Negi Tori Soba

June 14, 2024

If you’re craving a bowl of comforting, flavorful noodles, Negi Tori Soba is the perfect dish to try. This Japanese classic combines soba noodles with tender chicken and aromatic green onions (negi), creating a delicious and satisfying meal that is both hearty and light. The dish is a wonderful balance of textures and flavors, making it a go-to comfort food for cooler weather or when you need something filling yet refreshing.

The foundation of Negi Tori Soba is the soba noodles, made from buckwheat flour, they have a unique earthy flavor and chewy texture that pairs perfectly with brothy soups. In this dish, the soba is served in a savory broth, typically made with soy sauce, mirin, and dashi stock, which gives it a rich, umami base. The simplicity of the broth allows the natural flavors of the chicken and green onions to shine through.

The star ingredient in this dish is the tori (chicken), usually cooked until tender and sliced thin. The chicken is often simmered in the broth, allowing it to absorb the flavors and become juicy and flavorful. The addition of negi (green onions) provides a fresh, slightly sweet contrast to the savory chicken, with a mild yet aromatic flavor that brightens up the dish.

Negi Tori Soba is typically garnished with a few other simple additions, such as a boiled egg, a dash of sesame seeds, or a sprinkle of nori (seaweed). These toppings add texture and extra depth to the dish, enhancing the overall experience.

Whether you’re enjoying it for lunch, dinner, or as a soothing late-night meal, Negi Tori Soba is an easy-to-make, flavorful dish that embodies the essence of Japanese comfort food. It’s a perfect combination of hearty protein, tender noodles, and savory broth that will leave you feeling both satisfied and nourished.

Guys, 3 cups is too much broth! Made it like soup. 🙁

  2. 5 stars
Garlic + mirin + soy is always a win. I didn’t have mirin so I used a sweet cooking wine and it was fine. Nori on top is such a nice touch.

    1. User avatar Ma'randru-jo says:

      4 stars
Sweet cooking wine instead of mirin… kinda sounds risky, but glad it worked out. Next time I’ll try it because I’m always missing mirin lol. Nori + sesame seeds is a nice finishing move.

    2. User avatar malcolm.hayes36 says:

      5 stars
Totally agree—garlic + mirin + soy is such a solid flavor combo. I also love the nori on top; makes it feel way more “real” than just plain noodles.

  3. User avatar ima.harris1984 says:

    4 stars
Looks legit but I can’t do nori—tastes like ocean to me. Also, can you just use chicken thighs? I feel like the recipe would work. 😅

    1. User avatar earlean.dach55 says:

      4 stars
Yeah, chicken thighs should work, but you might need a tiny tweak on timing. Breasts in the recipe are about 5–7 min per side, so with thighs I’d just cook until they’re done (and not dry) then slice. The broth + mirin will still make it taste right. (Also, I’ve never seen nori used much outside sushi—maybe that’s why it feels weird to you.)

    2. User avatar Frost Troll says:

      5 stars
Totally get the nori thing—some people say it tastes super “ocean-y.” 😅 You can skip it or swap it with toasted sesame seeds only, or even a little extra green onion for that same garnish vibe.

  4. User avatar kirk.dickinson says:

    5 stars
Yum! My new favorite noodle dish! Easy and quick, but do I really need the nori? I guess I’ll never really kno.

  5. 5 stars
Yum!!! 🤤 Just what I needed for a rainy day! Will be making again for sure!

  6. User avatar carmine.abbott1986 says:

    4 stars
My kids loved it! Finally a dish I can make that they actually eat. 😄

  7. User avatar courtney.wiegand0 says:

    2 stars
I dunno, looks kinda boring to me. Where’s the flavor? I won’t be trying this one. 🤷‍♂️

  8. User avatar gavin.lesch says:

    3 stars
This was too salty for my taste. Next time I’ll cut the soy sauce in half.

  9. User avatar johnetta.hill says:

    4 stars
Pretty easy, but my chicken took longer than 5-7 minutes per side (thicker breasts). Once I sliced thinner pieces, it cooked faster. Tasty regardless!

  10. User avatar Questular Rontok says:

    4 stars
The chili flakes + ginger/garlic is giving me big flavor vibes. I’d probably add a little extra soy though, just to be safe.

  11. 5 stars
simple and easy, my kids loved it! Will try it with tofu next time!

    1. User avatar buena.witting says:

      5 stars
I’m glad your kids loved it! Tofu will be a great addition for a vegetarian twist! 😊

  12. User avatar cletus.willms98 says:

    5 stars
Yum! I made this for dinner and my whole family loved it! Definitely making it again.

  13. User avatar pablo.kutch37 says:

    2 stars
I tried this but something felt off. The chicken was kinda dry and the broth was bland. Won’t do it again.

  14. User avatar terrie.kerluke1962 says:

    3 stars
It was okay but I feel like it lacked something. Maybe more soy sauce? I don’t know, not my favorite dish.

  15. User avatar carina.casper1994 says:

    3 stars
I liked the idea but my chicken was tough. Followed the timings exactly. Maybe it’s my stove?

    1. User avatar cole.collier says:

      4 stars
Chicken can be tough if it’s overcooked or not rested enough after cooking. Did you let it sit? Always helps!

  16. User avatar Slartibartfast says:

    4 stars
Easy and delicious! My kids love it, and it’s quick to make! Plus, they eat their green onions without fussing. Win-win!

  17. User avatar oPandariaNo says:

This was AMAZING! The flavors blend together so well. Definitely making it again!

  18. User avatar willis.stiedemann2025 says:

So good! But I forgot to buy nori, oops. Still yummy!

    1. User avatar Spider Worker says:

      5 stars
Glad you enjoyed it! Nori is nice, but you can still make it delicious without it! 😊

  19. 4 stars
My kids loved it! It was easy to make and required no fancy ingredients.

  20. User avatar sylvia.rempel says:

    2 stars
Why cook soba in water first and then in broth? I mean, won’t it get mushy? Mine did a little, but the flavor was still good.

  21. User avatar shelly.paucek21 says:

    3 stars
Not bad but I thought it would be spicier. Maybe add more chili flakes next time.

  22. 4 stars
Not gonna lie, I messed up and forgot to slice the chicken thin, so it took longer. Still tasted good though—next time I’ll follow step 2 better.

    1. User avatar todd.kovacek86 says:

      5 stars
Honestly that happens—nice save! Slicing thinner just helps it cook faster, but if it still tasted good, you’re not far off. Next time step 2 will make it more tender and quicker 👍

  23. User avatar jared.mclaughlin5 says:

    4 stars
I made something similar but added mushrooms—still, your version seems balanced. 5-7 min per side for chicken sounds about right.

  24. User avatar NAFO.SUPREMACY says:

    2 stars
Dude, this recipe is sooo basic. How can it be special? It’s just noodles and chicken.

  25. User avatar chris.kerluke90 says:

    4 stars
I followed it pretty closely. I used chicken thighs instead because that’s what I had, and it still worked great. I’d add a bit more green onion next time though.

  26. 5 stars
This recipe is incredible! The flavors are out of this world! I added a little extra chili for some kick, and it was perfect. Will be making this again!

  27. User avatar jason.turcotte says:

    2 stars
This looked easy, but I messed up the chicken. It was raw inside. Gotta practice more.

  28. User avatar rosalva.smitham1959 says:

    4 stars
Great recipe! Next time I’ll use tofu instead of chicken, for a plant-based version!

  29. User avatar Zada O'Reilly says:

    3 stars
I dunno. It seemed simple but the chicken ended up kinda dry for me. Maybe I cooked it too long?

  30. 4 stars
Quick and easy! 🥢 Perfect for a weekday dinner. I used leftovers from last night.

  31. 5 stars
This recipe is amazing! I never thought I could make soba at home. The chicken came out perfect!

  32. 4 stars
Soba noodles are weird, but this was actually pretty good! Might make it again.

    1. User avatar Gurney Halleck says:

      2 stars
Idk, soba just ain’t my thing. The dish looks good tho. Maybe I’ll try it without the noodles next time.

    2. User avatar nelle.herzog says:

      5 stars
Glad you liked it! Soba noodles can be tricky, but they really absorb the flavors well. Definitely give it another shot!

  33. User avatar wm.haley56 says:

    4 stars
Pretty good, but mine came out a little too salty. I think I used extra soy sauce without realizing—next time I’ll cut it and taste as I go.

  34. User avatar brady.parker says:

    2 stars
This was very complex for me. I just don’t understand some of these ingredients. It would be better with regular noodles, right?

    1. User avatar saran.koch says:

      3 stars
Regular noodles? Nah, they ain’t the same! Soba adds flavor! Maybe just give it another try?

    2. User avatar Tricia McMillan says:

      4 stars
I think the soba noodles give it a nice touch, but if you’re more comfortable with regular ones, go for it! Cooking should be fun, right?

  35. 5 stars
This was actually great. I used less chili flakes and it still had flavor. The nori on top is a nice touch that makes it feel legit.

    1. User avatar Courtney Jacobs PhD says:

      5 stars
Glad it worked! The nori really does make it feel “restaurant-y” — love that you noticed the chili flakes adjustment too.

    2. User avatar Miss Lucinda Hill says:

      4 stars
I tried something like this but I think I added too much ginger 😅 Still tasted fine though. Do you toast the nori first or just put it on at the end?

  36. User avatar alfred.mcdermott73 says:

    2 stars
Man, I just don’t get soba. Are these noodles supposed to taste weird? My kids won’t eat it. 🙁

  37. User avatar keeley.balistreri says:

    5 stars
Yum! Tastes kinda like I ate it in Japan! Good vibes all around.

  38. User avatar suspiciousCommentator says:

    2 stars
Too much soy sauce… ruined it for me. I couldn’t taste anything else.

  39. User avatar danette.schuster74 says:

    5 stars
This was super comforting. The broth tasted really balanced—ginger and mirin do the heavy lifting. I also loved the green onions on top.

  40. User avatar Majin Vegeta says:

    5 stars
Yummy! I made it for dinner and the whole family loved it. Will definitely make again!

    1. 5 stars
So glad to hear your family enjoyed it! This is a hit in our house too! ❤️

  41. 2 stars
Why use chicken broth? Can’t you just use water? Seems like a waste of good broth. Just saying.

  42. User avatar martin.pollich17 says:

    2 stars
I used rice noodles instead (don’t judge) and it was a totally different thing. Honestly, I’d rather stick with soba. Also 3 cups broth feels like not enough for me? Maybe my pot is bigger lol.

  43. User avatar marty.bosco86 says:

    5 stars
This was absolutely delicious! The flavors blended so well together.

  44. User avatar michel.cummings says:

    5 stars
Yummmm. I just made it and my husband loved it! Will be sharing this recipe with friends.

  45. User avatar Corrupted Shade says:

    5 stars
Made this tonight—so comforting. The ginger/garlic broth smells amazing, and the nori on top is the perfect finishing touch. I used rotisserie chicken once and it still worked.

    1. User avatar georgina.turcotte1995 says:

      5 stars
Good to hear it worked with rotisserie chicken. I’m usually too lazy to cook raw chicken breast 😅 so this convinces me to try it that way.

    2. User avatar anneliese.runolfsson2014 says:

      5 stars
Yes!! That ginger/garlic broth is seriously addictive. I always add a little extra chili flakes—makes it so cozy 🔥

  46. User avatar annette.grant20 says:

    3 stars
The sour sauce was a bit strange, but I liked it overall. Next time I’ll add more chili flakes.🔥

  47. User avatar jerold.hintz64 says:

    5 stars
This was fantastic! Easy to follow and tastes like a restaurant dish. Will definitely make again!

  48. User avatar marshall.waters says:

    2 stars
Too many green onions! I like them, but not THAT much. 🙄

  49. User avatar randall.zulauf says:

    3 stars
I’m skeptical about cooking time “5-7 minutes per side” for chicken—my pieces were thinner and it overcooked. Flavor was great once I got the chicken right, so I’ll try again.

  50. 2 stars
This is fine but soba noodles are kinda delicate. I wish the instructions said to keep the noodles separate so they don’t get mushy. Mine started to soften fast.

  51. User avatar Glossu "Beast" Rabban says:

    4 stars
Not gonna lie, I was skeptical about cooking the soba in the skillet after boiling, but it worked. Mine turned slightly too salty though—maybe my soy sauce was stronger.

  52. User avatar sage.greenholt40 says:

    3 stars
Okay, but where do I get mirin? I’ve never even heard of that before. Can I just use vinegar?

  53. User avatar pat.kling68 says:

    5 stars
Yummy! But I added shrimp instead of chicken, and it was still awesome! 🦐

    1. 2 stars
I don’t think shrimp goes well with this dish. Chicken is classic!

    2. 5 stars
Shrimp? That sounds delish! Bet it adds a nice flavor. 😋

  54. 4 stars
Really enjoyed the flavors. But does it have to be so much chicken broth? Felt like a soup!

  55. User avatar paola.labadie73 says:

    4 stars
I love nori on top, but my nori got soggy fast. I added it at the last second and it was better. Flavor is good, just timing matters.

  56. User avatar lon.hodkiewicz30 says:

    2 stars
I tried this and the chicken was kinda dry. I wonder if I cooked it too long or something. Not sure if I’ll make it again.

  57. 4 stars
The broth flavor is fantastic. I followed it pretty much exactly, but next time I’ll add a little more soy sauce for extra depth. Still a winner.

  58. User avatar Yooden Vranx says:

    3 stars
Honestly, I’m not sure about the nori garnish—feels like weird sea weed on noodles, but I tried it anyway. It actually works and adds a salty ocean vibe. Surprisingly good.

    1. User avatar Adell Bernier V says:

      5 stars
I was skeptical too—nori on noodles sounds like a prank 😂 but that salty “ocean” hit totally makes sense. Glad you tried it and it worked!

    2. 3 stars
Sea weed on noodles is still kinda weird to me. I’d rather do more green onion or maybe just extra sesame seeds. But hey, if it’s salty, I get it I guess.

  59. User avatar silas.welch99 says:

    4 stars
Pretty solid recipe. I followed it pretty much exactly, but my noodles soaked up more broth than expected, so next time I’ll add a splash extra chicken stock. Still delicious though.

    1. User avatar armand.hilpert says:

      4 stars
I had the same thing! I think my noodles were a bit older/dryer. I also added a little more soy (like 1 tsp) and it helped a lot. Tasty bowl either way.

    2. User avatar malik.kiehn29 says:

      5 stars
Good call on the extra splash of stock—soba can drink up broth like crazy depending on the brand. Glad it was still delicious!

  60. User avatar Pierre Ryan says:

    1 star
Negi what?? The name sounds fancy, but honestly, just tastes like chicken noodle soup to me.

  61. 3 stars
I don’t like nori. Can I skip that part? Also, my noodles got all mushy. HELP!

  62. User avatar may.pacocha says:

    4 stars
Tried it with beef instead of chicken and it was still good! Can’t wait to make this again!

  63. User avatar Hotblack Desiato says:

    4 stars
Mmmm, I added extra garlic and it turned out delish! Perfect for a cozy night in! 😀

    1. User avatar stephen.langosh9 says:

      5 stars
Extra garlic sounds amazing! I’m gonna try that next time. Thanks for the tip! 😀

    2. User avatar MAGA2024.Trumpster says:

      3 stars
Isn’t that too much garlic? I think it overpowers the dish sometimes. Just my opinion!

  64. 3 stars
Hmm, I don’t know. Soba noodles aren’t my favorite and the chicken seems a bit dry. Might try it again though.

  65. User avatar daine.ziemann says:

    5 stars
This was AMAZING! The flavors are so good together. I added a little extra garlic tho.

  66. 3 stars
Not bad. but I think I cooked the chicken too long. It was a bit dry. Any tips?

    1. User avatar Samwise Gamgee says:

      5 stars
For juicier chicken, try using a meat thermometer! Cook it to 165°F max, and let it rest before slicing. Helps a lot!

  67. 2 stars
I think I messed up the order lol. I cooked noodles and then they got clumpy in the skillet waiting for the broth. But once I loosened it with more broth it came back. Will do better next time.

    1. User avatar lecia.mraz2023 says:

      5 stars
Oh noooo—been there 😅 Soba gets clumpy if it’s hanging out too long. Loosening with broth was exactly the right fix. Next time maybe just toss it in right when the broth’s simmering, or keep the skillet warm so it doesn’t sit.

  68. User avatar tamica.stanton64 says:

    5 stars
This recipe is delicious! The flavors really come together. I added some shiitake mushrooms for extra taste.

  69. User avatar susana.keebler11 says:

    4 stars
Easy peasy! My kids loved it. I’m not great at cooking but this was simple enough.

  70. User avatar Emelia Stanton says:

    1 star
What’s soba? Can I use spaghetti instead? 😅

  71. User avatar Dwain Boehm says:

    4 stars
Not bad! The sesame oil makes everything kinda nutty (in a good way). I didn’t have mirin, so I used a little sugar + rice vinegar and it tasted pretty close.

    1. User avatar michale.zemlak54 says:

      5 stars
Yes! That sesame oil is the whole vibe 😄 Glad your sugar + rice vinegar worked too—closest sub I’ve found when mirin’s missing.

  72. User avatar danielle.nienow says:

    3 stars
The recipe was simple to follow, but I think it could use more spice. Maybe add more chili flakes next time.

  73. User avatar oPandariaNo says:

    5 stars
    Looks easy. Yummy 😋

  74. User avatar raye.ebert69 says:

I made this last night and it was so good! My family loved it. Gonna make this weekly!

    1. User avatar krystina.mertz99 says:

      5 stars
So glad to hear you enjoyed it! It’s a family favorite at our house too. Happy cooking!

  75. User avatar brady.schulist1967 says:

Soba noodle w chicken?! I thought this was sushi! LOL! Anyway, turned out good for me.

  76. User avatar edward.hane says:

    2 stars
I dunno, it was too bland for my taste. I added some hot sauce to save it.

  77. User avatar Falmer Archer says:

    5 stars
Made this last night—so comforting. The ginger/garlic combo is legit and the green onions make it taste really fresh. I used chicken thighs once and it was even juicier.

    1. User avatar San Shenlong says:

      5 stars
Yes!! I also love how the green onions keep it tasting bright instead of heavy. Great idea with chicken thighs—juicier makes total sense.

  78. 1 star
I made this for dinner and the kids had a meltdown. Never again! 😩

  79. User avatar Mr. Prosser says:

    4 stars
Never made soba before, but this was simple! I messed up the broth tho, oops!

    1. User avatar mao.harvey48 says:

      5 stars
Glad you found it simple! Broth can be tricky; don’t worry about it! Next time, you’ll nail it for sure.

  80. 4 stars
I made this for dinner last night and it was a big hit with my family! Definitely a keeper!

    1. User avatar jamaal.kutch75 says:

      5 stars
So glad to hear that! It’s one of my favorites too. What did you serve it with?

    2. User avatar felipe.greenholt1 says:

      2 stars
Looks good, but I wonder if it’s too salty with the soy sauce? Anyone else think that?

  81. User avatar keneth.howell79 says:

    3 stars
I think I messed up the broth—mine came out like… too oily. Could be I didn’t measure correctly. Still edible though, just not restaurant-level.

    1. User avatar donovan.murazik14 says:

      4 stars
Oh no—too oily usually means the sesame oil was a bit overdone or added at too high a heat. Next time, try using a little less (or add it off-heat at the end). Also double-check the broth quantity—3 cups can be easy to mismeasure.

    2. User avatar cicely.hoeger50 says:

      4 stars
I’ve made this—mine got kinda greasy once too. I think the sesame oil just sits heavy if the skillet is too hot. You can skim the surface with a spoon, it helps a lot.

  82. User avatar clifford.witting says:

    5 stars
Wow! I never thought spinach could go with noodles like this! It was very good imho.

    1. 5 stars
Yeah, right? Spinach really spices things up! Gonna try it with other dishes too!

  83. User avatar Frost Atronach says:

    3 stars
I thought it would be better. Soba noodles are kinda chewy.

    1. User avatar sebrina.rodriguez says:

      2 stars
Chewy?? I thought it was just weird! Not my fave dish, for sure. What’s the point of soba anyway?

    2. User avatar Cheri Wilkinson says:

      4 stars
I actually loved the chewiness of the soba! It adds a nice texture. Maybe try a different brand next time?

  84. User avatar anthony.trantow18 says:

    2 stars
I’m not a fan of seaweed, how would this taste without it?

    1. User avatar brittaney.oreilly57 says:

      2 stars
I dunno, isn’t seaweed like super important for flavor? Might taste kinda bland without it… 🤷‍♂️

    2. 4 stars
You could totally skip the seaweed! The broth and chicken are so flavorful, you won’t miss it much. Just add more scallions if you need extra flavor!

  85. 3 stars
I didn’t have all the ingredients but used what I had. It kinda worked! Not bad!

  86. 3 stars
Chili flakes AND garlic AND ginger? It’s like the flavor is doing too much. Still tasty, but I’d go lighter on the chili next time.

  87. User avatar melodie.schamberger says:

    2 stars
I followed the recipe and it turned out bland. Needs more spice or something. Just not for me.

    1. User avatar louie.gulgowski says:

      4 stars
I think you just need to tweak the spices a bit! Adding more chili flakes or even some garlic powder could give it a kick. It’s all about personal taste!

    2. User avatar hildegard.boyle64 says:

      2 stars
Bland? Really? I thought it was great! Maybe you just don’t have a refined palate? 😅

  88. User avatar MAGA2024.Trumpster says:

    5 stars
This is giving me restaurant vibes. The chili flakes make it just spicy enough without destroying the soba flavor. My family asked for seconds.

Too much chicken! Should’ve called it Negi Tori Chicken Soba! Rice would’ve been better. 🙄

I was skeptical about the chili flakes but they really add a nice kick! Thanks for this!

Not gonna lie, “negi tori soba” sounds like a fancy restaurant thing, but the steps look easy. Gonna try it this weekend!

Same vibe here—sounds fancy, but it’s mostly just noodle + skillet simmering. Hope it comes out great for you!

This looks comforting and super doable. I love the combo of soba + chicken broth, and the nori/sesame garnish is a nice touch.

Yummy! But why is it called soba? Don’t soba means buckwheat? There’s no buckwheat here!!

This is a fantastic recipe! The flavors are incredible and the soba noodles are cooked to perfection.

I totally agree! This dish is a game changer! The chicken and soba combo is just divine. Can’t wait to make it again! 🍜

Sounds good, but I don’t really like soba noodles. Can you use spaghetti instead? Is that even okay?

This dish is absolutely amazing! The flavors blend together so well. Five stars!

I followed the steps mostly, but my chicken was chewy (cooked a bit too long). Flavor was still great though—would make again with thinner slicing/less time.

Soba noodles?? Never heard of it before. But I tried this dish, and it’s good!

I dunno, the chicken was a bit dry for me. Maybe I should’ve cooked it less? Idk. Not my fave.

Wow, this reads so comforting. I love negi + chicken vibes, and the ginger/garlic combo sounds perfect for soba. Gonna try it this week!

Yes!! Ne gi + chicken is such a cozy combo. I’m definitely making this—ginger/garlic for soba sounds spot on.

Pretty good, but my noodles were a bit mushy. I think I cooked them too long. Still tasty though!

Glad you enjoyed it! Mushy noodles happen to the best of us. Maybe try cooking them a minute less next time? 😊

I dunno, mushy noodles? Sounds like you did it wrong. Just follow the packaging and it should be fine! 🤷‍♂️

I agree! The sesame oil really makes it pop! 😍 I also added some bok choy for an extra crunch!

Looks good, but isn’t chicken broth kind of boring? I prefer beef broth for more flavor.

Not gonna lie, soba in broth always feels a little fancy for me, lol. But this actually worked. Toasted sesame + nori is a nice finish.

I’m skeptical about cooking everything in one skillet after boiling noodles—won’t the soba get kinda mushy? Might need timing tweaks.

Is it healthy? Seems like too much oil and soy sauce. Trying to eat clean.

sesame oil 1 tbsp feels like a lot? idk. and i dont really got nori for garnish. will see.

Not gonna lie, I thought it would taste bland, like “chicken noodle but worse.” But it’s actually way better. Might be my new weeknight thing.
