Grilled Beef and Portobello Mushroom Caps

June 24, 2024

Grilled beef and portobello mushroom caps are a match made in smoky, savory heaven. This hearty pairing brings together the deep umami of mushrooms with the rich flavor of grilled beef for a meal that’s as satisfying as it is simple. Whether you’re firing up the grill on a summer evening or looking for a low-carb, protein-packed dinner, this dish delivers.

Portobello mushrooms are the stars of many vegetarian plates, but they also make an excellent partner to beef. Their meaty texture and ability to soak up marinades make them a flavorful base or side. When grilled, portobellos develop a tender interior and slightly crisp, smoky edges that complement the bold flavor of beef beautifully.

The beef can be anything from steak medallions to sliced sirloin or even ground beef patties. A simple marinade of olive oil, garlic, herbs, and a splash of balsamic vinegar or soy sauce works well for both the beef and mushrooms. This brings all the components together in terms of flavor while enhancing the natural richness of each ingredient.

You can serve the grilled beef and mushrooms in a variety of ways. Stack them together for a knife-and-fork dish, serve them open-faced over mixed greens, or tuck them into a bun or wrap for a casual, satisfying sandwich. A layer of melted cheese or a spoonful of herbed yogurt or chimichurri adds a creamy or zesty touch to balance the smoky flavors.

This dish is not only delicious but also easy to prepare. Both the beef and mushrooms grill quickly, making it perfect for weeknight dinners or backyard gatherings. It also happens to be naturally gluten-free and low in carbs, which makes it a favorite for a range of diets without sacrificing taste.

Grilled beef and portobello mushroom caps are all about bold flavors and satisfying textures, making them a perfect addition to your summer grill rotation.

Grilled steaks are the best! But my steak got burnt and the mushrooms fell apart. Need better grilling skills! 😂

Meat is not meant to be on mushrooms. Yuck! I couldn’t even take a bite!

This was AMAZING! The beef was so tender and the mushrooms added a nice earthy flavor. Will definitely make again!

I forget to rest the meat, is that really a thing? My steaks were tough…

  5. 4 stars
My grill runs hot, so I’d start checking earlier. 5-7 min per side might overdo it fast depending on thickness. Resting for a few minutes is key—agree with that part!

I mean 5-7 mins per side is the whole point right? Resting is nice but my grill is always hot too and I just keep it at “medium” (even though it’s kinda not). Still comes out good. Maybe I’m lucky lol.

Totally agree—if the grill runs hot, 5–7 min/side can go from perfect to overdone fast. I usually pull the steaks a bit earlier and rely on thickness + a quick temp check.

I think the ingredient list is missing something—like do you need to season the mushrooms with salt/pepper too? I just did it by feel.

    1. User avatar Bowerick Wowbagger says:

      5 stars
Yep—you definitely can (and honestly probably should) season the mushrooms too. The recipe says to season the beef in step 2, but step 4 has you brush the caps with a garlic/thyme/salt/pepper mixture, so they should get flavor “to taste” that way. If you did it by feel and they tasted good, you’re doing it right!

Not bad, but my garlic burned a little. Maybe reduce the garlic or brush later. Next time I’ll mix less thyme too.

For me this was restaurant-level. Resting the steaks for a few minutes made a huge difference—juices stayed in.

    1. User avatar billie.bosco says:

Hmm I’m not sure I buy the “restaurant-level” thing… but the resting tip makes sense. I usually go more like 3 minutes though, not “a few.”

    2. User avatar edna.rempel43 says:

Totally agree—resting is underrated. I used to slice right away and everything would just run out. Now it’s juicy every time.

Not gonna lie, I was skeptical about grilling mushrooms with the same vibe as steak, but it worked. Super savory.

Never liked mushrooms, but my husband loved it! I just picked them off. 😂 Overall worth a shot.

    Grilled steak is life 🔥🔥

Absolutely! Can’t beat a good steak. The mushrooms sound tasty too! 🍄

I dunno, I think grilled steak can be overrated sometimes. What’s wrong with a good burger?

I made something similar but mine turned out a little dry. Still, the garlic-thyme oil sounds promising. Maybe I should marinate the mushrooms longer next time? Also, 5-7 min per side seems quick for thick steaks.

    1. User avatar jesse.schmitt77 says:

      5 stars
Oh no—dry steaks are the worst. Yeah, longer mushroom marinating could definitely help with flavor and juiciness. For the steak timing, 5–7 min/side can work, but it depends a lot on thickness and your grill heat. A quick temp check is the move (and resting a few minutes helps!).

    2. 3 stars
I think 5-7 min per side is WAY too long for thick ones unless the grill is super hot? Mine always gets dry when I follow that. I’d do like 3-5 min then check—also, let them rest longer than a few minutes.

Meat and fungus? No thanks. This recipe is weird and I don’t understand why you mix them. 🤷‍♂️

    1. User avatar johnnie.bradtke says:

I think it’s a great combo! The beefiness and the earthy taste of mushrooms actually work well together. Give it a try! 🌟

I mean, mushrooms are just fungus, right? How can they be good with steak? Sounds funky to me! 🤔

Yum! I used chicken instead of beef cause that’s what I had. Still tasted great, but isn’t that a different recipe? Haha.

garlic + thyme + mushrooms… seems basic but I guess basic is good. Gonna try it tonight.

    1. 5 stars
Honestly, “basic” is sometimes the best way—garlic + thyme + mushrooms sounds like a great combo. Let us know how it turns out tonight!

Not sure why you would want to put beef on mushrooms… weird combo. Just stick to grilling meat, guys.

  17. User avatar shelton.trantow76 says:

Pretty solid idea. I like that you grill the mushrooms too instead of just roasting them. 5-7 min per side felt a little long for my grill though.

    1. User avatar ramonita.shields82 says:

      4 stars
Thanks! Yeah 5–7 min/side depends a lot on your grill temp and how thick the portobellos are—mine run closer to 5 when the lid stays closed. For yours, I’d watch for clear grill marks and tender centers, then pull a bit early.

Portobellos on the grill are life. The only thing I’d tweak is using fresh thyme instead of dried—dried can be a bit flat. Otherwise looks delicious and simple.

Wow, this was way better than I thought! Even my picky kids ate it all. A new family favorite for sure!

I had issues grilling the mushrooms, they kept falling apart. Maybe use a grill basket next time? Overall, it tasted good though.

This is the best grilled recipe I’ve made! The balsamic glaze really took it over the top. Totally making this again!

  22. 4 stars
So easy and delicious! I didn’t have thyme so I used oregano instead and it still turned out great. Thanks!

  23. User avatar eli.schuster6 says:

Tried this but used chicken instead of beef. Still super tasty! Just sayin’, you can switch it up.

  24. User avatar carolyn.hahn38 says:

Made this last night—juicy steaks + smoky mushrooms are such a good combo. I used a little extra balsamic glaze and it was perfect.

  25. User avatar Cathern Gutmann says:

    3 stars
Idk why but my mushrooms tasted bitter?? Maybe I used old ones. Beef was great, just the caps messed up my mood 😅

  26. 3 stars
Not bad, but I think the mushrooms need more than just brushing. Like maybe add a squeeze of lemon or a sprinkle of cheese after grilling. Still tasty, just not “wow” for me.

  27. User avatar marquis.oberbrunner47 says:

    5 stars
Absolutely delicious! The balsamic glaze really takes it up a notch. Can’t wait to make it again!

  28. User avatar trinidad.buckridge47 says:

I liked it, but 5-7 minutes per side felt a bit long for my grill. The beef ended up more medium than I expected. Still tasty and the mushrooms were juicy.

    1. User avatar robin.torphy72 says:

      4 stars
Hmm I think the medium outcome makes sense… top loin can cook fast and grills run hotter than they say. I’d cut the time or move the steaks to indirect heat for part of the way.

    2. 5 stars
Glad you liked it! Yeah, 5–7 min/side can swing depending on steak thickness and grill temp. Medium is usually what happens if the caps are soaking up heat too—next time try 3–5 min/side and check with a thermometer.

  29. User avatar wilbur.ryan98 says:

    4 stars
Grilled it about 6 min per side like it says and the beef was medium-rare—good timing! Mushrooms got nice char too.

  30. User avatar reuben.jenkins87 says:

    4 stars
Lol i grilled it and the mushrooms shrunk a lot. Still good tho. Next time I’m gonna use less salt—i was heavy handed.
