Kale and chicken stir-fry is the perfect dish when you’re craving something healthy, flavorful, and quick to prepare. Packed with lean protein, nutrient-dense kale, and a savory stir-fry sauce, this meal is as satisfying as it is nutritious. Whether you’re trying to eat more vegetables or simply need a fast, weeknight dinner, this stir-fry is sure to become a go-to recipe in your kitchen.
The star of this dish is, of course, the kale, which is not only rich in vitamins and minerals but also has a hearty, slightly bitter flavor that pairs wonderfully with savory sauces. When cooked in the stir-fry, kale wilts down into tender greens while retaining its nutrients, making it a perfect addition to a protein-packed meal. Chicken breast is used for its lean protein, which cooks quickly and remains juicy when stir-fried.
The stir-fry sauce is simple yet flavorful, typically made from a mix of soy sauce, garlic, ginger, and a touch of honey or brown sugar for sweetness. A dash of sesame oil adds a nutty depth, while chili flakes or sriracha can be added if you prefer a little heat. This sauce ties together the dish and infuses the chicken and kale with rich, umami flavors.
To make the stir-fry, chicken is sliced into thin strips and cooked in a hot pan until golden brown and cooked through. The kale is added shortly after, along with the stir-fry sauce, and tossed to coat everything in the savory glaze. The high heat of the stir-fry method ensures that the ingredients cook quickly, preserving their fresh flavors and textures.
Kale and chicken stir-fry is an incredibly versatile dish—you can throw in extra vegetables like bell peppers, mushrooms, or carrots to increase the nutrition and color. It’s also easy to customize the sauce to your liking, adjusting the sweetness, saltiness, or spiciness.
This stir-fry is perfect when you’re in a hurry but still want something healthy and delicious. Serve it over brown rice, quinoa, or even noodles for a complete meal that’s full of flavor and packed with nutrients.

I tried this recipe and it was soooo good! The ginger and garlic made it flavorful. Will make again!
Yummm!!! My family loved it. Gonna make it again for sure!
I added some nuts for crunch and it was delicious! What a twist!
Nuts in stir-fry? Really? That sounds weird, but okay! Guess everyone has their own tastes!
Sounds amazing! I love how nuts can add a great texture to dishes. Will try it next time.
Made this for my kids and they said it was alright. Not their fav, but I liked it.
Anyone else think the garlic is too much? I could hardly taste the chicken!
WOW! So good! I added some chili flakes and it was fire! 🔥 Thanks for the recipe!
YUM! I added some chili flakes and it’s so good! Perfect dinner option. Thanks for sharing!
This stir-fry is super tasty! My kids loved it! Definitely making again.
Ginger was too strong for my taste. I guess I need to try it again without so much ginger. 🤔
Yum! I added some cooked rice to make it a full meal. So delicious!
That sounds like a great idea! Rice makes everything better. I’m definitely going to try it that way next time!
Chicken turned out dry for me. Maybe I cooked it a second too long or my strips were thicker. Flavor was good though.
The chicken got too dry for me. Maybe I overcooked it? The sauce was good tho.
This was so easy to make and super tasty! I’m definitely keeping this in my recipe book.
So healthy! But I’m too lazy to cook, it took me an hour. Maybe next time. 🤷♂️
Yeah, cooking can be a drag! But I heard the health benefits of kale are totally worth it. Maybe try a quicker recipe next time? 🙃
Okay, but isn’t chicken kinda gross? I might try tofu next time instead.
Simple and quick! Can I use other greens instead of kale? Maybe spinach? Overall, nice recipe.
Ewwww, kale is disgusting. Why would you put that in a recipe?
Kale is so good! This was really easy to make. Thanks for sharing!
I totally agree! Kale is so healthy and it doesn’t take much time to cook it. I love this recipe!
meh
I followed it pretty exactly, but mine tasted a little flat. Next time I’ll use more soy sauce or add a pinch of sugar. Chicken was tender though.
Glad the chicken turned out tender! If it tasted flat, I think bumping the soy sauce makes sense—also try a tiny splash more (or add it off the heat so it keeps more punch). A pinch of sugar can help too, and if you have it, chili or a squeeze of lemon right at the end perks it up.
Lol I mixed up the soy sauce with ranch dressing. It was NOT good. Be careful y’all.
Oh no, that sounds awful! I can’t even imagine how that would taste. Thanks for the warning!
I made this with tofu instead, very nice! Just switch chicken for soy block.
Yum!
I aint ever heard of using kale this way. Real surprised but also not bad, I guess.
I tried it, but it was a bit bland. Needs more seasoning or something, maybe spice?
Doesn’t this need more than just soy sauce? Seems like missing a lot.
I love stir-fries!! But I can’t even spell kale. How do you do that? lol.
Not bad, not bad. But I would use shrimp instead of chicken next time.
Shrimp sounds delicious! I’ve been thinking about trying it with tofu too. Gotta switch it up sometimes!
It was okay, but how do you cook kale? Mine was kinda tough.
Quick and easy! Just how I like it. ☺️
I dunno, I feel like chicken and kale is a weird combo. But my wife liked it, so she gets the credit lol!
The measurements confused me—”1 piece ginger” is vague. I used what looked like a small thumb and it was a lot. Still edible, just spicy-ish and punchy.
Totally get that—“1 piece ginger” is such a vague way to write it. I usually treat it like about a 1-inch knob or ~1 tablespoon minced, but I should’ve specified grams too. Glad it still worked for you though!
Tried this tonight—super quick and the ginger/garlic smell is amazing. Kale stayed bright and not too bitter. Will make again for sure.
This stir-fry is amazing! I never thought eating kale could taste this good. Will definitely make again!
Meh. Maybe next time add some salt or something.
I don’t think salt is needed! The soy sauce adds enough flavor. But I guess everyone’s taste is different.
Kale? Really? This recipe is just weird. I don’t understand how people like this.
This was delicious! The combination of kale and chicken is just perfect.
A little bland, could use more spices or something…but it filled me up!
I totally agree! It needs a kick. I added some chili flakes and it was way better!
Bland? No way! I thought it was perfect as is. Maybe you just need to try more flavors?
I subbed chicken with tofu and it was still good, but little different.
I don’t think tofu can ever be as good as chicken, but I guess if you like it, go for it.
Tofu sounds interesting! I might try that next time. Did you marinate the tofu?
I followed it exactly and it was fine… not mind blowing. The chicken cooked fast though, which I like.
It was ok, but I found the kale a bit bitter for my taste. Maybe use less or try a different green next time?
I totally agree! Kale can be really strong. I usually swap it with spinach or even bok choy. Much milder flavor! 😊
Nah, I liked the kale! It’s healthy and that’s what matters. Maybe you just need to cook it longer?
This took less then 20 min to make! Super easy and quick – loved it!
5 stars. easy, healthy, and the sauce coats everything. I served it over rice and it was perfect.
Yes!! The soy coating is the best part. I also do it with rice and it’s such a solid weeknight meal—fast and not heavy.
Sounds good but I’m confused—ginger is listed like “a small piece” and also “mince a small piece.” How much is that, like 1 tsp or more? Either way I’ll try it.
Easy recipe, but I think I overcooked the kale. It was mushy… should’ve been more careful.
YUMMMM!! Best dinner ever! My whole family loved it! Thx for sharing!
Solid weeknight stir-fry. I added a splash of sesame oil at the end and some red pepper flakes. Next time I’ll cook the chicken a tiny bit longer for extra browning.
Not bad, but kale needs more time than 3-4 minutes for me. I’d steam it first next time.
Good call—3–4 minutes can be too short depending on how thick the kale is. I’ll try steaming first next time too.
Kale is so overrated! Why not just use regular lettuce? 😤
Not bad, but I think the recipe needs more soy sauce. Felt a bit bland.
This dish is really healthy, but honestly I don’t like kale that much. I used spinach instead and it was way better!
This was surprisingly tasty. The ginger/garlic combo really makes the whole thing pop, and the kale stayed nice and tender after 4 minutes.
Finally, a recipe that gets veggies right! My kids even ate the kale. This is a keeper!
This is one of those recipes that actually tastes like you meant to cook. The ginger really makes it. Would absolutely make again.
Yes!! Totally agree—ginger can make or break a stir-fry. I made it once and the flavor was so “real” I was like… why don’t more recipes taste like this?
This stir-fry turned out amazing! The ginger really adds a nice kick. Will make again for sure!
I dunno, the kale was too chewy for me. Maybe I cooked it too long? Not a fan.
I tried it but my chicken got burned. Maybe my heat was too high? I don’t know
Way too salty for my taste. I’d cut the soy sauce in half and add a little water or honey. Otherwise the method is good.
Can I use chicken thighs instead? They are cheaper at the store. Also, what’s kale? 🤔
Could I substitute chicken with tofu? I’m vegetarian and want to try this! Anyone?
Absolutely, tofu can be a great substitute! Just make sure to press it well to remove excess moisture before cooking. It’ll soak up the flavors nicely!
Kale is too healthy for me. I don’t think I’ll be making this again. Sorry!
I used too much ginger and now my whole kitchen smells like… ginger. Still tasty, but wow.
Haha, ginger takes over fast! 😄 If it’s still tasty, I’d call it a win. Next time just start with half and adjust—ginger aroma really blooms in the pan.
Not bad, but my kale took way longer than 3-4 minutes. I think my pan wasn’t hot enough. Still tasted healthy and flavorful though.
Kale and chicken is a win! I like that it’s simple and doesn’t need a bunch of ingredients.
I screwed up the timing and overcooked the chicken, so it was tough. The garlic-ginger base smelled amazing, so I know it would be better with less pan time.
Wow, so healthy! I added some sesame seeds on top, perked it up a lot!
I made this without ginger and it was ok. But like, who needs ginger? Kinda overrated.
I’m not sure about kale in stir-fry… but wow, it worked. I didn’t remove the stems though (oops) and it was still fine after longer cooking.
Totally agree—kale in stir-fry surprised me too. I’ve left a bit of stem on before and it still worked, especially if you cook it a touch longer. Glad it turned out tasty!
Kale? In stir-fry? I’m skeptical 😅 But if the stems stayed and it was still good after longer cooking, I guess that tracks. Next time I’ll try it… maybe. Also I’d do less soy sauce, but your method seems solid.
This was such a quick dish to make! I loved how the flavors came together. Will definitely make again!
This was really good—quick, flavorful, and the kale didn’t turn bitter. I added a splash of sesame oil at the end and it tasted restaurant-level. Will make again.
Perfect dinner. Simple ingredients, fast prep. I served it over rice and it was gone immediately. 10/10
Kale + chicken stir-fry… ok but where’s the sauce thickener? Mine was a bit watery, and I’m not convinced kale should be cooked that fast.
Totally get what you mean—there isn’t really a thickener here. Just soy sauce + the moisture from the kale, so it can lean watery if the pan isn’t hot enough or you stir too long. Next time maybe reduce the soy sauce a bit first, or add a cornstarch slurry (like 1 tsp cornstarch + 1 tbsp water). As for the kale, 3–4 minutes can be quick, but it depends how thinly it’s chopped and how hot your pan is.
Garlic smelled amazing right away. I added chili flakes like it says and it was perfect. 10/10 quick dinner.
I tried it but my kale stayed a bit tough even after 3-4 min. Maybe I chopped the stems wrong? Still tasted good tho. “Quick” is true.
Yes!! Garlic + ginger does wonders. Glad the chili flakes worked for you—this is definitely one of those fast, reliable dinners.
Mine came out a little salty from the soy sauce, but otherwise good. Next time I’ll reduce the soy or add more kale.
Good tip! Soy sauce can definitely take over—maybe try lowering to 1 tbsp and tasting before adding more. Also, adding it at the very end (off the heat) helps keep it from getting too salty. Glad it still turned out good otherwise!
The instructions say “mince a small piece” of ginger—cool, but how much is that actually? I guessed and it was kinda strong.
Really solid base recipe. I added a splash of sesame oil and some sliced carrots, and it turned out better than I expected.
Solid recipe, but I think 3-4 minutes for kale might be too short depending on how thick you chop. I cooked mine a bit longer and it came out perfect.
Not bad, but kale plus chicken is kinda basic? I would rather do broccoli or something. Also I feel like ginger is strong—use less if you’re sensitive.
Loved how quick this was—garlic + ginger smelled amazing. I used chicken thighs once and it still worked great. Kale stayed nicely tender, not mushy.
Totally agree—my kitchen smelled like garlic heaven too 😄 And 3–4 minutes for kale is the sweet spot. I used spinach once and it turned out way softer, so I’ll stick with kale now.
Quick question: when you say kale stayed tender, did you cover the pan at all? Mine always turns kinda weird and mushy, even when I don’t overcook it. Maybe my heat was too high…
Soy sauce only 2 tablespoons for 200g chicken seems kinda light? I added extra and it was way better. Not sure why original amount felt bland.
I liked it, but I think my kale was too tough. Next time I’ll chop smaller or sauté longer before adding the soy sauce.
