this was easy! I added some bacon and wow!

  58. User avatar eddie.wilderman96 says:

    2 stars
I tried this but it was too bland for my taste. I had to add more spices. Wont make again.

    1. User avatar Storm Atronach says:

      4 stars
I totally get that! I usually add a lot more garlic and some chili powder to kick it up a notch! 🤷‍♀️

  59. User avatar rod.gibson2011 says:

    4 stars
I tried to mash with a blender and it turned into puree soup… like way too smooth lol. But flavor was still good. Next time I’ll mash less!

  60. User avatar Falmer Shadowmaster says:

    5 stars
Loved this soup! Creamy and comforting. I used fresh herbs instead of dried thyme, and it was amazing!

  61. 5 stars
This soup is amazing! I loved how creamy it turned out. Perfect for winter nights!

  62. 2 stars
Where’s the celery? You can’t make soup without celery!! 😤

    1. User avatar randal.bashirian56 says:

      4 stars
You don’t always need celery for soup! This is a classic potato soup recipe. It’s delicious without it! 🍲

  63. User avatar daniel.reynolds says:

    4 stars
I’m not sure about the heavy cream amount—mine got super thick. Maybe I overheated it after adding the dairy? Still good though, just adjusted with extra broth.

  64. User avatar josue.connelly76 says:

    4 stars
Yummy! Quick and easy. The parsley on top makes it look fancy for no effort.

    1. User avatar lucius.cole2015 says:

      5 stars
Totally agree—adding fresh parsley really makes it look restaurant-level without extra work. Making this tonight!

    2. 3 stars
Looks good, but I’m skeptical about using both milk and heavy cream—won’t it get too rich? Also, do you mash before adding the dairy or after? 😅

  65. User avatar ShanksOnePiece says:

    4 stars
I’m not sure about using both milk and heavy cream—feels kinda overkill? But I tried it and it definitely tasted richer. Would make again, just maybe reduce one.

  66. 3 stars
Soup is soup. This one is creamy. End of story.

    1. 5 stars
Creamy soup is definitely the best kind! Love those potatoes!

  67. User avatar velva.mclaughlin1981 says:

    4 stars
Ok, but you forgot to mention how many servings this makes. I can’t plan for meals!

    1. User avatar dana.damore says:

      4 stars
You’re right, it would be super helpful to know the servings! Maybe around 4? Just a guess though.

  68. User avatar darin.klocko2018 says:

    4 stars
Potato? More like potato-soup-sipation. LOL, but it was good.

    1. 5 stars
Haha, I love that! Potato-soup-sipation is a fun name for it. Glad you enjoyed the recipe!

    2. User avatar Sue-Belle says:

      3 stars
I’m honestly skeptical about the heavy cream part. Seems a bit much, but if you like it rich, go for it!

  69. User avatar dallas.wiegand2020 says:

    5 stars
Yummy! So filling and warm for winter days! 👌

  70. User avatar rickiestmorty says:

    2 stars
Ugh, I followed it and it tastes kinda bland to me. Might be my salt? Also I didn’t blend enough so there were chunks. I’ll try again with more seasoning.

  71. User avatar tissues_with_issues says:

    5 stars
Best potato soup I’ve ever had! So creamy and delicious. Thank you!

    1. User avatar Rosalyn Konopelski says:

      5 stars
I’m so glad to hear you loved it! It’s definitely my go-to comfort food recipe.

  72. 3 stars
Flavor was okay, but I think I under-seasoned at step 2. Also I used dried parsley instead of fresh and it felt kinda flat. Lesson learned.

  73. User avatar nathanial.frami says:

    4 stars
Super easy recipe! My kids loved it. They even asked for seconds!

    1. User avatar kaitlin.torp88 says:

So glad to hear that! This soup is a favorite in our house too. It’s so creamy and delicious!

    2. User avatar renate.carroll78 says:

      2 stars
I don’t know, sounds kinda easy but is it really that good? Mines came out kinda bland. Maybe I did something wrong.

  74. User avatar eldridge.bergstrom87 says:

    4 stars
I made this soup but forgot the thyme! It still tasted good but might try it again properly. 😅

  75. User avatar teodoro.fahey1990 says:

    5 stars
Easy to make with stuff I already had at home! Will be my go-to recipe for soup!

    1. 5 stars
I’m glad you found it easy! It’s such a cozy recipe, perfect for cold days.

  76. User avatar angelita.oconnell says:

    4 stars
I forgot the parsley but it was still nice. Will try again!

  77. User avatar wellRespected says:

    4 stars
This is good, but I think 20 minutes wasn’t enough for my potato cubes—took more like 30. Also I added extra pepper because I’m a pepper person.

  78. User avatar bertram.larson37 says:

    2 stars
Just okay. It needed something more, maybe cheese? Idk.

    1. User avatar Deon Bradtke says:

      4 stars
I love this soup but I totally agree! Cheese would make it so much better. Maybe cheddar?

  79. User avatar shelly.hauck says:

    4 stars
Pretty tasty, but I needed more salt than the recipe said. Also, 20 minutes wasn’t quite enough for my potato dice—more like 25-30.

  80. User avatar Jeanmarie Dibbert says:

    3 stars
My soup turned out kinda thick and I panicked lol. I just splashed in more chicken broth until it looked right. Also I accidentally used dried parsley… it was still okay.

  81. User avatar enriqueta.hyatt1989 says:

    5 stars
This soup is amazing! So creamy and delicious. My family loved it! Definitely a keeper!

  82. User avatar Cleta Schultz says:

    2 stars
Why is heavy cream needed?? Seems unhealthy. I didn’t put it and still turned out ok. Just saying!

    1. 4 stars
I think the cream adds richness, but hey, if it works for you without it, more power to ya! Just know sometimes skipping can change texture, but flavor is king!

    2. User avatar laurice.leuschke62 says:

      5 stars
I totally get where you’re coming from! Heavy cream can be a bit much. I used half and half one time and it still tasted delicious! You just gotta adjust to your taste, right?

  83. User avatar ervin.cormier35 says:

    3 stars
I made this but felt it was too salty. Maybe cut back on the salt?

    1. User avatar kelle.quitzon says:

      4 stars
I totally agree! I found it too salty too. Less salt next time for sure!

    2. 2 stars
Salt? I thought it was just fine. Maybe you should try it without the broth next time?

  84. User avatar basementDweller says:

    3 stars
I was skeptical about the heavy cream. Is it really necessary? Anyway, soup was okay…

    1. User avatar rodrick.weimann86 says:

      5 stars
Heavy cream makes it rich and creamy! Trust me, you’ll love it if you give it a chance. Soup is all about the comfort! 😊

    2. User avatar kayla.harvey1955 says:

      2 stars
I dunno, isn’t cream just make it too fatty? My mom never used it for soup. Thot it wuz supposed to be healthy! 🤔

  85. 5 stars
This soup is the best! So creamy and thick. My kids loved it.

  86. 3 stars
The measurements are nice and simple, but I found it needed more salt than the recipe suggested. Also, I think 1 cup milk + 1 cup heavy cream might be too much for my taste… I’ll try half next time.

  87. User avatar cristine.rolfson14 says:

    5 stars
I added shredded cheddar at the end and now it’s basically diner-style. Garlic + thyme + potatoes = yes. My boyfriend was eating seconds.

I make this every Sunday! So comforting and filling. Love it!!

Too many potatoes! It was more like mashed potatoes than soup. 😕

  90. 3 stars
Eh, it was okay. Felt like it was missing somethin’.

  91. User avatar Mr. Rocco Schmidt says:

    2 stars
Okay… I forgot to peel the potatoes (lazy moment). It was still edible but the texture was a little weird, like crunchy in spots. I’ll try again tho because the flavor smelled amazing.

    1. User avatar Vladimir Harkonnen says:

      3 stars
I mean… if you left the peel on, it kinda makes sense it’ll be crunchy in places. Maybe you should just bake the potatoes first? Or boil longer. Either way, still sounds good though 😅

    2. 5 stars
Haha happens! If the skins were still on, you can get that odd chewy/crunchy texture in spots. Next time peel all the way and simmer a touch longer—might fix it right up.

  92. User avatar kayce.olson says:

not my fav. my mom makes better soup lol

    1. User avatar kiana.tremblay45 says:

      4 stars
Everyone’s taste is different! Your mom must have a special touch.

  93. User avatar shelli.mohr24 says:

    3 stars
I tried this recipe but found it a bit too heavy with the cream. Next time, I’ll use less.

  94. 3 stars
I used vegetable broth instead of chicken because that’s what I had. It worked, but the flavor was a little flatter. Still, it’s an easy weeknight soup.

  95. User avatar lyndsay.hermiston1985 says:

    5 stars
This potato soup is the best! I had it for dinner last night and my family loved it. It’s so creamy and delicious! Definitely a five-star recipe!

    1. User avatar thuy.parker says:

      2 stars
This soup is too rich for my taste. I prefer a lighter version without all the cream. But glad it worked for you!

    2. User avatar evon.marquardt1999 says:

      3 stars
I can’t believe you liked it so much! Mine turned out really watery. Maybe I messed something up?

  96. User avatar Ryuu Shenlong says:

    2 stars
I tried using garlic powder instead of fresh garlic and it was kinda meh. I guess fresh really matters here. Will not do that again lol.

    1. User avatar ALTplusF4 says:

      3 stars
Aw man, that’s sad 😂 I’ve used garlic powder before and it was kinda okay? Maybe you need more? like 1 tsp? Also you sure you didn’t over-boil it? My soup gets weird if I simmer too long.

    2. User avatar buck.price7 says:

      5 stars
Totally agree—fresh garlic has way more punch. Garlic powder can taste a bit flat in soups like this, especially once it simmers.

  97. 2 stars
Sounds good, but do you think it could work without the heavy cream? Trying to eat healthy.

    1. 5 stars
You can totally skip the heavy cream! Maybe use a bit extra milk or some Greek yogurt for creaminess without all the calories. Good luck with your healthy eating!

  98. User avatar lakeesha.grant2002 says:

    5 stars
I’m not usually a “heavy cream” person, but wow—this is creamy without being grossly rich. Next time I’ll add a little extra black pepper and maybe some shredded cheddar.

  99. User avatar cris.price38 says:

    5 stars
This potato soup is absolutely delicious! I added some bacon bits for extra flavor. Yum!

  100. User avatar tuan.leffler10 says:

    5 stars
This soup was fantastic! So creamy and delicious. I’ll be making it again for sure.

  101. 5 stars
Perfect winter soup! Just what I needed. I used veggie broth instead, turned out great!

  102. User avatar Wonko the Sane says:

    1 star
Potato soup? More like potato glue. I couldn’t get it to blend right. I’m no chef.

  103. User avatar Saruman the White says:

    4 stars
Love how simple this is—no complicated steps, and the immersion blender makes it easy. I’ll definitely make it again for family dinners.

    1. User avatar Sand-Dial says:

      3 stars
I mean it sounds easy but I always mess up potatoes 😅 How much oil do you use in step 1? Also do you simmer covered or uncovered? Mine usually takes way longer than 20 minutes.

    2. User avatar ozell.wiegand5 says:

      5 stars
Agreed—this is the kind of soup that actually fits into real life. The immersion blender step is a game-changer for texture. Can’t wait to try it with extra parsley!

  104. User avatar emilio.ledner26 says:

    4 stars
Pretty solid recipe, but I think 20 minutes isn’t enough for bigger potato chunks. I simmered closer to 30 and then it finally got tender. Still tasted great!

    1. User avatar hillary.kertzmann11 says:

      5 stars
Totally agree—20 minutes is quick for larger chunks. I do around 25–30 too, especially if the potatoes are cut thick. Glad it still tasted great!

  105. 3 stars
Honestly, it turned out too bland for my taste. I might try adding more spices next time.

    1. 4 stars
I found it pretty bland too, but adding spices sounds like a great idea! I usually toss in some paprika or cumin for a kick!

  106. User avatar nicky.schuppe1972 says:

    5 stars
Potato soup?? I never liked potato soup, but tried this recipe. Wow, I am shocked, it was so tasty!

  107. User avatar Miss Eloisa Jacobson says:

    3 stars
I love potato soup! This one looks good, but where’s the cheese? I think it needs cheese.

  108. User avatar loris.jones says:

    4 stars
Not gonna lie, I used russet potatoes and they took way longer than 20 minutes. Once tender though, it was great. Just be patient.

  109. User avatar albertha.hilpert67 says:

    5 stars
Easy to make! My kids loved it and asked for seconds. Thank you for sharing!

  110. User avatar erin.blick1994 says:

    5 stars
Made this tonight and it turned out super cozy. I mashed about halfway so it still had some texture—perfect. The thyme is subtle but really rounds everything out.

    1. 3 stars
I tried it but mine was kinda bland? I think I didn’t add enough salt or maybe my thyme was too old. Also I used oat milk once and it didn’t feel as creamy. Still good though!

    2. User avatar epifania.hegmann2001 says:

      5 stars
Yes!! Cozy is the perfect word. I do the same thing—mash about halfway—because totally smooth feels like baby food 😄 Thyme was a great call too.

  111. User avatar rudolf.abbott2003 says:

    5 stars
Honestly I was skeptical because I don’t usually add both milk AND heavy cream. But wow—super comforting. I added a little extra black pepper and it was perfect.

  112. User avatar vannesa.hahn1958 says:

    3 stars
I followed the recipe but my soup turned out too thick and bland. I think I needed more seasoning. Maybe next time I’ll add bacon or something?

  113. User avatar aida.oconner34 says:

    4 stars
Really easy to make, but I switched out the chicken broth for veg broth since I’m vegan. It worked fine!

  114. User avatar mui.larkin88 says:

    3 stars
I’m not a huge fan of adding both milk and heavy cream—felt a little too rich for my taste. Could be just me, but I’ll try substituting one next time.

  115. User avatar marnie.dare says:

    3 stars
I thought the recipe was a bit too rich with the cream. I prefer it lighter. Maybe less cream next time.

    1. User avatar brittany.kutch65 says:

      2 stars
Nah, I think the cream makes it super tasty! Why ruin a good soup with less cream? Just my opinion.

    2. User avatar Ms. Stacy Kilback says:

      4 stars
I get what you mean! I cut down the cream last time too and it was still good. A lighter soup could be nice for summer!

  116. User avatar Flame Atronach says:

    2 stars
Tried it exactly as written and it’s bland. Like, we barely tasted the seasoning. I followed the salt/pepper amounts “to taste” but apparently my taste buds need more training.

  117. User avatar Slaughterfish says:

    4 stars
Too much cream for me, I prefer a lighter soup. But it’s still decent.

  118. User avatar pilar.mertz62 says:

    4 stars
I don’t get why people say “boil then simmer.” I just simmered from the start like 30 minutes and it came out fine. Maybe boiling first just helps the flavor? Anyway, good soup.

  119. User avatar isaiah.ledner says:

    5 stars
    Yum. Easy. Family approved.

    1. 5 stars
Yesss—when the whole family approves it’s the best kind of recipe win 😄 What kind of potatoes do you use (russet or Yukon)?

  120. User avatar stephaine.pollich says:

    4 stars
Very easy to make! I added some bacon bits on top and it was a game changer! Yum!

  121. User avatar theodore.swift says:

    3 stars
Eh, it was just alright. I expected more flavor. Maybe add some spices?

  122. 2 stars
One word: bland. I expected more flavor. Maybe I should have added bacon?

  123. User avatar georgianna.hoeger says:

    3 stars
Why do people always add milk and cream? It makes me feel like I’m eating a butter cloud. I tried it anyway and it was okay, but I’ll probably cut the cream next time.

  124. User avatar smartestRedditor says:

    3 stars
Not bad but took forever to cook. I guess I don’t have the patience for these fancy soups.

  125. 2 stars
It came out watery for me even after mashing. Maybe I didn’t cook the potatoes long enough? Next time I’ll simmer uncovered a bit more.

    1. User avatar felix.hackett1961 says:

      3 stars
Maybe you should mash them more, but I think it’s the milk/cream too—if you add it and don’t let it thicken it’ll stay thin. Also did you use small potatoes? Mine never came out watery lol.

    2. User avatar clinton.yost says:

      5 stars
Yeah, watery soup usually means the potatoes didn’t break down enough or it needs more simmering to thicken. I’d try simmering a few more minutes uncovered (or mash longer) before adding the dairy.

  126. User avatar Vroomfondel says:

    5 stars
The immersion blender step saved me. I was worried it’d be lumpy, but it came out smooth enough. Love the parsley on top too.

  127. User avatar suspiciousCommentator says:

    5 stars
Simple and delicious! I added some bacon bits on top, and it was heaven.

    1. 5 stars
Bacon bits? That’s genius! I gotta try that next time. Glad you enjoyed it!

  128. 4 stars
Pretty solid recipe. I used russet potatoes and simmered closer to 25 minutes because they weren’t tender at 20. Still delicious—next time I’ll blend a little less for chunkier texture.

  129. User avatar robin.batz1998 says:

    5 stars
Made this last night—so cozy. Mashing with the immersion blender gave it the perfect creamy texture without being overly thick. Used fresh thyme too and it tasted amazing.

  130. User avatar Grìma Wormtongue says:

    5 stars
Made this last night—so cozy. I used baby potatoes and it mashed really smoothly. The thyme + cream combo is perfect. Will definitely do again!

    1. 5 stars
Aww that sounds perfect. Baby potatoes really do mash up so smooth—glad the thyme + cream combo hit!

  131. User avatar Ardith Blanda PhD says:

    4 stars
I thought this recipe was gonna be bland but wow! It’s really flavorful. Adding more garlic next time tho.

  132. 5 stars
Five stars. My picky kid even ate it—rare! I mashed less this time so it had chunks and that worked.

  133. User avatar sandi.hills25 says:

    3 stars
Not gonna lie, I’m skeptical about the immersion blender step—mine turned into paste for some reason. But after adding a splash more broth it saved nicely.

    1. User avatar liberal.hero says:

      5 stars
Yeah I’ve had that happen too—immersion blenders can go from “smooth” to “glue” fast if the potatoes are too dry or you blend longer than needed. A little extra broth/water helps a ton like you did!

    2. User avatar marisela.murphy11 says:

      4 stars
Wait, immersion blender to paste? That sounds like you blended it before it was fully cooked. I usually simmer way longer so the potatoes break down easy. Also, heavy cream can make it kinda thicker—maybe add cream last?

  134. 5 stars
This tastes like restaurant potato soup! I’m serious. I didn’t have thyme so I used Italian seasoning and it worked. Parsley on top is a nice touch.

  135. User avatar abdul.goyette1977 says:

    4 stars
I’m not usually into creamy soups, but this surprised me. The texture is great after mashing. Next time I’ll add a pinch of smoked paprika for extra depth.

  136. User avatar ArabianNights says:

    3 stars
Hmm. I don’t know why mine got super thick—maybe I used less broth. Also my garlic burned a little even though I cooked it “until softened.” Still edible though.

    1. User avatar gregorio.jenkins82 says:

      5 stars
That sounds mostly like ingredient ratio + heat management. If you used less than 4 cups broth, it’ll definitely thicken. And garlic can go from “softened” to burnt fast—next time try adding it later (or lowering the heat) after the onion is translucent.

    2. User avatar ryan.greenfelder85 says:

      4 stars
Mine did that too once! I think it’s because people say “until softened” but garlic can burn if you blink lol. Maybe mine just needed more broth or a splash of water when it got too thick. Still tasted good though, so you’re not alone.

  137. User avatar guadalupe.okon0 says:

    4 stars
I followed it pretty closely but used half-and-half instead of heavy cream. Still tasty, though next time I might keep the full amount for that thicker texture.

  138. 3 stars
Not bad. But honestly I think 1 cup milk + 1 cup heavy cream is a lot… Could half it. Also the broth step—bring to a boil—felt unnecessary.

    1. User avatar leonel.pfeffer2004 says:

      4 stars
I get what you mean—1 cup of both is pretty rich. I’ve halved the cream before and it still came out great, just less “restaurant-y.” The boil for the broth helps cook the potatoes evenly, but you can absolutely start simmering right away after you add broth.

    2. 2 stars
Nah, I disagree a bit. Cream + milk is kind of the whole point of potato soup. If you half it, it’ll taste more like chowder/stock soup, not creamy. Also boiling helps it thicken as the starch releases from the potatoes.

  139. 4 stars
Pretty good, but mine came out a bit thick. Next time I’ll use slightly more broth or skim a little off the cream. Still super comforting.

  140. 2 stars
I followed it and it tastes bland. I added more garlic and salt and still… idk. Maybe fresh thyme would help? Or I just need bacon in everything 😂

  141. User avatar Pearl E. Gates says:

    5 stars
This came out so creamy and cozy. I mashed about half the potatoes and left the rest chunky—perfect texture. The thyme is subtle but really makes it taste “real.”

    1. User avatar smartestRedditor says:

      3 stars
Ok this soup sounds decent but I’m confused—does it really need both milk and heavy cream? Also I used dried parsley bc I didn’t have fresh and it still tasted pretty good. Might try it again with half-chunk like you said.

    2. User avatar fredric.moen16 says:

      5 stars
Love this! I did the same “half mashed” thing and it was exactly the right vibe—creamy but not mushy. The thyme really does make it taste like actual home cooking.

  142. User avatar eusebio.conn78 says:

    4 stars
Pretty solid recipe, but I had to add a bit more salt at the end. Also I simmered closer to 25 min since my potatoes were bigger. Still turned out great.

  143. User avatar Von Bruen says:

    4 stars
I followed it exactly, but I had to add a lot more salt. Also, parsley as garnish is the move—makes it look fancy even when you’re tired.

  144. User avatar Dan Druff says:

    4 stars
5 stars for comfort food. But FYI: I used sweet onion once and it tasted weirdly sweet—stick to yellow or white if you can.

  145. User avatar Max Quordlepleen says:

    5 stars
I’m skeptical about using both milk and heavy cream—felt like overkill. But wow, the flavor rounded out nicely. Not heavy at all for me.

  146. 3 stars
3/5 for me—too much cream? It’s rich, but it overwhelms the potato flavor a little. Could use more onion or maybe less heavy cream.

  147. 5 stars
This tastes like the potato soup from that diner I like. I added extra black pepper and it really popped. Will definitely make again.

    1. 3 stars
Hmm I tried something like this before and it was kinda bland… maybe I didn’t use enough pepper or thyme. How much salt/pepper do you usually do?

    2. 5 stars
That’s awesome—exactly what I’m going for! Extra black pepper really does make it pop. 😄

  148. 5 stars
Made this last night and it turned out super cozy. The thyme was perfect, and mashing it really made it creamy without being too heavy.

  149. User avatar theo.connelly72 says:

    5 stars
This is the first soup I’ve made that actually turned out like I pictured. Mashed with an immersion blender and it’s smooth and cozy. 10/10 for winter nights.

    1. User avatar wellRespected says:

      4 stars
Nice! I did something similar but I think I boiled mine too hard because it turned a little starchy. Still tasted good though. Next time I’ll simmer longer and blend more gently. 😅

    2. User avatar noe.schmidt1955 says:

      5 stars
That’s awesome! I love when a recipe actually matches the picture in your head 😄 The immersion blender tip is such a game changer for that “smooth and cozy” vibe.
