      Honestly that sounds like it still came out great—freezing and stirring is basically the no-churn/partial churn method. Granita-sorbet vibes make sense with the mango texture.

      Honestly, I don’t think you’re stirring it enough—like every hour seems too long. Maybe do like every 20-30 min so it gets fluffier? Also sorbet without churner never fully freezes right for me.

    I followed it and mine turned out icy 🙁 Maybe my mangoes weren’t ripe enough or I didn’t let the syrup cool all the way. Still tasted good though.

      Maybe you needed more sugar? Or you didn’t churn enough? I always freeze mine overnight so it firms up but not icy. Also mangoes must be super ripe, like soft-soft. Mine was icy once when the blender left chunks, not totally smooth.

      Ugh, I’m sorry—icy sorbet is usually the syrup/temperature thing. If the syrup wasn’t fully cool, it can sort of “shock-freeze” the mix in the ice cream maker. Next time chill the syrup until it’s room temp (or even a bit colder) before blending.
