Mushroom Risotto is the epitute of comfort food, blending creamy Arborio rice with earthy mushrooms for a rich, flavorful meal that is both satisfying and elegant. The key to a perfect risotto lies in the slow-cooked, constant stirring that transforms the rice into a creamy, velvety texture, while the mushrooms add depth and savory umami flavor. Whether you’re making it for a special occasion or simply looking for a warm, cozy dinner, Mushroom Risotto is a delicious and versatile dish that never fails to impress.
The process of making risotto is all about patience and attention to detail. Arborio rice, known for its high starch content, is the star ingredient. As the rice cooks, it absorbs the broth slowly, releasing its starches to create the signature creamy texture. The mushrooms, typically sliced cremini, shiitake, or button mushrooms, are sautéed to bring out their rich flavors, then stirred into the rice for a hearty, earthy bite. The broth, whether vegetable or chicken, adds depth to the risotto and balances the richness of the dish. A splash of white wine or a sprinkle of Parmesan cheese at the end adds brightness and a layer of complexity, rounding out the flavors.
What makes Mushroom Risotto so special is its versatility. You can use a variety of mushrooms to create different flavor profiles, from mild and sweet to rich and woodsy. A touch of garlic, thyme, or rosemary can infuse the risotto with fragrant, herbaceous notes, while a squeeze of lemon or a dash of truffle oil at the end can elevate the dish to new heights. For a more decadent version, you can stir in some heavy cream or mascarpone cheese for added richness.
Mushroom Risotto is not only a flavorful dish but also a comforting, filling one. It’s perfect on its own as a light meal or served as a side dish to complement grilled meats, roasted vegetables, or a fresh salad. The creamy texture and earthy flavors are incredibly satisfying, making it a go-to recipe for cozy nights in or dinner parties.
Whether you’re a risotto novice or a seasoned chef, Mushroom Risotto is a dish that delivers on both taste and presentation, offering a perfect balance of richness and depth.

- Season with salt and black pepper to taste.
- Serve immediately, garnished with chopped parsley.
Risotto is just rice, right? This one took too long to cook. I like my meals fast, maybe too much fuss for me.
Simple and delicious! Even my kids enjoyed it. Thanks for sharing! 😊
So simple to make! I did not have white wine so I used water and it still worked.
Yum! But I think it needs a bit more cheese, who doesn’t love cheese?
Simple and tasty! I added a bit of spinach. Took longer than I thought tho.
I love that you added spinach! Gotta sneak in those greens. 😄 But yeah, risotto can be time-consuming, but worth it! How did the spinach change the taste?
Why do you have to warm the chicken broth? Seems unnecessary to me. Mine turned out fine without it.
If I could give 10 stars, I would! This was the perfect comfort food on a rainy evening. Who knew risotto was so easy? Thanks!
I think the key is stirring frequently, but 18–20 minutes felt long for my stove. I pulled it at 16 min and it was still al dente and creamy.
I tried this recipe but my rice didn’t cook properly. It ended up a bit mushy. Not sure what I did wrong…
This is fine but not mind-blowing. Also Arborio rice is expensive where I live, so I used regular risotto rice and it wasn’t the same.
Took me forever to make. I’m not a pro chef like u! But it was worth it.
Don’t worry! Cooking takes practice and you did great! 🙌 Risotto is tricky but delicious, right? I’m glad you found it worth the effort!
Mushrooms? Yuck! Who even likes that? I made it without them, turned out fine, but what’s the point of calling it mushroom risotto if there’s no shrooms?
I followed the recipe but my risotto turned out too sticky. I think I added the broth too fast. Maybe next time I’ll take it slower.
Yeah, risotto can be tricky! Just take your time with the broth next time. It’ll be perfect! 🍚
Honestly I messed up the broth timing and it turned gummy. Still tasted good, just not the right texture.
Solid recipe. The mushroom/onion/garlic combo smells amazing while cooking. I did use slightly less wine because I’m not a fan of it, still great.
Hmm I’m always worried about skipping wine—doesn’t it need the acidity for the risotto to taste “right”? But if you’re not a fan, I get it. Maybe I’ll try using a splash of broth instead next time.
I agree—once the mushrooms hit the pan with onion + garlic, it smells incredible. I also cut the wine a bit (I used like 3/4 cup) and it still came out super creamy. Nice call adapting it!
This risotto is so creamy and delicious! I added some peas as well for extra flavor. My family loved it! Definitely a 5-star recipe!
Not gonna lie, I messed up the wine step (I forgot to stir and it evaporated too fast). But after I added more broth it came back. Still tasty, just more mushy than I wanted.
Wine evaporated too fast? Next time maybe lower the heat and stir more. Mushy risotto usually means too much liquid or not enough absorb time between broth additions. But hey if it’s tasty, keep on cooking.
Oof, I know that pain 😅 Risotto can go from perfect to mushy real fast if the wine cooks off too quickly. Glad the extra broth rescued it though—still counts as a win!
Soo salty! I think I added too much salt without realizing it. Next time I won’t add any salt until the end. Overall still okay though.
I followed the recipe pretty closely, and it was good… but I felt like it was a tiny bit salty even with ‘to taste’ salt. Could be my parmesan though.
I always thought making risotto was hard but this recipe made it easy! Thanks for sharing! 👍
Meh. I think risotto is overrated. I prefer plain rice with butter.
Easy to follow! I’m not a chef but I think I did good. My boyfriend couldn’t stop eating it! 5 stars for making me look like a pro!
Wow, that’s amazing! It sounds like you nailed it! Risotto can be tricky, but you made it look easy!
This risotto was amazing! The flavors were so rich. My family loved it!
Good flavor, but I think my rice took longer than 20 minutes. I kept adding broth and stirring, though, so it finally came together. Next time I’ll maybe use slightly less wine or more broth.
Glad the flavor worked for you! Risotto timing is definitely variable—Arborio, pan heat, and how hot the broth is can change it a lot. Your plan for next time (more broth + less wine) makes sense.
Rissoto? Is that how you spell it? Lol. Either way, it’s not for me, I’ll stick to pizza. 1/5.
Haha, it’s actually ‘risotto’! But pizza is classic! Whatever makes you happy! 😊
Very good! Put in some extra mushrooms because we love them. Will make again! 🙂
Lol, I used canned mushrooms and it turned out fine. You don’t need fancy ingredients!
I dunno, it turned out a bit mushy for me. Maybe I added too much broth?
Just like the restaurant we went to last week! It’s better than what I expected!
Delicious! I added some peas too for color. So good! 🙂
I don’t know, it turned out kinda gluey. Maybe I added too much broth? Not sure if I did something wrong but it wasn’t great. 2/5.
Solid recipe. I used a bit more parmesan (because come on) and it came out rich and glossy. Only hiccup: my wine took longer to absorb, but I just kept stirring and it turned out fine.
I used mushrooms I had (not specified kind) and it turned out surprisingly good. Garlic + onion smells amazing while cooking.
I did mushrooms once and it was kinda soggy… maybe I didn’t cook them long enough. Still, the garlic/onion aroma sounds right. Do you rinse the mushrooms or just slice and go?
Nice! I’ve made risotto with whatever mushrooms I can find too, and it always surprises me how good it gets. Garlic + onion is definitely the move 🔥
Mushrooms are gross, I wouldn’t make this dish for free. 1 star!
I followed the recipe exactly and it came out really bland. More salt is needed, and maybe some herbs too!
Yummm! Made this for dinner and my family loved it! Gonna try it again tomorrow.
That’s awesome! I’m glad your family enjoyed it. It’s one of my favorites too! Did you make any changes to the recipe?
This was absolutely delicious! The flavors were on point. Definitely a keeper!
Oh yes, this recipe is the best thing ever! I could eat it every day! Slurp slurp! 🍄🍚
Really? I thought risotto was supposed to take forever to make! How can it be the best thing if it’s that time-consuming?
I totally agree! This risotto is a game changer! The mushrooms make it so rich and delicious! 🍄
This risotto was amazing! Super creamy and the mushrooms were perfect. Definitely a 5 star recipe!
Did not like this one bit 😩 The texture was all wrong for me.
