Sounds like your liquid might not have been hot enough or your jars weren’t sealed perfectly. The “pop” isn’t guaranteed—if you did a proper boiling-water bath and the lids sealed after cooling, that’s the important part. Make sure the brine is boiling when you pour and keep 1/2 inch headspace, wipe rims clean before sealing, and don’t open/process right after (let them cool fully 12-24 hrs). As for pale okra: pack them tightly and don’t overcook in the bath—10 minutes is usually fine, but very pale can happen if okra is older or the jar processing was interrupted.
