Italian Chicken and Escarole Soup

February 8, 2024

Italian chicken and escarole soup is the perfect cozy, nourishing dish that combines tender chicken, a savory broth, and the unique flavor of escarole. This classic Italian soup is as satisfying as it is healthy, offering a wonderful balance of flavors and textures. Whether you’re looking for a comforting bowl of soup on a cold evening or a light, yet filling meal, this soup is sure to become a favorite.

The base of this soup is a flavorful chicken broth, often made by simmering chicken, garlic, onions, and herbs like bay leaves and thyme. As the broth simmers, the chicken becomes tender and infused with all the aromatic flavors from the vegetables and seasonings. Once the chicken is fully cooked, it’s shredded into bite-sized pieces, adding a rich protein component to the soup.

Escarole, a slightly bitter leafy green, is the star of this dish. When cooked in the broth, escarole wilts beautifully, adding a distinct, slightly bitter taste that balances the richness of the chicken and the savory broth. It also adds a nice, hearty texture to the soup, making it feel more filling and substantial. The combination of chicken and escarole brings a depth of flavor that’s both earthy and refreshing.

The soup is often finished with a sprinkle of Parmesan cheese, adding a touch of nuttiness and creaminess. You can also stir in some pasta, like small shells or ditalini, to make the soup even more hearty and satisfying. If you like, a drizzle of good olive oil and a squeeze of lemon juice can brighten the dish, cutting through the richness with a little acidity.

Italian chicken and escarole soup is incredibly versatile, and you can customize it based on what you have available. The addition of beans, like cannellini or garbanzo, can make it even more filling and add an extra layer of texture.

This soup is not only comforting and flavorful, but it’s also packed with nutrients from the chicken, escarole, and any other veggies you choose to include. It’s a perfect, wholesome meal that can be enjoyed for lunch, dinner, or as a light appetizer.

This soup is not only delicious but also healthy. It is packed with nutritious ingredients such as chicken, escarole, vegetables, and herbs, providing a good source of vitamins and minerals. Furthermore, the broth-based nature of the soup makes it a lighter option compared to creamy soups, ideal for those looking for a satisfying yet nutritious meal.

Overall, Italian Chicken and Escarole Soup is a delightful combination of flavors and textures that will surely become a favorite in your home kitchen.

I tried making this but I couldn’t find escarole at my store. Used spinach instead. It wasn’t bad, but not sure it was the same… 3 stars.

I didn’t have escarole so I used spinach… not the same, obviously, but it was still good. Next time I’ll try with escarole because the flavor sounds more legit.

Okay, I followed it, but my soup turned out kinda bland. I might’ve under-salted at the end because I was nervous. Adding more pepper and a pinch of chili flakes helped a lot.

Why escarole? Can I use spinach instead? Asking for a friend.

    1. User avatar Tricia McMillan says:

Why not? Escarole is good, but spinach is cheaper. Who cares about flavor, right? 🤷‍♂️

    2. 4 stars
I think spinach would work fine! Just might change the flavor a bit. Your friend will love it!

Escarole?? I don’t usually cook with it. I thought it would be bitter, but it ended up being kind of sweet. Also, browning the chicken for 5 minutes was honestly the hardest part for me lol.

  8. 5 stars
5 stars easy. This is the kind of soup that makes you wanna stay in. Simple ingredients, big payoff. I had leftovers and it tasted even better the next day.

I just made this, and I’m still eating it! So good!

  10. 4 stars
Pretty tasty, but I think 30 minutes simmer for the chicken is a bit long. I cooked mine like 20 and it stayed more tender. Still, it’s a solid weeknight soup.

My family loved it! They said it tasted like something from a restaurant!

I think it’s too many ingredients for just a soup, why not just few things? Like, its soup, not a feast. 3 stars.

  13. 3 stars
I didn’t have chicken broth, so I used vegetable. Still good.

  14. 1 star
I don’t even know what escarole is but I’m good with spinach. Also, how much chicken broth? Too many options.

Honestly, I don’t think chicken and soup go together so well.

  16. User avatar Barliman Butterbur says:

I tried it but I think it needs something more… maybe some chili flakes??

  17. 4 stars
    Good soup for good people.

I give it a 3 because the steps were confusing. Is simmering the same as boiling??

    1. 5 stars
Who cares about simmer vs boil? Just follow the steps and it will taste great! I made it and my family loved it! 👍

    2. User avatar cornelius.wolff says:

      4 stars
I can totally understand. Simmering is just cooking at a low temp, while boiling is high heat. It can get confusing! But once you get the hang of it, this soup is delicious! 😍

This was bland for me. I followed the instructions but it needed more salt and probably more herbs. Also the oregano/basil combo feels a little flat without garlic flavor boosted.

  20. 5 stars
This soup is a game-changer! So flavorful and comforting. Perfect for a cozy night in.

  21. 3 stars
Instructions were a bit confusing. How am I supposed to know when the chicken is browned?

  22. User avatar shondra.witting says:

    3 stars
I followed the directions exactly and the chicken browned nicely, but after 60 minutes total it still felt watery. Could be my pot, idk. Tasted good though—just not thick.

Just made it. It taste like restaurant soup 😄 I did not change anything, except i forgot to chop the onion small lol.

    1. User avatar theo.wintheiser83 says:

      5 stars
Love this! 😄 I’m glad it turned out restaurant-level for you. And honestly, even if the onion was bigger than expected, the flavor should still carry—those aromatics do the heavy lifting.

    2. 4 stars
Hah that’s funny—you forgot to chop the onion small and it still tasted great? I usually overthink the onion. Maybe my soup would be less work if I chopped it “medium” 😅

  24. User avatar rodney.kub1984 says:

What’s escarole?? Never heard of it. 🤔

  27. User avatar adrianne.dubuque1971 says:

Wow! My whole house smelled amazing. Browning the chicken first makes such a difference. Parmesan on top is absolutely required.

Can I use any other greens? I dont even know what escarole is. 1 star for confusion.

  34. User avatar freeman.west says:

    3 stars
Not sure about the escarole. I’ve never cooked with it before, and mine came out kind of bitter. Next time I’ll rinse the leaves better or use more tomatoes to balance it.

  35. User avatar devon.stracke2010 says:

    4 stars
Easy to make! Used kale instead of escarole because that’s what I had. Still turned out good!

    1. User avatar charlene.bins1951 says:

      5 stars
Kale is a great substitute! Glad it worked out for you. This soup is so versatile!

I don’t know what escarole is. Can I use lettuce instead?
    Why not? 😂

  38. User avatar Sharron Corwin says:

Escarole can be tricky—mine was a little too bitter until I added a tiny pinch of sugar. After that, it balanced out nicely.

  39. User avatar Dortha Jones says:

    5 stars
This soup is so delicious! I added a little red pepper flakes for extra kick and it was perfect! 5 stars!

    1. User avatar mathWizard says:

      5 stars
I totally agree! The red pepper flakes really make a difference. I also threw in some spinach just because I had it and it was great. Thanks for the tip!

  40. User avatar Barry Manilow says:

This is basically Italian wedding soup vibes without the pasta, right? My family liked it but I couldn’t stop thinking it needed some kind of starch—maybe little ditalini.
