Mexican corn casserole is one of those comforting, crowd-pleasing dishes that brings bold flavor with very little effort. It’s creamy, cheesy, and just the right amount of spicy, making it an ideal side for taco night, grilled meats, or any festive gathering.
At its heart, this casserole celebrates the sweet simplicity of corn. You can use fresh, frozen, or canned corn, depending on what you have on hand. Combine it with sour cream, shredded cheese, and a few pantry staples like eggs and flour or cornmeal to help it set into that perfect casserole texture.
What gives this dish its signature flavor is the combination of spices and mix-ins. Diced jalapeños or green chilies add a bit of heat, while cumin, paprika, or taco seasoning brings that deep, smoky warmth. If you’re into spice, go ahead and throw in some hot sauce or chipotle powder.
Cheese plays a starring role here, so don’t be shy. Cheddar, Monterey Jack, or a Mexican blend all work well. The top gets golden and bubbly in the oven, creating a delicious crust that contrasts beautifully with the soft, creamy center.
This casserole is incredibly easy to customize. Add black beans for extra protein, mix in cooked ground beef or chorizo to make it a main dish, or top it with fresh cilantro and lime zest for a burst of brightness. It also travels well and reheats beautifully, which makes it perfect for meal prepping or bringing to a party.
Whether you’re hosting a game day party, making a side for Thanksgiving with a twist, or just craving something comforting with a Mexican flair, this corn casserole hits the spot. It’s easy to make, guaranteed to disappear fast, and just the thing to bring some spice to your dinner table.

I did not have Jiffy, so I used regular muffin mix. Still came out pretty good!
Regular muffin mix? Really? I don’t know if that’s gonna taste the same… but I’m glad it turned out okay for you.
That’s awesome! I’ve never tried it with regular muffin mix, but now I might! Good to hear it worked out well for you.
Cooking is not my thing but this looks simple enough even for me.
If you can mix stuff in a bowl, you can make this! Good luck!
This recipe is a game changer! So creamy and delicious. My family devoured it!
I found this way too salty. Maybe less salt next time?
I totally agree! I followed the recipe and it was, like, super salty. Less salt next time for sure!
Hmm, I thought it was just right. Maybe try a different brand of salt or something? Not all salts are equal!
Can I just say, this was way too much corn! Like, why would anyone need that?
Why does everyone rave about Jiffy? I think it’s overrated. I’ll stick to my scratch recipe.
5 stars! Just the right kick with the jalapeno. Thanks!
Yum! I added some ground beef and it was amazing!
Isn’t corn kinda unhealthy? I mean, it’s just a lot of carbs.
Yeah, but this dish has cheese and butter too. Isn’t that a lot of calories? I’m skeptical.
Corn has its benefits, like fiber and vitamins. Just enjoy it in moderation! This recipe sounds delicious!
Yum! I added some chicken to it, and it turned out amazing! Perfect for a potluck. Thanks for this gem!
I added bacon! Seriously elevated this dish. Yum!
My family loved it! I added some black beans for extra protein. Super yum!
Sounds great! I never thought of adding black beans, but that’s a smart idea for protein!
Love it! Making it for my movie night.
The flavor is good, but I think the jalapeño amount is too strong—my diced pepper was hotter than expected. I’ll use 1/2 next time or remove the membrane.
This looks delicious! Can’t wait to try it this weekend! 🌽
I followed the recipe mostly, but I used regular muffin mix since I couldn’t find Jiffy corn. Still good, just a bit less sweet. Cook time felt about right—golden and set at 30 min for me.
Nice! Using regular muffin mix makes sense—glad it still turned out good. I like that it was a little less sweet, honestly. Did you notice any texture difference (more/less crumbly) compared to the Jiffy version?
I dunno… just didn’t hit the spot for me. Maybe I’m bias, I don’t like jalapenos.
Could you just add chili powder too? Also, 9×13 seems huge for 1 cup cheese… but maybe that’s why it’s so rich. I’ll try it as written first.
9×13 IS big, so my brain was like “how’s only 1 cup cheese enough?” But casseroles spread out, and Jiffy + sour cream make it rich anyway. If anything, I might add a splash more cheese next time, but I’d try it your way first lol.
Totally—chili powder would be great if you like a little extra kick. I’d start with like 1/2 tsp and adjust next time.
Can I use regular corn instead of the canned ones? I’m skeptical about canned stuff.
Looks easy! Can I use a different cheese than cheddar??
I dunno, but cheddar is what makes it taste good, if you change it, it might not be the same ya know?
Absolutely! You can use any cheese you like! Just make sure it melts well. Mozzarella or pepper jack could be great substitutes!
YUM!! Perfect side dish for our BBQ. Everyone asked for the recipe.
Too cheesy for my taste. And the paprika on top didn’t really do much for me—mostly just color. Might be good with less cheddar next time.
Jiffy mix is the best! I can’t cook, but this was simple enough!
Pretty easy and tastes like something you’d bring to a potluck. I did 25 minutes instead of 30 because my oven runs hot, but otherwise followed it. Next time I’ll add some diced onion.
This was amazing! Super easy and delicious. My family loved it!
Too spicy for my kids. Next time I won’t add the jalapeno.
This is comfort food in casserole form. I used extra cheese and it didn’t complain. 30 minutes was enough for me.
I’m not a fan of corn, but this recipe actually sounds kinda good. Might give it a shot, but not sure about that jalapeno. Too spicy for me!
I made this but used regular corn instead of cream-style corn. Doesn’t taste the same…
It was okay. I expected more flavor. Just taste like Jiffy mix to me.
