For the Crust:
- 1 1/4 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 3-4 tablespoons ice water
For the Filling:
- 4-5 ripe guavas, peeled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cardamom
- 1/2 teaspoon vanilla extract
- 1 egg, beaten for egg wash
- 1 tablespoon turbinado sugar, for sprinkling


1.In a large bowl, mix together the flour, sugar, and salt for the crust. Add the cold butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Add the ice water, one tablespoon at a time, and mix until the dough comes together.
2.Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
3.Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
4.On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer the dough to the prepared baking sheet.
5.In a small bowl, mix together the sugar, cornstarch, cardamom, and vanilla extract for the filling. Spread this mixture evenly over the center of the dough, leaving a border of about 2 inches.
6.Arrange the sliced guavas on top of the sugar mixture. Fold the edges of the dough over the filling, pleating as necessary.
7.Brush the edges of the dough with the beaten egg wash and sprinkle with turbinado sugar.
8.Bake the galette for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
9.Remove from the oven and let cool for a few minutes before serving. Enjoy!
