Ingredients

4 large tortillas
1 pound ground pork
1 1/2 cups spinach, chopped
1 cup shredded cheddar cheese
1/2 cup diced tomatoes
1/4 cup diced onions
1/4 cup chopped cilantro
4 eggs
Salt and pepper to taste
1 tablespoon olive oil

Instructions

1.In a large skillet, heat the olive oil over medium heat.
2.Add the ground pork and cook until browned and cooked through.
3.Remove the pork from the skillet and set aside.
4.In the same skillet, add the diced onions and cook until softened.
5.Add the chopped spinach and cook until wilted.
6.In a separate bowl, whisk the eggs with salt and pepper.
7.Pour the whisked eggs into the skillet with the spinach and onions.
8.Cook the eggs until scrambled.
9.Return the cooked pork to the skillet and mix well.
10.Warm the tortillas in a separate skillet or in the microwave.
11.Divide the pork and spinach mixture evenly among the tortillas.
12.Top with shredded cheddar cheese, diced tomatoes, and chopped cilantro.
13.Roll up the tortillas into burritos.
14.Serve warm and enjoy!
